<div>Il fiordilatte è un dolce al cucchiaio molto diffuso nelle cucine bolognesi.</div>
<div>A Bologna, si dice che ogni nonna che si rispetti abbia il suo segreto per un fiordilatte da manuale.</div>
<div>Non è mica il solito budino, è un pezzo di storia che sa di latte fresco, così liscio che sembra fatto apposta per scivolare giù leggero, il fine pasto perfetto che ti lascia il sorriso sulle labbra e la pancia felice.</div>

<div>INGREDIENTI (per 5 persone)</div>
<div>
<ul>
<li>latte 1 litro</li>
<li>chicchi di caffè 3</li>
<li>zucchero semolato 300 g</li>
<li>zucchero a velo vanigliato 50 g</li>
<li>uova 6</li>
<li>zucchero semolato per caramellare lo stampo</li>
</ul>

<div>PROCEDIMENTO</div>
<div>Mettere a bollire il latte con i chicchi di caffè; lasciar bollire fino a quando è calato della metà.</div>
<div>Aggiungere lo zucchero semolato e quello vanigliato quando sta per finire la bollitura.</div>
<div>Aspettare che il latte si raffreddi.</div>
<div>Sbattere con la forchetta le uova e farle passare per un colino insieme al latte (a questo punto vanno tolti i chicchi di caffè).</div>
<div>In uno stampo&nbsp;far caramellare 3 o 4 cucchiai di&nbsp; zucchero e versare dentro tutto il composto, poi ricoprire con carta stagnola.</div>
<div>Cuocere a bagnomaria nella pentola a pressione (occorre circa mezz&#8217;ora, fuoco lentissimo, appena fischia la pentola) o nel forno (oltre due ore).</div>

<div>INGREDIENTI (per 12 persone)</div>

<div>10 uova</div>
<div>500 g zucchero</div>
<div>1 bicchiere di mandorla amara</div>
<div>1 bicchiere di succo di limone</div>
<div>3/4 cucchiai di zucchero per caramellare lo stampo</div>

<div>PROCEDIMENTO</div>
<div>Sbattere uova e zucchero con una frusta a mano, poi unire mandorla amara e succo di limone e mescolar per amalgamare bene.</div>
<div>Carammellare uno stampo da budino con lo zucchero e versarvi dentro il composto.</div>
<div>Cuocere a bagnomaria per un&#8217;ora sul fornello a gas a fuoco dolce, poi un&#8217;ora (sempre a bagnomaria) in forno, a 160°C.</div>
<div>A cottura ultimata, fare la prova dello stuzzicadente: se esce pulito, il dolce è cotto.</div>
<div>Far raffreddare, poi capovolgere e servire.</div>

<div align="justify">Il sapore di una fragola appena staccata dalla pianta è indescrivibile e consiglio a tutti di coltivare almeno una piantina di fragole dentro un vaso sul balcone: non necessita di cure particolari, ma dà grande soddisfazione.</div>
<div align="justify">E’ vero, le fragole sono ottime al naturale, soprattutto se sono appena colte e biologiche, ma stavolta ho voluto proporle come un fresco dessert, con un sughetto zuccherino ideale da “tocciare” con pane fresco… che bontà!</div>

<p>INGREDIENTI (per 4 persone)   
<ul>
<li>fragole fresche 500 g</li>
<li>limone 1</li>
<li>zucchero semolato 2 cucchiai</li>
</ul>
<p>PROCEDIMENTO<br />&nbsp;   <br />Sciacquare le fragole velocemente con acqua e privarle del picciolo, poi tagliarle in quattro e metterle in una ciotola, unendo lo zucchero.    <br />Spremere il limone e versare il succo filtrato sullo zucchero e mescolare bene con un cucchiaio di legno.    <br />Coprire e far riposare qualche ora prima di servire.

