Vi starete chiedendo: perché si chiamano cupcakes di mezzanotte? Semplice: questi cupcake sono neri…. Ahahaha…. Ma nooo, non sono mica bruciati. Sono fatti con il cacao in polvere nero, l’intense deep black, quello con cui sono fatti anche i biscotti oreo per intenderci. Non è difficile da trovare, basta cercarlo on line e il profumo è ancora più intenso di quello più conosciuto.

Tra tutte le ricette di Cook Color di Maria Zizka, potevo lasciarmene scappare una nera? MAI… io mi vesto quasi esclusivamente di nero, quindi questi golosi cupcake dovevano essere mie…

I pancake classici o vegani sono favolosi, i buoni pancake, vengono sempre buoni con qualunque farina, si possono aggiungere pezzetti di frutta, uvetta, muesli, spezie come cannella, chiodi di garofano.

Per farli vegani basta sostituire l’uovo con 14 gr di lecitina di soia in tre cucchiai d’acqua ed emulsionare fino a completo scioglimento, al posto del latte usate latte di soia, riso o cocco

L’impasto viene fatto in un mixer o con lo sbattitore elettrico, ma farlo a mano è forse più semplice, con una frusta ed una ciotola, esiste poi un mixer manuale fatto apposta per i pancake, io ne uso uno che era di mia mamma e me lo tengo caro, simile a questo sotto che vi consiglio e potete acquistare su Amazon.

Io li ho fatti una prima volta con farina di segale, poi con farina integrale, la scelta delle farine è ininfluente sul risultato, sempre ottimo.

Se volete fare gli americani o gli inglesi, spalmateli di sciroppo d’acero o burro d’arachidi, oppure all’italiana con un po’ di buon miele, marmellata, Nutella, o un semplicissimo sciroppo di acqua e zucchero e una spruzzatina di limone, anche, perché no, Cointreau o liquore all’amaretto!

Vanno mangiati caldi ma potete prepararli in anticipo e conservarli in frigo in un sacchetto di plastica e poi, alla bisogna, riscaldarli in un padellino.

Io ho aromatizzato la pastella con un po’ di cannella, anche qui la fantasia ed il gusto decidono: si può usare la buccia d’arancia grattata, quella del limone, oppure lasciarli neutri.

Pancake classici o vegani

200 gr di Farina (anche integrale, segale ecc.)

1 uovo (per vegani 14 gr di lecitina di soia sciolta in tre cucchiai d’acqua)

4 cucchiai di Zucchero

1 pizzico di Sale

1/2 cucchiaino di Lievito per dolci

200 ml di Latte (per vegani quello di soia)

Burro o Margarina q.b.

Aromi a piacere

Per preparare i pancake classici o vegani versate in una ciotola o nel mixer, la farina, lo zucchero, il lievito, il sale, gli eventuali aromi, mescolate poi unite l’uovo (o la lecitina se vegani) la farina, il latte.

Sbattete bene tutto il composto, deve venire una pastella piuttosto densa, lasciatela riposare mezz’ora in frigo, dopo vedrete che si sarà molto addensata, aggiungete eventualmente altro latte.

Scaldate una padella antiaderente su fuoco medio-basso, ungetela con un velo di burro o margarina, quest’operazione va ripetuta per ogni pancake che cuocete, versate un mestolino di pastella al centro della padella, se non si espande aiutate voi inclinando la padella in varie direzioni.

Quando comincia a fare bollicine in superficie rivoltate il pancake con una paletta e cuocete l’altro lato.

Impilate tutti i pancake su un piatto e serviteli con marmellata o sciroppo d’acero o tutti gli altri accompagnamenti che vi ho suggerito sopra.

Il frosting al burro o buttercream o crema al burro è una glassa a base di burro che si utilizza per decorare i cupcakes (ma anche per farcire torte).

Si tratta di una preparazione molto veloce e molto semplice da realizzare in casa usata soprattutto nella pasticceria americana.

Difficoltà: molto facile.

Tempo di preparazione: 8-10 minuti.

