Sono passati un po’ di mesi dall’ultima volta che ho scritto qui sul mio blog. È stato un periodo intenso: il lavoro da Public House, mi assorbe tantissimo tempo e allo stesso tempo continuo a scrivere e recensire per il blog di Luciano Pignataro. Questo mi porta a viaggiare spesso, incontrare persone nuove, scoprire locali, assaggiare piatti diversi dal solito e lasciarmi sorprendere da sapori che non conoscevo.

Tutto questo, per me, è un bagaglio culturale preziosissimo.

Amo profondamente questa esperienza: poter dedicare il mio giorno libero a esplorare, imparare, osservare. Credo che aggiunga un tocco speciale alla mia figura, sia come influencer sia semplicemente come cuoca curiosa e appassionata.

Oggi, dopo tanto tempo, ho ritrovato delle vecchie foto che amo particolarmente: quelle del mio plumcake ai mirtilli, preparato durante una giornata piovosa proprio come questa. Un dolce soffice, profumato di vaniglia e zeste di limone, ricco di mirtilli – che, insieme ai lamponi, sono tra i miei frutti preferiti.

Io ho una passione grandissima: preparare marmellate e confetture. Infatti non vi nascondo che oltre al mio amato Public House, vorrei tanto aprirmi un piccolo negozio dove poter vendere le mie conserve fatte in casa. Quando la stagione giunge al termine,infatti, preparo una bella scorta per l'inverno, per me è per i miei cari. In questo modo ho sempre tutto il necessario per colazioni genuine e fatte in casa, proprio come piacciono a me. Ma la verità è che la mia fortuna sono i miei amici: perché conoscendo la mia passione, mi regalano sempre tanta frutta. In particolare la mia amica Mimma, che grazie all'amore del padre che ha per la sua terra, ogni tanto bussa alla mia porta sempre con cesti di frutta. Dico frutta, ma spessissimo mi ritrovo anche altro grazie a loro. E io in cambio le do uno dei miei barattoli. Una delle confetture che amo preparare e che non manca mai a casa mia é quella di prugna, che spesso grazie alla mia voglia di sperimentare, l'accompagno con erbe aromantiche o spezie. Questa l'ho preparata con il rosmarino del mio giardino.

La confettura di prugne e ottima per la merenda per la colazione, ma è davvero speciale da accompagnare vicino ha un bel tagliere di formaggi proprio adesso che l'inverno incombe.

Perciò cari amici, fatevi scorta di frutta e io vi aiuterò a trasformarla in fantastiche confetture, per il vostro palato.

Public House, come abbiamo più volte sottolineato, è fondata sui valori della continua ricerca e della creatività priva di alcun limite preposto.

Abbiamo avuto, a volte, il coraggio di unire ingredienti esotici come l’ananas alle migliori carni italiane e alle verdure dei dintorni. La nostra intenzione era quella di collaborare con uno chef audace e creativo che sposasse i nostri stessi intenti. Noto come uno chef giovane e ambizioso, Francesco Natale, è uno di quei professionisti della cucina che interpreta ogni tagliere come un’autentica tavolozza dove si creano legami dapprima inesistenti e si gioca con i colori e le forme oltre che con i semplici sapori.

Una delle caratteristiche che ci ha sempre colpito della sua cucina è che il suo modo di stare al mondo è orientato ad una incessante ricerca ed esplorazione di sapori da comporre e rielaborare.

La sua carriera di chef comincia sul suolo britannico dove cucinava per l’upperclass londinese. La sua crescita professionale avviene, però, qualche anno dopo in Italia e, precisamente, nella capitale. Ha deciso poi di ritornare in zona con una pentola piena di nuovi progetti tra cui una interessante rielaborazione delle eccellenze culinarie dell’ormai nostalgicamente lontano Regno delle Sicilie. Durante i suoi tour alla ricerca di borghi antichi, porti dimenticati e allevamenti di montagna, lo chef, non perde mai occasione per annotare tutte le ispirazioni e le nozioni utili sui taccuini che porta sempre con sé.

Conoscendolo in qualità di amico e cliente oltre che di professionista della cucina, abbiamo deciso di lasciargli carta bianca, ovvero, le chiavi della nostra cucina per un po’.

Mozzapane: Collaborazioni stellate al Public House Burger Gourmet.

Public House è un hamburgeria gourmet in pieno centro a Caserta e adiacente alla Reggia. Alla base del progetto imprenditoriale c’è la costante ricerca culinaria e la voglia di sperimentare, osare e migliorarsi. A questo proposito, Ornella Buzzone, co-founder, chef e blogger, ha intrapreso numerose collaborazioni con chef locali e non.

La precedente collaborazione è stata condotta a quattro mani con lo chef stellato Domenico Iavarone. Questa volta è stato chiesto a Rosanna Marziale, chef executive presso “Le Colonne” a Caserta e Stella Michelin dal 2012, di collaborare per la nuova scelta gourmet disponibile in menù dal 31/05/2016.

Il panino in questione si chiama “Mozzapane”.
