Coriander roots, a&nbsp;few&nbsp;coriander leaves for garnishing<br />9. Soup cubes<br />10. Water<br />11. Salt, bay leaf (optional)<br />12. Ground pepper and ground pepper<br />13. Soy sauce</p>

<p>Perché questo è un club favoloso che mi ha ridato entusiasmo, ai tempi della sua creazione, per rimanere in pista in cucina e sul blog. Dovendo scegliere una ricetta per festeggiare a dovere, mi sono resa conto che troppe ricette sono state lasciate indietro, per mancanza di ispirazione o di tempo, ma rimane un archivio grandioso a cui tutti possono attingere con facilità quando hanno bisogno di idee per un pranzo luculliano o una cena veloce.</p>
<p>Questa volta opto per una ricetta di origini orientali, forse perché un po&#8217; mi mancano questi sapori che mi erano più vicini quando ero in città e poi perché mi diverte fare conoscere sempre cose nuove a mio marito, molto radicato nel suo territorio e che, da quando conosce me, sta scoprendo sapori che mai si sarebbe immaginato <img src=&#8221;https://s.w.org/images/core/emoji/11/72&#215;72/1f609.png&#8221; alt=&#8221;</p>

<p>Cut the chicken breast into small pieces. In a pan, heat a little extra virgin olive oil. Add the onion, cut into thin slices and then also add the chicken and fry carefully. In una padella, fate scaldare un filo di olio extravergine di oliva. Unite la cipolla tagliata a fettine sottili quindi unite anche il pollo e fate rosolare attentamente. Unite un poco di acqua o brodo vegetale e cuocete fino a perfetta cottura del pollo. Aggiungete per ultimo le spezie e il peperoncino. Fate amalgamare il tutto poi spegnete il fuoco e fate riposare.</span><br /><span><br /></span><span>Prendete adesso l&#8217;impasto delle tortillas, stendetelo non molto spesso quindi fatele cuocere in una padella antiaderente senza aggiungere grassi (burro o olio) quando saranno pronte, servitele con le fajitas di pollo.</span>

<p><b>Ingredients for 4 people:</b><br />8 chicken thighs<br />20 shelled and toasted almonds<br />1 large leek<br />200 grams of peas previously boiled<br />40 grams of bacon, diced<br />2 tablespoons mustard old<br />1 shallot<br />extra virgin olive oil<br />salt</p>
<p><b>Method</b><br />Clean the leek, cut into rounds, then do blanch in boiling water for about 10 minutes. Drain and keep aside.</p>
<p>In a pan, make a fried with oil and half a shallot. Brown the bacon then add the peas and cook it all. When it is ready, remove the peas and bacon and keep aside to warm.</p>
<p>In the same skillet, take another pan with the oil and the remaining shallots and fry the chicken thighs for about 10 minutes. Then add even almonds, half a cup of water and cook covered for another 10/15 minutes. When the chicken is perfectly cooked (check the exact cooking !!) Now add the peas with bacon and leek and cook for about 5 minutes. At cooking&nbsp;obtained&nbsp;, served hot with mustard old.</p>

Scolatelo e tenetelo da parte.</span><br /><span><br /></span><span>In una padella, fate un soffritto con olio e mezzo scalogno. Fate rosolare la pancetta poi unite i piselli e fate insaporire il tutto. Quando sarà pronto, togliete anche i piselli e la pancetta e teneteli da parte al caldo.</span><br /><span><br /></span><span>Sempre nella stessa padella, fate un altro soffritto con olio e il rimanente scalogno e fate rosolare le cosce di pollo per circa 10 minuti. Aggiungete quindi anche le mandorle, mezzo bicchiere di acqua e cuocete coperto per altri 10 / 15 minuti. Quando il pollo sarà perfettamente cotto (verificate l&#8217;esatta cottura!!) aggiungete adesso i piselli con la pancetta e il porro e fate cuocere per circa 5 minuti. A cottura ottenuta, servite caldo con la senape all&#8217;antica.</span>

<p>Una coppia passa, mano nella mano. Si stringono un po&#8217;, l&#8217;uno contro l&#8217;altra, per proteggersi dal freddo. Sorridono e parlano a bassa voce di cosa sono, cosa saranno poi. E quelle parole sembrano provenire da un sogno, quasi a voler restare in una campana di vetro che le protegga dalla luce del sole, per non farla sbiadire.</p>

<p>E il silenzio delle città, nelle sere d&#8217;inverno, così profondo da sentirne quasi il respiro. Restare incantati e scorgere quello che di giorno non riesci a vedere. Imparare che non è poi così lontano raggiungere l&#8217;altra sponda del fiume. Ascoltare il suono di una chitarra. Un uomo che ti accompagna, con le note della tua canzone preferita.</p>
<p>Tornare a casa e scoprire che il freddo si può annullare, affondandolo in una zuppa.</p>
<p>&nbsp;</p>
<p>Per la seconda proposta per l&#8217;Mtc 53 ho deciso di unire due preparazioni asiatiche (la Tom Kha Gai thailandese e il Chai Tea indiano) in un&#8217;unica zuppa. Il risultato è una zuppa delicata nei sapori e molto profumata.</p>
<p><strong>CHICKEN CHAI SOUP &#8211; ZUPPA DI POLLO CHAI</strong></p>
<p><strong>INGREDIENTI</strong> <em>per 4 persone</em></p>
<p><em>Per il brodo</em></p>
<p>1 pollo, diviso a pezzi (il mio era circa 1.8 kg)</p>
<p>1 cipolla</p>
<p>1 gambo di sedano</p>
<p>1 carota</p>
<p>1 pezzo di zenzero da 2 cm</p>
<p><p>In una pentola capiente, versare la cipolla, il sedano, la carota, lo zenzero e il pollo. Coprire con acqua fredda e porre sul fuoco a fiamma moderata. Portare a bollore, abbassare la fiamma e far sobbollire per circa 1 ora. Passato questo tempo eliminare dal brodo le verdure, lo zenzero e il pollo. Eliminare la pelle e le ossa al pollo, dividere a pezzetti e tenere da parte.</p>
<p><p><em>Per il chai tea</em></p>
<p>800 ml di latte</p>
<p>4 cucchiai di tè nero in foglie</p>
<p>1 stecca di cannella</p>
<p>1 pezzo di zenzero da 2 cm</p>
<p>10 chiodi di garofano</p>
<p>6 bacche di cardamomo</p>
<p>6 stelline di anice</p>
<p><p>A 20 minuti dalla fine della cottura del brodo, porre in un pentolino il latte con le spezie e il tè (che per comodità ho inserito in un infusore da tè) e far cuocere a fiamma bassa. Dopo circa 20 minuti, spegnere ed eliminare le spezie e il tè.</p>
<p><p><em>Per completare</em></p>
<p>2 patate medie (o 3 piccole)</p>
<p>sale</p>
<p>pepe</p>
<p><p>Pelare e lavare le patate. Tagliarle a cubetti di circa 1 cm e versarle nel brodo insieme al pollo. Unire il tè chai e far insaporire per circa 10 minuti. Regolare di sale e pepe, spegnere e servire caldissimo.</p>