Tempo di cottura: 0 minuti.

Strumenti necessari per la preparazione

fruste elettriche

Ingredienti necessari

140 grammi di burro a temperatura ambiente
270 grammi di zucchero a velo
2 cucchiai da tavola di latte
1/2 cucchiaino di estratto di vaniglia

Procedimento per preparare il frosting al burro

Adoperando le fruste elettriche (o la planetaria) montate il burro morbido con lo zucchero a velo.

Poi incorporate i 2 cucchiai di latte e l’estratto di vaniglia e lavorate fino ad ottenere un composto liscio (qualora il composto risultasse troppo denso, aggiungete altro latte; al contrario, aggiungete altro zucchero a velo ma senza esagerare).

A questo punto trasferite la crema nella sac-à-poche e procedete a decorare i vostri cupcakes.

I cupcakes alla vaniglia con crema al burro sono delle tortine soffici che si realizzano con un impasto di base al gusto di vaniglia e una decorazione finale con la crema al burro (o buttercream).

Difficoltà: media.

Tempo di preparazione: 15 minuti per le basi + 10 minuti per la crema.

Tempo di cottura: 20 minuti.

Strumenti necessari per la preparazione

pirottini per muffin
una frusta elettrica
sac-à-poche

Ingredienti per la base dei cupcakes

125 ml di olio di semi
45 ml di latte
110 grammi di zucchero semolato
2 uova intere
1 cucchiaino di estratto di vaniglia
125 grammi di farina di tipo 00
6 grammi di lievito in polvere per dolci

Ingredienti per la crema al burro

150 grammi di burro
270 g di zucchero a Velo
3 cucchiai di latte
granella di pistacchi q.b.

Preparazione dei cupcakes alla vaniglia con crema al burro

Preriscaldate il forno in modalità statico a 175°C e disponete i pirottini di carta all’interno della teglia per muffin.

Poi in una ciotola disponete gli ingredienti secchi: farina, lievito e zucchero e mescolate.

In un secondo contenitore unite l’olio di semi con l’estratto di vaniglia, le uova sbattute e il latte e mescolate.

Versate questi ultimi nella prima ciotola e amalgamate senza stressare troppo l’impasto.

Distribuite la pastella nei vari pirottini riempiendoli per 2/3 della loro capienza.

Metteteli nel forno ormai caldo e fate cuocere per 20 minuti.

Controllate che le tortine siano cotte facendo la classica prova stecchino.

Infine sfornate e fate raffreddare completamente.

Nel frattempo preparate la crema al burro per farcire le tortine.

Come preparare la crema al burro per i cupcakes

Tagliate il burro a pezzetti e montatelo con le fruste elettriche fino a renderlo spumoso

Una volta montato il burro aggiungete poco alla volta lo zucchero a velo e i 3 cucchiai di latte.

Ottenuta la consistenza desiderata, mettere la crema al burro in una sac-à-poche con beccuccio rigato e decorare i cupcakes ultimandoli con della granella di pistacchi.

I cupcakes light e gluten-free al cacao, senza zucchero e senza burro sono dei dolcetti soffici tipicamente americani glassati con una deliziosa crema su una base al cacao cotta in forno.

Questa versione è preparata con l’eritritolo al posto dello zucchero, con farine senza glutine e con olio di semi al posto del burro.

Se per questo San Valentino avete il desiderio di organizzare una cena romantica casalinga e volete dilettarvi ai fornelli dall’antipasto al dolce optando per delle preparazioni semplici, questi cupcakes possono essere il dessert perfetto in formato mignon per festeggiare la festa dell’amore.

Difficoltà: facile.

Tempo di preparazione: 10 minuti per l’impasto + 5 minuti per il frosting.

Tempo di cottura: 25 minuti.