<div>There&#8217;s an area in Bologna that you mustn&#8217;t cross: it&#8217;s the ZTL.<br />&#8203;It&#8217;s a limited area that covers almost the whole city inside the old walls and it&#8217;s forbidden to non-residents from 7am to 8pm.</div>

<h2><strong>So, where do I park my car in Bologna?</strong></h2>
<div>Let&#8217;s say it loud and clear: in Bologna there is no free parking.<br />Whatever you leave your car in a garage or in public parking, you have to pay.</p>
<p>Here are the different options:</p></div>
<div><strong>- Public parking in Bologna</strong></div>
<div>You have to look for the blue lines. If you find it white, you&#8217;re not lucky, you&#8217;re inside a resident zone and your car will be removed.<br />Even worse with yellow lines that are for buses, taxi or people with disabilities.</p>
<p>The blue lines have different prices and time ranges according to the area where you are. Nothing cheaper than 1,5&euro;/hour.<br />&#8203;Also you need coins to pay in the red machine, hopefully working.</div>

<p>- Garage Autostazione<br />Close to the train station, it&#8217;s easy to reach without risks of a ticket.</p>
<p>15 minutes walking to Piazza Maggiore.<br />Piazza XX Settembre, 6 &#8211; 40121 Bologna (BO)<br />Price: 18&euro;/day (every day but Saturday), 2,2&euro;/hour.</p>
<p>- Nuovo Parcheggio Stazione<br />Just next to the new train station, it&#8217;s a multilevel parking lot with 800 spots. Good if you need to get the train, but in an area with lots of cheaper blue lines.</p>

<p>Now it&#8217;s a library, probably <strong>the most important of Bologna</strong>. <p>But also everyday, if you have time to spend at Cineteca di Bologna and its library. A huge selection dedicated to <strong>cinema, photography</strong> and all their relatives.</p>
<p>&#8203;On the first floor you can find retrogames including my first console (Sega Master System II) behind a case.</p>
<p>Vintage movie posters on the walls may distract your study, but warm your soul.</p>

<p>It&#8217;s set inside Palazzo Poggi, in the heart of University, since the XVIII century.<br />You can walk under its portico without notice it, but you&#8217;d miss one of the <a target="_blank" rel="nofollow" href="/redirect.php?URL=http://www.tastebologna.net/blog/museums-emilia-romagna">most interesting museums Emilia Romagna</a>, an astronomical observatory and this beautiful library.</p>
<p>&#8203;If you want to breathe the authentic <strong>academic atmosphere</strong> of Bologna, don&#8217;t make the mistake to forget it.</p>

<p>A XIV century Franciscan complex hosts this old library in Imola, a small city between Emilia and Romagna.</p>
<p>After this mystic jump, you deserve a pagan prize. Get a great gelato at Sesto Senso, just near the library.</p>

<p>A huge wooden theatre, a surprising typography museum and a sketch by <strong>Leonardo</strong>, THAT Leonardo, aren&#8217;t enough to convince you?<br />Ok, Biblioteca Palatina will do the rest.</p>
<p>Created in 1761 has 4 main halls:<br />- Sala di Maria Luigia, a reading room with 26.000 books<br />- Sala Dante, to look up at frescos inspired by the Divine Comedy<br />- Sala De Rossi, with sumptuous furnishings Impero style<br />- Petitot Gallery, covered of original walnut bookcases.</p>

<p>If you&#8217;re going to Ravenna only for its beach, you&#8217;ll get disappointed. But if you&#8217;re looking for art and culture, it&#8217;s one of the <a target="_blank" rel="nofollow" href="/redirect.php?URL=http://www.tastebologna.net/blog/best-daytrip-emilia-romagna">best day trips you can take from Bologna</a>. </p>
<p>Monks spent about 300 years to built Biblioteca Classense. <br />Aula Magna, decorated with statues, frescoes and finely carved wooden shelves, is its jewel. Then visit the large refectory, the ancient sacristy (Sala Muratori) and the monumental cloisters. </p>
<p>The real gem? <br />&#8203;Raccolta Dantesca, the most complete collection of Dante&#8217;s works bought from the German bookshop Olschki.</p>

<p>It&#8217;s written above the wooden gate of Biblioteca Malatestiana.<br />I can&#8217;t speak for the big mammal with the trunk, but I&#8217;m sure that this incredible library isn&#8217;t afraid of time.</p>
<p>It&#8217;s the <strong>first Italian civil library</strong> and the building, the books and the furniture are in perfect shape.<br />Credits to the architect Matteo Nuti, able to create an environment with a natural air recycle to preserve the books.<br />For this reason only small groups with guided tours can enter and for a short time.</p>

