Ricomincio a far la brava e a postare un po’ più spesso… e vedrò anche di condividere con voi un po’ di ricette che stanno da un bel po’ nell’archivio bozze a prender la polvere! :)

Una di queste ricette sono questi profumatissimi, croccantissimi e buonissimi crackers fatti con lievito madre.

Avevo della farina di segale da finire ed ho voluto ispirarmi ai pani di segale dell’Alto Adige spesso arricchiti con semi di carvi (detto anche cumino dei prati) e trigonella secca.

La trigonella è la parte verde aerea del fieno greco,  i cui semi sono tra l’altro una spezia molto usata nella cucina mediorientale ed asiatica. Ha un profumo unico, inebriante che io adoro… ed insieme ai semi di carvi hanno reso questi crackers uno tira l’altro!!!

Ricordo sempre che nelle ricette con pasta madre preferisco non indicare tempi precisi, a volte anche perché non sto a contare le ore… impasto e aspetto che raddoppi… senza controllare l’orologio. Inoltre al bisogno, se devo allungare i tempi, metto anche l’impasto in frigo. Quindi regolatevi anche io in base a vostri tempi ed impegni.

Infondo la lievitazione è un fenomeno volubile, anche usando il più stabile e standard lievito di birra e lo è ancor di più con il lievito madre, visto che oltre che al fattore umidità, temperatura, influisce anche la storia della pasta madre che utilizziamo.

Ogni pasta madre è diversa… è unica ed anche la nostra stessa pasta madre, di volta in volta può essere più o meno vivace!

Ricordatevi comunque che la farina di segale non contiene molto glutine quindi l’impasto non lieviterà moltissimo.

  • 70 gr pasta madre rinfrescata
  • 200 gr farina di segale
  • 1 cucchiaio olio evo
  • 100 ml circa di acqua
  • 1 cucchiaino semi di carvi
  • Una manciata di trigonella / fieno greco secco
  • sale marino integrale
  • olio evo per spennellare

Sciogliete la pasta madre nell’acqua. Unite la farina di segale, l’olio evo ed iniziate ad impastare. Unite il sale e trasferite il composto su una spianatoia. Lavoratelo fino ad ottenere una palla liscia e morbida. Mettetela in una ciotola e lasciatela riposare fino a raddoppio. Io l’ho lasciata riposare per una notte. Calcolate comunque che la farina di segale non avendo glutine non lieviterà mai con gli impasti con farina di forza.

Riprendete l’impasto ed unite i semi di carvi e la trigonella. Lasciate riposare di nuovo l’impasto per almeno un’oretta. Stendetelo, due/tre volte, facendo delle pieghe ed infine un’ultima volta molto sottile. Ritagliate dei crackers con forme a vostro piacimento . Disponetele su una placca da forno coperta con carta forno, spennellateli con olio evo e se li volete leggermente più salati, cospargete un po’ di sale in superficie.

Cuocete i crackers in forno preriscaldato a 200° per circa 10/15 minuti, finchè belli gonfi e leggermente colorati.

Sourdough rye crackers with caraway seeds and dried fenugreek

I don’t want to leave again my blog abandoned for a long period… so here I am with a new recipe!

Well it’s not so new… cos I made these crackers a while ago… but I also have the intention to post all the recipes I have in my “drafts” …so lets start with these tasty and scented crackers!

I had some rye flour (whole grain – pumpernickel one) left and inspired by the nothern Italy (and northern eurpoe too) rye breads, I tried to make some crackers, adding also some flavours which are very common in our Sud- Tyrol breads… I’m talking of caraway seeds and dried fenugreek leaves.

I’m deeply in love with fenugreek leaves scent and taste and I love it even more paired with caraway seeds! ….so you can imagine how short these crackers last on the table! ;)

I remember what I said on other sourdough recipes, that I prefer not indicate precise leavening times, but I suggest to check your own dough and see when it doubles in size. Then you may “play” with temperature according to your times… if you need a quicker rise place it in warm places, if you need more time, use the fridge.

As you may already know using sourdough is that wild yeast is such a fickle thing that there are many causes that may vary these times. Even using the most stable and standard yeast you have to pay attention at  humidity, temperature in the house etc… and with sourdough there are even more variables, then each sourdough is different … it is unique and also our own sourdough, from time to time may be more or less lively!

  • 70 gr sourdough, fed and alive
  • 200 gr whole grain rye flour (pumpernickel)
  • 1 tbsp olive oil
  • 100 ml wayter
  • 1 tsp caraway seeds
  • a handful of dried fenugreek leaves
  • salt
  • olive oil to brush

Dissolve sourdough in water, mix in oil and rye flour. Work the dough or with a stand mixer or by hand, until you get a smooth, soft dough. Place it in a bowk and cover with film. Let it rise until doubled in size (times may vary according to temperature, weather and how “lively” is your own sourdough, anyway rye flour is porr in gluten so it won’t rise as usual bread made with strong flours).

Take the dough and add carawy seeds and fenugreek. Place it again in the bowl, cover and let it rest for about 1 hour. Take the dough flat it down and fold it in three, two times. Roll it our a last time, very thin and cut out crackers, the shape you prefer. Place them on a baking tray, cover with parchment paper, brush with olive oil and if you like extra salt  sprinkle it on top. Bake in preheated oven at 200° for about 10/15 minutes or until puffed and slightly browned.
