<p><b>Ingredienti per 4 persone:</b><br />- 8 melanzane viola piccole<br />- 100 gr. di caciocavallo stagionato<br />- 8 spicchi d&#8217;aglio<br />- 1 mazzetto di menta fresca<br />- 700 gr. passata di pomodoro<br />- 1\2 bicchiere olio d&#8217;oliva<br />- 1\2 cucchiaino di peperoncino macinato</p>
<p><b>Procedimento:</b><br />- lavare e togliere il picciolo alle melanzane<br />- con un coltello affilato fare dei tagli piccoli e profondi sulle melanzane<br />- inserire nei tagli , spingendo con il pollice, dei piccoli pezzi di formaggio, aglio e foglie di menta<br />- in una larga padella versare un pò di olio d&#8217;oliva e soffriggere, brevemente, le melanzane da tutti i lati<br />- in una pentola versare 5 cucchiai di olio d&#8217;oliva e soffriggere leggermente gli spicchi d&#8217;aglio tritati finemente e un pizzico di peperoncino macinato<br />- aggiungere la passata di pomodoro e aggiustare di sale<br />- cuocere a fuoco bassissimo per 5 minuti<br />- aggiungere alsugo 4 cucchiai d&#8217;acqua e dopo inserire&nbsp; le melanzanine al sugo e cuocere, con il coperchio, per mezz&#8217;ora a fuoco bassissimo<br />- servire calde o fredde e con il sugo condire la pasta</p>