<div>The name of <strong>Alessandro Gambalunga</strong> won&#8217;t tell you much. </p>
<p>Humble origins, law degree, married to a noble lady. <br />He gave to Rimini his family palace with a collection of Latin and Greek classic books. <br />But his legacy to Rimini goes beyond that. </p>
<p>At his death in 1619, he donated the full library to the city and left money for the improvement, binding and restoring of books and for the librarian wage. </p>
<p>&#8203;After 400 years the library still stands there in the centre of Rimini with more than 300.000 books. Only waiting for curious readers to look for them.</p>

<p>El Anciano Rey de los Vinos is a <strong>100 years old taverna</strong> just in front of Madrid&#8217;s Cathedral, a location where usually you could find a MacDonald&#8217;s or a 10&euro;-for-a-coffee place.<br />But Madrid is different.<br />So you sit at the counter next to Spanish workers during lunch break. You order a vermuth. At least a couple.</p>
<p>&#8203;Then you read the <strong>tapas</strong> list amongst tortilla and spicy patatas bravas you choose the gift: regalitos de torito. <strong>Bull&#8217;s little gifts</strong>.</p>
<p>&#8203;It&#8217;s a small tapas made with soft bull&#8217;s tail meat filled inside brik dought with a red pepper as a topping. Served with a toothpick, regalitos is the typical dish to compartir.<br />&#8203;<br />I would pay $$$ to have them instead of fries for an <a target="_blank" rel="nofollow" href="/redirect.php?URL=http://www.tastebologna.net/blog/aperitivo-bologna">aperitivo in Bologna</a>.&nbsp;</p>

<p>Just next to Piazza della Borsa you find a small trattoria with a few tables outside. Opened in 1897 by <strong>Pepi S&#8217;Ciavo</strong> (Pepi the Slovenian) now is just called Buffet da Pepi.<br />Always attended by people from the neighborhood, downtown workers, locals and tourists, Pepi is a must visit but not only for the authentic vibe.</p>
<p>You go there to eat a <strong>mix of boiled meat</strong>: luganighe sausage , porzina and cotechino, served with sauerkraut, mustard and grated cren (horseradish used for the more famous wasabi). An dish that explain the roots and influences of Trieste more than a history book.</p>

<div><strong>Michelin starred restaurants</strong> are a special category of restaurants.<br />You ring the bell to enter, like in a jewelry.<br />You expect at least 6-10 ingredients for every dish.<br />And you know that a dinner is not just a dinner.</p>
<p>The more Michelin restaurant you visit, the less surprising is the formula. Ristorante Marconi, one of the few <a target="_blank" rel="nofollow" href="/redirect.php?URL=http://www.tastebologna.net/blog/michelin-restaurant-bologna">Michelin star restaurant near Bologna</a>, makes no exception.</p>
<p>But actually there are some exceptions.</p>
<p>Even if the location is elegant, with open space and Nordic furniture, the atmosphere is different. Relaxed.<br />It&#8217;s a place to have dinner with friends and not to worry if you just have jeans in your trolley.</p>
<p>&#8203;Sure the concert is a list of classics: amuse bouche to open, complex dishes with rare ingredients (like percebes: I had to google them, honestly) and the glass always half full.&nbsp;<br />&#8203;But their grilled squid to share from the hot barbeque on the table were just simple and delicious.<br />High cuisine has never been that close to welcoming and warm.</p>

<p>But when it comes to <strong>granita</strong> everything changes.</p>
<p><strong>Etna volcano</strong> isn&#8217;t only a spectacular landscape to visit, but also the birthplace of the first Italian granita. The snow taken from Etna was mixed with the most delicious fruit grown on its land. And there you get a food without rivals, hard to replace elsewhere.</p>
<p>&#8203;Besides the most famous Catania and the luxury of Taormina, it was this small bar in the small village of Acitrezza who stole my heart. <br />It&#8217;s hard to describe their melon granita, served with the typical round brioche.<br />Just buy the first flight to Catania and let me know.</p>

<p>Cozido is a unique dish prepared in Furnas, a small village in the volcanic island of Sao Miguel, dotted with boiling water and mud springs. In these steaming holes called <strong>caldeiras</strong>, locals come to lower underground their pots full of layers of pork, beef, cabbage, kale, potatoes, carrots, chorizo and blood sausage.<br />&#8203;Volcanic steam cooks the pot for about 8 hours, slowly squeezing out the juices and flavours from all the ingredients.</p>
<p>The result is an apparently simple dish, but with a wide and complex and mix of flavours impossible to forget. <br />You can get cozido at the old fashioned bar Tonys, just after a warm thermal bath at Po&ccedil;a da Dona Beija.</p>
<p>Cozido is so far the best dish I had this year. <p><b><span>Ho utilizzato subito la carta per cucinare delle semplici salsicce al forno con patate, il risultato è stato ottimale, infatti tutti i grassi sono rimasti sulla carta e la cottura è stata omogenea e saporita.</span></b></p>