Ingredienti necessari per 12 cupcakes

5 cucchiai di mix di farina senza glutine
5 cucchiai di farina di nocciole finissima
10 cucchiai di eritritolo
6 grammi di lievito in polvere
1 cucchiaio + 1/2 di cacao amaro in polvere
2 uova a temperatura ambiente
10 cucchiai di olio di semi
11 cucchiai di acqua
2 cucchiai di Nocciolata Crunchy Rigoni di Asiago

Ingredienti per il frosting dei cupcakes

100 ml di panna fresca
200 ml di mascarpone
2 cucchiai di Nocciolata Crunchy Rigoni di Asiago

Strumenti necessari per la preparazione

nr. 1 teglia per muffin
nr. 12 pirottini per muffin
fruste elettriche

Preparazione dei cupcakes

In una ciotola versate il mix di farine senza glutine con la farina di nocciole tritata finissima con l’eritritolo, il cacao in polvere e il lievito e mescolate con un cucchiaio.

Poi in una seconda ciotola lavorate le 2 uova con l’olio, l’acqua e 2 cucchiai di Nocciolata Crunchy Rigoni di Asiago e amalgamate frettolosamente.

Versate gli ingredienti umidi nella ciotola degli ingredienti secchi e mescolate, lavorando il meno possibile i 2 composti, altrimenti avremo dei tortini duri e gommosi.

Distribuite l’impasto ottenuto in 12 pirottini di carta (precedentemente imburrati e infarinati e inseriti negli appositi spazi dentro la teglia da muffin) o stampini in silicone, riempiendoli all’incirca per 2/3 della loro capienza.

Cuocete nel forno caldo in modalità statico a 165°C per 25 minuti circa, quindi aiutatevi con la prova stecchino per verificare che l’impasto sia ben cotto.

Sfornate e lasciate intiepidire.

Quando le basi dei cupcakes sono raffreddate del tutto, potete procedere a realizzare il frosting per i cupcakes.

In una ciotola lavorate il mascarpone con la Nocciolata e in una seconda ciotola montate per bene con le fruste elettriche la panna fresca.

A questo punto incorporate poco alla volta la panna al mascarpone, mescolando dal basso verso l’alto.

Trasferite la crema in una sac-à-poche e procedete a decorare ogni cupcakes.

Conservate i cupcakes in frigo fino al momento di servirli.

Per dei cupcakes ancora più golosi, potete aggiungere all’impasto una manciata di gocce di cioccolato fondente.

Prima di iniziare a preparare la ricetta, è importante adottare qualche piccolo accorgimento per avere il miglior risultato:
assicuratevi di tirar fuori dal frigo il mascarpone circa 15 minuti prima della preparazione;
assicuratevi che le uova siano a temperatura ambiente prima di iniziare la preparazione.

Porzioni 6 persone

Tempo Preparazione 35 minuti

INGREDIENTI:

Ingredienti per 12 cupcakes:
180 g di burro
180 g di zucchero
180 g di farina
3 uova
1/2 bustina di lievito
80 ml di latte
1 pizzico di sale
aroma di vaniglia

Ingredienti per il frosting e la decorazione:
250 g di mascarpone
60 g di zucchero a velo
colorante alimentare rosa
cialde a forma di roselline già pronte

PREPARAZIONE:

Montare il burro a temperatura ambiente con lo zucchero fino a ottenere una crema, unire la vaniglia e il pizzico di sale. Aggiungere un uovo alla volta insieme a un cucchiaio di farina setacciata con il lievito, mescolando bene ad ogni aggiunta; aggiungere la farina rimanente e il latte per stemperare il tutto. Versare il composto nei pirottini adagiati nello stampo per muffin, riempiendoli per 2/3. Cuocere in forno caldo per circa 20 minuti a 180°. Nel frattempo preparare il frosting lavorando il mascarpone appena tolto dal frigo con lo zucchero a velo, aggiungere del colorante rosa per alimenti, una goccia alla volta, fino ad ottenere il colore desiderato. Sfornare i cupcakes e lasciarli raffreddare. Procedere poi alla decorazione con il frosting ben freddo aiutandosi con un sac à poche- e adagiare su ognuno di essi una rosellina di cialda.

