Fragole, fragole, fragole dappertutto. [Scroll for the English Version]
Non è colpa mia. E comunque sono buonissime, fresche.
L’aroma di fragola, le big babol alla fragola, le caramelle, i gelati confezionati, la cioccolata ripiena …alla fragola, quelle son robe brutte. Pienamente ragione.
Ma fresche, rosse, profumate e turgide… non so voi, io non resisto.
Così anche oggi fragole.
Per fare una tortina (12 cm ⌀) ci occorrono:
Per la base:
. 35 gr di farina di farro
. 3 gr di lievito di dolci (io ho usato il cremor tartaro)
. 33 gr di burro morbido
. 55 gr di zucchero semolato
. 1 uovo
. 1 cucchiaio di latte
. 13 gr di mandorle in lamelle
Per la crema:
. 150 gr di fragole
. 20 ml di sciroppo ai fiori di sambuco
. 15 gr di zucchero
. 1/2 cucchiaio di maizena
. 100 ml di panna fresca
. 1 cucchiaino di zucchero a velo
Preparazione: R.E.M., Imitation Of Life
- Preriscaldiamo il forno a 170°C e foderiamo 2 teglie da 12 cm ⌀ con della carta forno.
- Mescoliamo la farina con il lievito e setacciamoli in una ciotola.
- A parte sbattiamo con una frusta elettrica il burro con 25 gr di zucchero fino a farne una crema chiara e spumosa.
- Separiamo il tuorlo dall’albume.
- Aggiungiamo il tuorlo ed il latte alla crema di burro e zucchero, incorporiamo bene con la frusta, aggiungiamo anche la farina con il lievito e spalmiamo l’impasto ottenuto sulla base delle nostre tegline.
- Montiamo l’albume a neve ferma, aggiungiamo lo zucchero rimasto (30 gr) e continuiamo a montare finchè lo zucchero si sarà sciolto del tutto.
Distribuiamo nelle tegline, livelliamo con una spatola in silicone, spolveriamo con le mandorle a lamelle ed inforniamo. - Cuociamo in forno per circa 30-35 minuti, finchè la superficie sarà dorata.
- Sforniamo e lasciare raffreddare su una gratella per mezz’oretta circa.
- Laviamo e spuntiamo le fragole, tagliamole a dadini piccolini e versiamole in un pentolino con lo sciroppo e lo zucchero.
- Cuociamo per 5-6 minuti e mettiamo da parte.
- Sciogliamo la maizena in 1-2 cucchiai d’acqua e versiamola nella composta di fragole.
Mescoliamo bene e lasciamo raffreddare. - Montiamo la panna.
- Mescoliamo la composta di fragole che nel frattempo si sarà rappresa, aggiungiamo un cucchiaio di panna montata, amalgamiamo delicatamente aiutandoci con una spatola, aggiungiamo la panna rimasta e continuiamo ad incorporare dolcemente.
- Adesso spalmiamo la crema su una delle basi cotte in forno, copriamo con l’altra, spolveriamo con lo zucchero a velo e serviamo.
- Diversa e buona, o no?!

Ingredients for a round (12 cm ⌀) springform:
For the cake:
. 35 gr spelt flour
. 3 gr baking powder (or cream of tartar)
. 33 gr soft butter
. 55 gr granulated sugar
. 1 egg
. 1 tbsp milk
. 13 gr almond leaves
For the filling:
. 150 gr fresh strawberries
. 20 ml elderberry blossom syrup
. 15 gr granulated sugar
. 1/2 tbsp corn flour
. 100 ml fresh cream
. 1 tsp powdered sugar
Preparation:
- Preheat the oven to 170°C and line 2 cake pans with parchment paper.
- Mix the spelt flower and baking powder (or cream of tartar) and sift it into a bowl.
- In another bowl, whisk with an electric whisker the butter with 25 gr granulated sugar untill smooth.
- Separate yolk and egg white.
- Add the yolk and milk to the butter mix and whisk. Add and fold in gently the flour.
Spread the pastry on the cake pans and set aside. - Beat the egg white on medium speed with the electric hand whisker until the mixture resembles a fluffy cloud and stands up in stiff peaks when the blades are lifted.
Add one teaspoon at a time the sugar, and continue to beat for about 3 seconds between each addition.
When ready, the mixture should be thick and glossy like a snow drift. - Spread the white mixture over the pastry layers, sprinkle the almond leaves and put in the oven.
- Bake for about 30-35 minutes, untill golden.
- Remove from the oven and leave to cool on a wire rack for about half an hour.
- Wash and finely chop the strawberries.
Place the chopped strawberries in a small sauce pan with elderberry blossom syrup and sugar. - Cook on a low medium heat for about 5-6 minutes and set aside.
- Dissolve the corn flour in 1-2 tablespoons of water and pour it into the strawberry compote, whisk very well and allow to cool.
- Whip the cream.
- Stir the strawberry compote and fold in a tablespoon of whipped cream.
Add the rest whipped cream and fold in very very gently with the help of a rubber spatula. - Spread the strawberry cream over a cake layer, cover with the second cake layer.
Sprinkle with powdered sugar before serving. - Different and tasty, what?!