<h2><strong><span>Ristorante San Domenico</span></strong></h2>
<div><span>Bourdain chose a special host to guide him around Emilia Romagna&#8217;s food.&nbsp;</span><br /><span>His Virgilio is <strong>Michael White</strong>, a chef from Wisconsin who trained at Ristorante San Domenico in Imola.</span></p>
<p><span>The show begins inside the kitchen of this <strong>Michelin Starred restaurant</strong>, opened in 1970. Gianluigi Morini and Nino Bergese, known as &ldquo;the king&#8217;s chef&rdquo;, for his past work with royal Savoia family, were the founders.&nbsp;</span></p>
<p><span>They got 2 Michelin stars in 1977 and never let them fade away.&nbsp;</span><br /><span>Michael began his career in San Domenico&#8217;s kitchen, before flying back to the USA. </span><br /><span>He shows to Bourdain the preparation of one of their most popular dish: uovo in raviolo.</span></p>
<p><span>They come back at the end of the show for a full dinner. </span><br /><span>Bourdain looks enthusiast about the duck press tool. And of the 1914 cognac they share with Mr Morini. </span></p>

<div><span>Massimo Spigaroli introduces Micheal and Anthony to the most valuable cured meat of Emilia Romagna: <strong>culatello</strong>.</span></p>
<p><span>A 700 years old court near Po river hosts the cellar of magic. </span><br /><span>The air enters from an open window to cultivate sweet mold, raised by the moisture of the river. </span><br /><span>White and Bourdain hang a culatello just near the one of Alain Ducasse and Prince Albert of Monaco to cure for 2 years.</span></p>
<p><span>I do hope they had the chance to come again to take it out of the wall and have it with a bowl of wine.</span></p>

<h2><strong>Acetaia Pedroni</strong></h2>
<div>It&#8217;s no surprise that Bourdain loves <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://www.tastebologna.net/blog/balsamic-vinegar-tradizionale-modena">Balsamic vinegar of Modena</a>.<br />A man who respects real food. A food made by men of passion, far from marketing slogans and healthy trends that last a season.&nbsp;</p>
<p>Bourdain arrives at Acetaia Pedroni on &ldquo;Sparky&rdquo;, his red Ferrari, but the charm of luxury cars is blown away by the batteria of wood-made barrels of Giuseppe.&nbsp;<br />Each Balsamic takes its name from the wide Pedroni&#8217;s family tree, starting in 800&#8242;s century after a lucky bet on lottery numbers.</p>
<p>I&rsquo;m 100% sure that Bourdain respects and knows <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://www.tastebologna.net/blog/how-use-balsamic">how to use Balsamic vinegar</a>. But after the visit of the acetaia, he stops at <strong>Osteria di Rubbiara</strong> to taste Balsamic on Modena traditional dishes.&nbsp;</p>
<p>This Osteria is not a place for #foodgasm (a term hated by Bourdain).&nbsp;<br />The old owner confiscates your phone as soon as you enter. There is no written menu and you&#8217;re not supposed to leave leftovers on your dish.</p>
<p>Those rules may seem unpleasant and out of time, but they are a flashback in an area were food was work and efforts before pleasure. Things that Bourdain well knows.</p>

<h2><strong>Quadrilatero</strong></h2>
<div>Despite some footage of market life at Quadrilatero, Bourdain spends only a few scenes in Bologna.<br />Sit on the tables of Il Calice in Via Clavature, he has a <strong>Negroni</strong> with Michael, sharing opinions about Italian style and filling &ldquo;hot pancakes&rdquo; (they&rsquo;re called <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://www.tastebologna.net/blog/tigelle-recipe">tigelle</a> Michael!!!) with mortadella.&nbsp;</p>
<p>They joke about Italian self confidence in wearing red trousers and fanny packs, without caring about age and dress code.<br />It&#8217;s a funny scene, but that&#8217;s the only contact with Bologna.&nbsp;</p>
<p>And my biggest regret.</p>

