<p>A risotto in honor autumn.</p>
<p><b>Ingredients for 4 people</b><br />320 grams of Carnaroli rice<br />1 tablespoon and a half full of frozen wild mushrooms but high quality<br />1 zucchini slice not very big<br />1 leek<br />2 tablespoons pumpkin seeds<br />1.5 liters of vegetable broth<br />half a glass of white wine Arneis<br />1 shallot<br />10 grams of butter<br />2 tablespoons grated Parmesan cheese<br />salt, black pepper<br />extra virgin olive oil</p>
<p><b>Method</b><br />Cleaned and the leek and let blanch in boiling water for about 10 minutes.</p>
<p>Cut the pumpkin into small pieces.</p>
<p>In a saucepan low and wide, do a fried with oil and shallots. Toast the rice then blended well with the white wine and let evaporate the alcohol. Add the pumpkin, cut into cubes and leek. Add the broth and cook for about 10 minutes. Now add the mushrooms and continue cooking for another 10 minutes. When the rice is cooked, turn off the heat, then stir in butter and Parmesan cheese. Serve hot with pumpkin seeds and a little parsley.</p>
<p><!-- 3monete_footer-1_AdSense4_728x90_as --><br /><ins></ins> <a target="_blank" rel="nofollow" name='more'></a><span><br /></span><span>Un risotto in onore all&#8217;autunno.</span><br /><span><b><br /></b></span><span><b>Ingredienti per 4 persone</b></span><br /><span>320 grammi di riso carnaroli</span><br /><span>1 cucchiaio e mezzo colmo di funghi porcini surgelati ma di ottima qualità</span><br /><span>1 fetta di zucca non molto grande</span><br /><span>1 porro</span><br /><span>2 cucchiai di semi di zucca</span><br /><span>1,5 litri di brodo vegetale</span><br /><span>mezzo bicchiere di vino bianco Arneis</span><br /><span>1 scalogno</span><br /><span>10 grammi di burro</span><br /><span>2 cucchiai di parmigiano grattugiato</span><br /><span>sale, pepe nero</span><br /><span>olio extravergine di oliva</span><br /><span><br /></span><span><b>Procedimento</b></span><br /><span>Pulite e mondate il porro e fatelo sbollentare in acqua bollente per circa 10 minuti.</span><br /><span><br /></span><span>Tagliate la zucca a pezzi piccoli.</span><br /><span><br /></span><span>In un pentolino basso e largo, fate un soffritto con olio e scalogno. Tostate bene il riso poi sfumate con il vino bianco e fate evaporare completamente l&#8217;alcool. Aggiungete la zucca tagliata a cubetti e il porro. Unite il brodo e cuocete per circa 10 minuti. Aggiungete adesso i funghi e continuate la cottura per altri 10 minuti. Quando il riso sarà cotto, &nbsp;spegnete il fuoco, quindi mantecate con burro e parmigiano. Servite caldo con i semi di zucca e un poco di prezzemolo.</span></p>

<div>Passing through the stalls of the market of a country nearby, I came across a nice bench for a manufacturer of artisan cheeses and noticed a creamy but fairly consistent goat cheese wrapped in fig leaves. Its very peculiar smell convinced me to buy it and take it home where I prepared a small appetizer that has cheered my day. Goat cheese, chestnut honey (the right bitter sweet that goes counter to the strong flavor of the cheese), walnuts and grape freshness to lighten the whole. If you have time, try it.</div>

<p>Passando tra i banchi del mercato di un paese qui vicino, mi sono imbattuto in un bel banco di un produttore di formaggi artigianali e ho notato un cremoso ma abbastanza consistente formaggio di capra avvolto nelle foglie di fico. Il suo odore molto particolare mi ha convinto ad acquistarlo e a portarlo a casa dove ho preparato un piccolo antipastino che mi ha allietato la giornata. Caprino, miele di castagno (il giusto dolce amaro che va a contrastare il sapore forte del formaggio), noci e la freschezza dell&#8217;uva per allegerire il tutto. Se avete occasione, provatelo.

<p><span>Mondate, lavate e pulite tutte le verdure. Trasferite il tutto in una ciotola abbastanza capiente, quindi aggiungete anche le olive, i germogli di soia e i semi di lino. Condite con l&#8217;olio, il sale e il succo del limone, lo zenzero tritato e servite dopo circa 10 minuti.</span></p>
