Pour over the red wine, then add the borettane onions, juniper berries, cloves, clove of garlic celery and carrot finely cut costs, and to end the aromas.</p>
<p>Close the lid and let marinate in the refrigerator for about 4 hours. When it&#8217;s ready, transfer it into a baking dish with half of the liquid but with all the remaining ingredients (remember to remove the rosemary).</p>

Quando sarà pronto, trasferite il tutto in una teglia da forno con solo metà del liquido ma con tutti il resto degli ingredienti (ricordatevi di togliere il rosmarino).&nbsp;</span><br /><span><br /></span><span>Infornate a 180 gradi per 50 minuti. Assicuratevi che la carne sia perfettamente cotta quindi, fate raffreddare leggermente quindi servite a fette con le cipolle borettane.</span></p>

Quando sarà pronto, fatelo rosolare in padella con un poco di burro, giusto il tempo di farlo insaporire.</span><br /><span><br /></span><span>Cuocete i filetti di fassone 3 minuti circa per parte (se vi piace a media cottura), quindi servite caldo con i porri.</span>

In una pentola che va bene anche per il forno, fate un soffritto con olio e uno spicchio di aglio. Fate rosolare il maiale in maniera omogenea, quindi versate il latte, le mele tagliate a fettine e sbucciate, gli aromi, e il succo e la scorza del limone biologico.</span><br /><span><br /></span><br /><span>Infornate a 180 gradi per 1 ora circa. Verificate che il maiale sia cotto perfettamente all&#8217;interno quindi sfornate, tagliate e servite caldo.</span></p>

<p>The tenderlois is always one of the valuable parts of veal or pork, for example. I combined it with a wonderful sweet and sour sauce and the wonderful peas in a pan made in the classic way.</p>

<p><b>For the sauce:</b><br />1 hard-boiled egg yolk<br />2 anchovies in oil<br />1 tablespoon Dijon mustard<br />3 tablespoons extra virgin olive oil<br />1 teaspoon brown sugar<br />half a tablespoon of balsamic vinegar of Modena<br />salt</p>

Io lo ho abbinato ad una stupenda salsa agrodolce e a dei meravigliosi piselli in padella fatti nel più classico dei modi.</span><br /><span><b><br /></b></span><span><b>Ingredienti per 4 persone:</b></span><br /><span>4 filetti di manzo di fassona piemontese</span><br /><span>320 grammi di piselli finissimi</span><br /><span>aglio, olio, maggiorana fresca</span><br /><span>1 mestolo di brodo vegetale</span><br /><span><b><br /></b></span><span><b>Per la salsa:</b></span><br /><span>1 tuorlo di uovo sodo</span><br /><span>2 acciughe sotto olio</span><br /><span>1 cucchiaio di senape di Digione</span><br /><span>3 cucchiai di olio extravergine di oliva</span><br /><span>1 cucchiaino di zucchero integrale</span><br /><span>mezzo cucchiaio di aceto balsamico di Modena</span><br /><span>sale</span><br /><span><b><br /></b></span><span><b>Preparazione:</b></span><br /><span>Preparate i piselli, facendoli cuocere in una padella dove avrete preparato precedentemente un soffritto. Unite il mestolo di brodo, la maggiorana fresca e cuocete fino a cottura ottimale.</span><br /><span><br /></span><span>Preparate la salsa, mettendo all&#8217;interno di un mixer tutti gli ingredienti necessari, quindi fate riposare.</span><br /><span><br /></span><span>A questo punto, togliete i piselli dalla padella e cuocete i filetti (a seconda del vostro grado di cottura preferito).&nbsp;</span><br /><span><br /></span><span>Impiattate con la salsa alla senape e i piselli.</span></p>