<h2><strong>Trattoria Fita</strong></h2>
<div>But Bourdain and Michael still have their authentic local lunch.&nbsp;<br />In Borgo Tossignano, near Imola, they have a real Romagnolo feast.&nbsp;<br />Vegetarians can skip this part.</p>
<p>Just 40min from Bologna, the cuisine of Osteria Fita already seeks to Florence. Starting with <strong>ficattola</strong>, a local fried bread with DOP cheese squacquerone the main attraction is <strong>fiorentina steak</strong>.</p>
<p>In his most famous article on the New Yorker <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://www.newyorker.com/magazine/1999/04/19/dont-eat-before-reading-this" target="_blank">Don&rsquo;t eat before reading this</a>, Bourdain explains why never order well-done meat in a restaurant. Fortunately, fiorentina can definitely be eaten.</p>

<div>At Tre Monti vineyard Bourdain talks about <strong>happiness</strong>.<br />After admiring a sfoglina making <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://www.tastebologna.net/blog/how-eat-tagliatelle-pasta">tagliatelle</a>, Anthony and Micheal sit in a vineyard on the hill with wine producer Vittorio and his father.</p>
<p>They eat pasta and cheer together with a glass of <strong>Sangiovese red wine</strong> called Thea, in memory of Vittorio&rsquo;s mother.<span>&nbsp; &nbsp;</span></p>

<div>Reading those words today can lead to different thoughts.&nbsp;<br />It&#8217;s impossible to distinguish where fiction ends and starts the reality.</p>
<p>I spent most of my teenage summers up on those hills, and I know how unique and beautiful they are.<br />&#8203;<br />My only wish is that in that vineyard, drinking wine and talking about food, he had some moments of peace.&nbsp;</div>

<h2><strong>Tortellino Festival</strong></h2>
<div>Oct.4th is <strong>St.Petronio</strong>, a very important day for Bologna. Lots of celebrations, parties and one unique event for foodies. Tour Tlen(tortellino in our slang) Association created this event 6 years ago with the aim of having together the best chefs of Bologna and make them challenge on our most popular pasta.<br />Just 2 rules:&nbsp;
<ol>
<li>the dough must be handmade with wood rolling pin&nbsp;</li>
<li>the shape of tortellino must be the classic one.</li>
</ol>
<p> Except those, every chef is free to create and <strong>innovate</strong>, mix and combine.&nbsp;<br />Tortellino Festival takes place in the stunning hall of Palazzo Re Enzo and in 2017 hosted 24 different chefs.<br />&#8203;With 20&euro; you can have 5 different tasting of tortellini.</div>

<h2><strong>Who made the best tortellino</strong><br /></h2>
<div>I carefully selected and tried 3 different tortellini:</p>
<p><strong>Acqua Pazza</strong><br />My first choice. I went straight to them to taste their <strong>fish tortellini</strong> with ray, anchovies, buffalo mozzarella in butter and truffle sauce. I&#8217;ve first run into this fish restaurant just outside Bologna at <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://www.tastebologna.net/blog/mangiro-foodies-walk">Mangir&ograve; food walk</a>, where they prepared an amazing shrimp with gazpacho, and I was looking forward to meeting them again. Hardcore bolognesi can be skeptical about a fish tortellino, but for me it was just a perfect and well balanced dish.</p>
<p><strong>Ristorante Cesoia</strong><br />I was scrolling down Facebook newsfeed when I encountered a photo of a <strong>red&amp;blue tortellini</strong>. I first thought about a well made work of Photoshop but then I read and realized it was an idea of Pietro Montanari. This young chef has a family tradition in Bologna and took Ristorante Cesoia by the hands of his grandfather 3 years ago. But how to make it look like them? I&#8217;m curious, I asked him. He decided to separate the filling: on the red one he mixed in the dough the pork loin and mortadella, for the blue ones he put the pollanca (pullet) with some squid ink and dried kale. This tortellini weren&#8217;t just an aesthetic divertissement, but a real example of the skills and imagination of this young guy.&nbsp;&nbsp;</p>
<p><strong>Massimiliano Poggi</strong><br />Finally a <strong>classic</strong> tortellino. Cooked in beef and capon broth by the hands of Max Poggi, probably one of the most underrated chef of Bologna. Max is out of the <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://www.tastebologna.net/blog/michelin-restaurant-bologna">Michelin Stars</a> circuit and prefers to stay in the kitchen rather than walking around the tables, but his cuisine has nothing to envy to awarded restaurants of the area. He well combines modern techniques and grandmother&#8217;s tips, respects the tradition but looks forward to innovation and collaboration. A dinner at his restaurant in Trebbo di Reno worth a special occasion. Like a good bowl of hot tortellini.</div>