Sono semplici da preparare, si prestano a tante varianti tutte gustose; ottimi con la frutta fresca di stagione, con i frutti di bosco, la frutta secca e le gocce di cioccolato.

È vero sono dolcetti americani, ma per fortuna attraverso i foodblog siamo venuti a conoscenza di quasi tutte le ricette del mondo: muffin, cupcakes, scones, pancakes ecc. tutte merendine che non rientravano nei nostri spuntini; bene, ora le nostre colazioni e le merende dei bambini sono più ricche e meno noiose.

Dai blog abbiamo imparato che per fare correttamente i muffins, meglio mescolare prima gli ingredienti secchi a parte, poi gli ingredienti umidi e quindi unire i due composti mescolandoli delicatamente in una ciotola.

La cottura poi è semplice e veloce… caldi usciti dal forno sono buonissimi!

150 g di farina 00

200 g di zucchero

1 cucchiaino di cannella

200 g di panna acida

1 uovo

1, 5 cucchiaini di lievito in polvere

50 g di burro

scorzetta di limone grattugiata

100 g di mirtilli (vanno anche surgelati)

Versare in una ciotola lo yogurt, le uova, l’olio e mescolare bene. Mettere a parte in un’altra ciotola gli ingredienti rimasti, ovvero quelli secchi, miscelando bene. Riunire entrambi i composti in una ciotola e mescolare bene ma brevemente, fino ad ottenere un impasto omogeneo. Trasferire negli appositi stampini riempiendoli per 2/3 aggiungere qualche ribes quindi porre in forno caldo a cuocere per circa 20 minuti a 180 °C. I Cupcakes al cioccolato fondente sono una squisita via di mezzo tra un tortino e un cioccolatino! Questi Cupcakes sono friabili, soffici, incredibilmente profumati di cioccolato e vaniglia e ad ogni morso sembra di mangiare davvero un cubetto di cioccolato sotto forma di torta!

I miei figli adorano i cupcakes al cioccolato fondente sia per colazione che per merenda. Non essendo troppo dolci non stancano mai e si prestano a moltissimi utilizzi.

Possono essere farciti con qualsiasi crema o marmellata, e possono poi essere guarniti con qualsiasi cosa ci venga in mente, dal semplice zucchero a velo alla più complicata glassatura, passando per la frutta fresca.

Un’ottima base, insomma, per dare libero sfogo alla fantasia. Io però amo i cupcakes al cioccolato fondente semplici semplici, appena raffreddati, croccanti fuori e teneri teneri dentro!

Ingredienti

250 g Farina
180 g Zucchero
200 g Cioccolato Fondente
100 g Burro
4 Uova
1 bustina Lievito In Polvere Per Dolci
1 bustina di Vanillina

Procedimento

Mettete il cioccolato a bagnomaria o nel microonde fino a che sarà sciolto e cremoso.
Unite il burro e mescolate in modo che si sciolga con il calore del cioccolato.
Mettete le uova intere e lo zucchero nella ciotola della planetaria e montatele con la frusta fino ad ottenere un composto chiaro e spumoso, ci vorranno circa 10 minuti.
Unite al composto di uova anche il cioccolato e burro leggermente raffreddati e mescolate.
Per ultime aggiungete anche la farina e il lievito setacciati con la vanillina e mescolate delicatamente in modo da non smontare l’impasto.
Dividete il composto in 12 pirottini, inseriti nella apposita piastra per cupcakes e muffins. Potete usare due cucchiai o un dosatore per gelato, come faccio io.
Cuocete i cupcakes al cioccolato fondente in forno statico preriscaldato a 180° per 16 minuti circa. Alla prova stecchino risulteranno sempre un po’ umidi all’interno, ma una volta freddi il cioccolato si rassoderà.
Estraete i cupcakes al cioccolato fondente dalla teglia e lasciateli raffreddare completamente su una griglia prima di servirli, così come sono o decorati a piacere, con zucchero a velo, panna montata o con qualsiasi topping la vostra fantasia vi suggerisca!
