<p align="justify">PROCEDIMENTO</p>
<p align="justify">Tostare le fette di pane sulla griglia o in forno, facendole dorare.</p>
<p align="justify">Disporre le fette calde sui piatti e condirle con un filo d’olio.</p>
<p align="justify">Disporre sulle fette di pane il formaggio<span>&nbsp;spezzettato in due o tre fettine, intervallato dalla salsa al peperoncino.</span></p>
<p align="justify">Completare con un pizzico di origano secco, un filo d’olio e servire subito.</p>

<li>pecorino 50 g</li>
<li>uova 2</li>
<li>latte 1/2 bicchiere</li>
<li>cipolle tritate 2</li>
<li>prezzemolo fresco tritato 2 cucchiai</li>
<li>aglio tritato 1 spicchio</li>
<li>farina 1 cucchiaio</li>
<li>pangrattato 4/5 cucchiai</li>
<li>olio extravergine d&#8217;oliva</li>
<li>sale</li>
<li>pepe</li>

<div align="justify">PROCEDIMENTO</div>

<div align="justify">Tagliare a cubetti il pane da toast e metterlo a bagno nel latte:&nbsp;<b>strizzarlo bene con le mani</b>&nbsp;fino a renderlo una poltiglia e mescolarlo a uova, cipolla, pecorino, prezzemolo, aglio, una presa di sale e una macinata di pepe.</div>
<div align="justify">Amalgamare bene con le mani per ottenere&nbsp;<b>un composto omogeneo</b>: se dovesse risultare troppo appiccicoso unire un po’ di pangrattato.</div>

<li>chicche di patate 800 g</li>
<li>salsa di pomodoro 400 g</li>
<li>pecorino</li>
<li>olio extravergine d’oliva</li>
<li>sale</li>
<li>pepe</li>
</ul>

<p align="justify">PROCEDIMENTO</p>
<p align="justify">Lessare le chicche di patate in abbondante acqua bollente salata, scolarle appena riaffiorano e versarle in una ciotola.</p>
<p align="justify">Scaldare la salsa di pomodoro, aggiungere una presa di sale, una macinata di pepe e due cucchiai di olio a crudo.</p>
<p align="justify">Condire le chicche di patate con il sugo e disporre nei piatti individuali.</p>
<p align="justify">Cospargere con pecorino a scaglie e servire subito.</p>

<div>Per questa ricetta ho utilizzato la <b>ricotta fresca di pecora senza lattosio</b> dell&#8217;<b><a target="_blank" rel="nofollow" href="/redirect.php?URL=https://www.pinnaformaggi.it/" target="_blank">Azienda Pinna</a></b>, fatta esclusivamente con latte di pecore allevate in Sardegna, garanzia di bontà e genuinità.</div>

<div>Per la pasta matta:</div>

<li>farina 0 400 g</li>
<li>acqua 150 ml</li>
<li>olio extravergine d&#8217;oliva 150 ml</li>
<li>sale fino 1 cucchiaino</li>
<li>lievito per dolci 1/2 bustina</li>
</ul>
<div>Per il ripieno:</div>

<ul>
<li>ricotta 250 g</li>
<li>spinaci bolliti e strizzati 450 g</li>
<li>uova 4</li>
<li>parmigiano grattugiato 2 cucchiai</li>
<li>noce moscata</li>
<li>sale</li>

<div>PROCEDIMENTO</div>

<div>Per la pasta: mettere in una ciotola acqua, sale, lievito e aggiungere la farina poco per volta, impastando.</div>
<div>Lavorare sul piano di lavoro fino ad ottenere un impasto elastico ed omogeneo.</div>
<div></div>
<div>Per il ripieno: tagliuzzare gli spinaci in una ciotola, unire ricotta, parmigiano, un pizzico di sale, una bella grattata di noce moscata e un uovo.</div>
<div>Amalgamare bene con una forchetta fino ad ottenere un composto omogeneo.</div>
<div></div>
<div>Stendere metà dell&#8217;impasto su un foglio di carta da forno leggermente infarinato e posizionarlo con un gesto preciso in una teglia rotonda imburrata e infarinata, facendolo aderire bene al fondo e ai bordi.</div>
<div>Versarvi sopra il ripieno, stendendolo su tutta la superficie, livellandolo bene e schiacciando leggermente.</div>
<div>Ricavare tre incavi nel ripieno aiutandosi con un cucchiaio: rompere in ogni incavo un uovo, facendo attenzione a lasciare integro il tuorlo.</div>
<div>Stendere l&#8217;altra metà dell&#8217;impasto su un foglio di carta da forno leggermente infarinata e capovolgerlo sulla torta aiutandosi proprio con il foglio di carta da forno per posizionarlo bene a ricoprire il tutto.</div>
<div>Chiudere bene premendo bene i bordi con le dita, poi con una forchetta.</div>
<div>Cuocere in forno ventilato preriscaldato a 180°C per circa 45/50 minuti.</div>
<div>Sfornare, far intiepidire e servire tagliata a fette, avendo cura di tagliare mostrando la parte di fetta con l&#8217;uovo.</div>
<div>Buona anche fredda, per un buffet o un pic-nic.</div>