<div>Forno Calzolari bakery opened in 1956 and is now managed by Matteo Calzolari, son of the original owner and partner of our <a target="_blank" rel="nofollow" href="/redirect.php?URL=http://www.tastebologna.net/">food tours in Bologna</a>. The usage of almost <strong>disappeared wheats</strong>, the quality and innovation of their bread (there&#8217;s a monthly bread with seasonal ingredients) and the will to create a quality network of restaurants and producers make Calzolari THE reference in Bologna about bread.</div>

<h2><strong>What is Mangir&ograve;</strong></h2>
<div>&#8203;Mangir&ograve; is a 15 km <strong>gastronomic walk</strong> between the hills of Monghidoro, in the countryside of Bologna, created 11 years ago by Matteo. The idea is simple:&nbsp;<br />1. take some of the best chefs and patissiers of Bologna<br />2. ask them to prepare original dishes based on bread&nbsp;<br />3. place them in natural frames between woods, fields and small hamlets around Monghidoro&nbsp;<br />4. create a caravan of passionate foodies who would like to spend a funny Sunday together among food, wine and nature.</div>

<h2><strong>What happened this year</strong></h2>
<div>My first Mangir&ograve; was together with part of Taste Bologna&#8217;s team. Some people call it team building, for me is a way to share our passion and spend time together with people who I appreciate. I&#8217;d rather call it &#8220;<strong>food building</strong>&#8220;.</p>
<p>After being divided in two groups, coupled with two different menus with dishes based on bread, we started our walk with just one rule: share. Not only the heat, the path and the laughter but especially the food.</p>
<p>After breakfast with fresh milk, bread and jam, we started to discover a complete menu served directly by the chefs, hidden in six small villages. <strong>Gino Fabbri</strong>, the best pastry in the world 2016, offered a croissant at C&agrave; del Tosco. Then Daniele Reponi, the master of Panino in Modena, prepared a crescenta with cooked ham, apricot and confit tomatoes to start our walk with the right amount of strength. The antipasti served at Fradusto and C&agrave; di Morandone were made by Da Francesco and Quanto Basta, some of the places recommended in our <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://www.tastebologna.net/blog/map-bologna">foodie map of Bologna</a>.</p>
<p>During the walk between woods, lavender fields and farmhouses, we stopped under the trees to listen to <strong>live music</strong> played by Orchestra Senza Spine, an association of young professional musicians.<br />The main dishes were prepared by 2 of my favourite chefs of Bologna: Mario Ferrara of <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://www.tastebologna.net/blog/scaccomatto-orti">Scaccomatto</a> and Max Poggi.&nbsp;<br />Local wine and beer at every stop made the atmosphere even more relaxed and cheerful.</p>
<p>Some <strong>secret photos</strong> of me and Caterina with Poggi&#8217;s burger (bis and tris) are already part of Taste Bologna&#8217;s history.</div>

<div>To spend a beautiful Sunday with friends, discovering a part of our land <strong>outside the tourist routes</strong>, finding out where food really comes from, tasting simple and delicious dishes served by the hands of the chefs with no regrets (you can pretend that at the end of the day the balance eating + walking = 0).</div>

<div>Savigno is a small town inside Val Samoggia, about 25min from Bologna, between woods and hills full of vineyards. Up there from 1934, Amerigo offer the best products of his land is a vintage style family trattoria created by Alberto Bettini&#8217;s grandparents.<br />You won&#8217;t find any fois gras or caviar there, but only the best local and seasonal products like <strong>mushrooms and truffles</strong> (black and white), river fish like salmerino of Corno alle Scale or deer in a cuisine that celebrate tradition looking forward.<br />&#8203;The location is very warm and cosy and you will be back to 1930&#8242;s with vintage coffee machine and liquor posters on the walls. At the entrance there&#8217;s a small shop to buy some products, I recommend their <strong>liquors</strong> (China China or Marasca) or Saba (cooked grape must).</div>

