La pastuccia è un tipico antipasto abruzzese, molto saporito e di facile esecuzione…
Mancano le foto del passo passo che sono sicura di aver scattato ma la ricerca tra le mie cartelle fino ad ora è risultata vana per cui, per non passare tempo inutile alla loro ricerca , mi sono decisa di pubblicare solo le foto finali…
Sono certa che, se la ricetta che propongo oggi ( ve ne sono parecchie sul web con gli stessi ingredienti e modalità di esecuzione) possa essere eseguita con facilità…
La ricetta è tratta dal bel libretto “Accademia Barilla”

500 GR DI FARINA PER PREPARARE LA POLENTA ( VA BENE ANCHE QUELLA PER POLENTA ISTANTANEA)
1 CICCINAINO DA CAFFè DI SALE FINE
300 ML DI ACUA TIEPIDA
30 GR DI UVA PASSA 
250 GR DI GUANCIALE
200 GR DI SALSICCOA
3 TUORLI
OLIO EXTRA Q.B.

In un’ampia scodella mescolare la farina di mais con il sale e l’acqua tiepida…
Amalgamare  con cura in modo che tutta la farina sia bene intrisa con l’acqua..
Unire  ora l’uvetta ammollata con acqua tiepida e ben strizzata e la salsiccia sminuzzata.
Aggiungere i tuorli ..
Ora versare in una padella antiaderente ( io ne usata una di piccole dimensioni in modo da ottenere delle pastucce individuali e di media grandezza) un poco d’olio e far soffriggere il guanciale a pezzetti.
Versare ora una porzione di impasto appiattendolo e pareggiandolo con un cucchiaio di legno.
Velare la pastuccia con un poco di olio e cospargerla con dei pezzetti di guanciale rosolati..
Girarla per farla dorare anche sull’altro lato e….

Servire subito!!!

Bene veniamo alla nostra ricetta, oggi Vegan, un risotto di zucca, facile economico e veloce da preparare, che rispetta la stagionalita’, e non dimentichiamo che questo ingrediente principale e’ ricc di proprieta’ benefiche per la nostra salute.
Ingredienti: (ausilio bimby)
1 spicchio d’aglio
400 gr di zucca
1 scalogno
30 gr di olio EVO
50 ml di vino bianco secco
700 gr di acqua
1 cucchiaio di dado granulare
300 gr di riso carnaroli
sale q. b.
Procedimento:
Mettete nel boccale lo scalogno, l’aglio e 100 gr di zucca, tritare: 10 secondi vel. 5, unite l’olio, 3 minuti 100° vel. 1. Aggiungete il riso e il vino, 3 minuti 100° Antiorario vel. 1. Versate acqua e il dado granulare, aggiungete la restante zucca, regolate di sale e cuocete 15 minuti. 100° Antiorario vel. 1. Lasciate riposare per qualche minuto, impiattate e servite.

Quando mi è stato chiesto di predisporre il nuovo menù per Byra, ho utilizzato le linee guida e la stessa attenzione da sempre utilizzate per la scelta delle birre sino ad oggi proposte, prodotti espressione di un territorio o di un sapere fare.  Così  da oggi in accompagnamento alle birre proposte si possono degustare dei mini panini gourmet farciti con guanciale di maialino nero delle montagne Nebrodi, Trota Affumicata Regina di San Daniele,  Piancentinu (formaggio di pecora siciliano allo zafferano) oppure con il formaggio proveniente dalle mucche Jersey con il cui latte si producono anche le caramelle mou. Si può continuare con tagliere di Prosciutto di San Daniele 36  mesi con alici di Cantabrico e finire poi  con una fetta di torta Guiness e cioccolato.

Il Byra è aperto in via mazzini 5 a Busto Arsizio (VA) dal lunedì al sabato dalle ore 17.

PER PREPARARE L’IMPASTO INSERIRE NEL BOCCALE TUTTI GLI INGREDIENTI 40 SEC. VEL. 6, OTTENENDO COSÌ UNA PASTA LISCIA, OMOGENEA ED ELASTICA. DIVIDERLA IN 7 MUCCHIETTI E LASCIARLI RIPOSARE NELLA PELLICOLA TRASPARENTE PER 1 GIORNATA. PER PREPARARE IL RIPIENO INSERIRE NEL BOCCALE PARMIGIANO E PREZZEMOLO 30 SEC. VEL. TURBO
E METTERE DA PARTE. INTRODURRE NEL BOCCALE CIPOLLA E OLIO 5 MIN. 90° VEL. 3. AGGIUNGERE, DAL FORO DEL COPERCHIO CON LAME IN MOVIMENTO VEL. 5, LE FOGLIE VERDURE BIETOLA/SPINACI 15 SEC.