<div>Agostino Iacobucci is a Neapolitan chef who moved to Bologna in 2008 to bring the <strong>only Michelin star of Bologna city</strong> centre. The restaurant is set in the elegant location of an eighteenth century&#8217;s caff&egrave; chantant, called Teatro Eden, renovated for the occasion. In Iacobucci&#8217;s cuisine you can find his origins by the usage of prime quality ingredients, like Spaghetti of Gragnano or buffalo cheese, that look far from Bologna to innovate the tradition. His savory bab&agrave; is a nice surprise and &#8220;<strong>Naples meets Emilia</strong>&#8221; (tortelli stuffed with neapolitan rag&ugrave;, Parmesan foam, Piennolo&#8217;s tomato coulis) is a dish who talks by itself. <br />Everything dish is a surprise at I Portici and even if 2017 just started, I can tell that I will remember this place for my top year ranking.</div>

<div>&#8203;It&#8217;s not easy to find a <strong>woman chef</strong> with a Michelin star. With his brother Massimo (that will make you drink the best Pignoletto I ever had), Aurora Mazzucchelli is the only one in Emilia Romagna and she keeps her star from 2008 with firmness. The restaurant had been renovated in 2016 and now the style is modern and elegant but you will feel at ease. The combination of <strong>local ingredients</strong> and excellent products generates dishes like their famous Macaroni &#8220;al torchio&#8221;, smoked eel, raw oysters and spinach or the turnip ravioli, goat cheese and balsamic bubbles so Aurora doesn&#8217;t lack of bravery and skills.</div>

<div><span>You arrive in Dozza passing next to farmhouses, <strong>peach orchards</strong> and Albana&#8217;s vineyards, a landscape that reminds of Tuscany countryside, even if it&#8217;s just a few minutes from Via Emilia, the roman street that links Bologna to Rimini. Leave the car just behind the middle age gate and walk into this out of time village. After a few steps you start to recognize the perfect balance between new and old.&nbsp;</span><br /><span>In a typical Medieval village <strong>art</strong> becomes urban landscape and decorates walls, streets and squares, flooding light and colour in every corner.</span></div>

<h2>What to see</h2>
<div>Dozza is an open-air museum, where you can admire more than a hundred works by prestigious names of contemporary art created for <a target="_blank" rel="nofollow" target="_blank" href="/redirect.php?URL=http://www.murodipinto.it/">Biennale del Muro Dipinto</a>, an art event started in 1960 that every 2 years brings street artists like <strong>Ericailcane</strong> and painters from all over the world.</div>
<div>At the same time Dozza is not the classic tourist town with souvenir shops and coaches of tourists. If you are visiting on a weekday or a Sunday, you will certainly find curious visitors, but it&#8217;s still basically a simple village, with a few shops and its citizens, who walk safely between the streets and stop to chat on the benches.<br />But Dozza is not just the city of painted walls. There&#8217;s also a beautiful castle builted in 1250, <a target="_blank" rel="nofollow" href="/redirect.php?URL=http://www.fondazionedozza.it/" target="_blank">Rocca Sforzesca</a>, that you can visit. Kids will love its mysteries, like the <strong>cutting well</strong> and the <strong>prisons</strong>, and foodies will be amazed by the cuisine with vintage chef tools and fireplace. After the visit that takes about 1h what&#8217;s better than a glass of wine?</div>

<div>Rocca basement hosts <a target="_blank" rel="nofollow" target="_blank" href="/redirect.php?URL=http://www.enotecaemiliaromagna.it">Enoteca Regionale</a>, local wine promotion board headquarter, where you can find <strong>more than 800 selected </strong><strong>labels</strong> from all Emilia Romagna. You can find Albana, Sangiovese, Pignoletto wine but also a small selection of <a target="_blank" rel="nofollow" target="_blank" href="/redirect.php?URL=https://www.tastebologna.net/blog/balsamic-vinegar-tradizionale-modena">Aceto Balsamico Tradizionale of Modena</a>&nbsp;and a wine bar for guided tastings.</div>
<h2>Where to eat</h2>
<div>Well, it&#8217;s still a food blog right?! So I know what you want to know. If you&#8217;re looking for an elegant location with view on the hills you can choose Can&egrave;&nbsp;and ask them for truffles and porcini mushrooms in season. If you prefer cozy places who pays lot of care in the selection of ingredients go at <strong>La Scuderia</strong>, just in front of the castle, and try their tagliata with Cervia&#8217;s salt or theri tenderloin with porcini mushrooms.</p>

<h2>How to arrive</h2>
<div><span><strong>By car: </strong>from Bologna take A14&nbsp;to Ancona&nbsp;and&nbsp;exit at Castel San Pietro. Then follow to Imola and after Toscanella turn right.<br />My suggestion is to visit Dozza&nbsp;from spring to early autumn. If you&#8217;d like to spend a perfect&nbsp;daytrip outside Bologna you can visit Ravenna the morning and when you return you can stop in Dozza and spend afternoon and dinner.</span></div>

Bologna wasn&#8217;t a city for beer lovers until a few years ago, but over the last years a lot of interesting microbreweries got born, so it&#8217;s time to dig inside the world of craft beers. These are absolutely my 5 favourite beers produced in the area of Bologna. Check them and cheer together!</div>

<h2>Birra Cerqua</h2>

<div>The first <strong>brewpub</strong> in Bologna where the beer is produced in the same place where it is consumed and it&#8217;s not uncommon to see the brewer curing his creations between orders. Among the different productions I recommend <em>PorQua</em> (porter 6.5%) and <em>Lu.Bo</em>, slightly bitter amber beer (5.6%), which is also the first beer completely produced in the area of Bologna and made with hops grown in territory. Finally, ask for &#8220;corteccia&#8221; (bark), a focaccia made with sourdough and malt remains used to make beer.</p>

<h2>Beltaine</h2>

<div>Beltaine beer takes its name from &#8220;Bell Fires&#8221;, a spring festival of Celtic origins like Granaglione, the most southern town in Bologna&#8217;s province, where it is produced. Andrew, Philip and Mark are the 3 brewers and their intent was to create a beer that would identify their area of &#8203;&#8203;origin, using an underrated fruit, <strong>chestnut</strong>, that until 50s was the food base of rural families. Beers are entirely handmade and produced by high fermentation with a second in bottle fermentation, using selected raw materials. They use two types of chestnuts: smoked (for Double Malt Beer with smoked chestnuts and Juniper) and dried (for Chestnuts and White Beer). All of them are very rich and textured, with flavors of spicies and fruit. They&#8217;re also planning to make a gluten-free beer very soon.</p>

<div>Vecchia Orsa brewery was founded in 2007 by two friends with the aim of promoting a quality beer made by a group of people with <strong>disabilities</strong> guided by a master brewer. The production is completely handmade and prefers manual labor so guys bottle and label the beers. The earthquake that hit Modena area in 2012 has seriously damaged the production site, but also gave the impetus to create a new, larger and secure facility with tasting area and shop, and the <em>Magnitude Blonde</em>, a new beer symbol of the determination to move forward over difficulties. To date they produce 10 different beers including <em>Biolca</em>, the first certified <strong>organic</strong> beer in Emilia, and <em>Utopia</em>, awarded by <a target="_blank" rel="nofollow" href="/redirect.php?URL=http://www.slowfood.it" target="_blank">Slow Food</a> as &#8220;Italian Beer 2015&#8243;.</p>

<div>In 2006 Filippo decided to leave a safe job to follow the adventure of StataleNote. The name is taken from a street, statale nove SS9, which is actually <strong>Via Emilia</strong>, the ancient roman street that connects all the cities in Emilia Romagna and that is just in front of the brewery. A small production of 600hl/year to creare 17(!!!) different types of beers with all-grain process. At their brewpub you can taste all of them, using different temperature and glasses, in combination with a few seasonal dishes. My favourites are their dobblebock <em>J and B</em>, dedicated to Filippo&#8217;s son Jacopo which birth date is printed on the label, and the amber&nbsp;<em>Miss Kartola</em> that in Bologna means kind of cool.</p>

<div>The story of a chemist and an <strong>engineer</strong> who realize their own dream reminds me closely to something&#8230;Birra Bellazzi rises from passion and homemade experiments and then become first a beer-firm and after a few years, thanks to a <strong>crowdfunding</strong> campaign, a real microbrewery. Beers are all completely unfiltered and unpasteurized, making them richer in taste and aroma. Among my favorites <em>My BO</em>, spiced and amber german-inspired mailbock, and <em>Vor</em>, a stout with light licorice aroma.</p>
