<p><span>All&#8217;estero, soprattutto in Inghilterra, il garlic bread si trova come antipasto, e credono sia una ricetta italiana. Io l&#8217;ho mangiato per la prima volta proprio con un mio compagno di casa inglese (Sam) quando ero all&#8217;Università&#8230;</span><br /><span>Quale che sia l&#8217;origine è uno stuzzichino buonissimo e facile da preparare come antipasto o aperitivo.&nbsp;</span><br /><span>Si tratta di un pane a cui fare delle incisioni, dentro le quali spennellare una emulsione di olio, burro,&nbsp; aglio e altre spezie a piacere, inserire dei pezzetti di formaggio filante, infornare 10 minuti e servire caldo profumato e fragrante in tavola! successo assicurato!</span><br /><span><br /></span>
<div><span>INGREDIENTI per 500 grammi di pane (3-4 persone):&nbsp;</span></div>
<ul>
<li><span>1 bozza di pane tonda o 1 filone o baguette o fruste</span></li>
<li><span>3 cucchiai di olio extravergine d’oliva</span></li>
<li><span>20 grammi di burro</span></li>
<li><span>2 spicchi di aglio tritati</span></li>
<li><span>un pizzico di sale</span></li>
<li><span>&nbsp;prezzemolo tritato</span></li>
<li><span>100 grammi di formaggio filante a dadini&nbsp;</span></li>
<li><span>a piacere spezie (peperoncino, origano , rosmarino)</span></li>
</ul>
<div><span>Praticare dei tagli longitudinali e trasversali a scacchiera al pane dalla superficie a metà della sua altezza, senza arrivare al fondo.&nbsp;</span></div>
<div><span>Emulsionare l&#8217;olio con il burro fuso, l&#8217;aglio tritato finemente, un pizzico di sale, il prezzemolo e le spezie. Con un pennello spennellare nell&#8217;interno delle incisioni il pane abbondantemente, ed anche in superficie. Inserire nei tagli i pezzetti di formaggio a dadini o grattugiato.&nbsp;</span></div>
<div><span>Infornare per 10 minuti a 180° e servire in tavola caldo.&nbsp;</span></div>
<div><span>Se avete una cena preparatelo in anticipo e infornatelo subito prima di servirlo.&nbsp;

<p><span>Ottimi crackers, arricchiti da semi di lino, di sesamo, semi di girasole e semi di zucca da sgranocchiare al posto del pane: si preparano dopo solo 1 ora di lievitazione.&nbsp;</span><br /><span><br /></span>
<div><span>INGREDIENTI per una scatola di crackers:&nbsp;</span></div>

<ul>
<li><span>50 grammi di pasta madre</span></li>
<li><span>100 grammi di farina di segale&nbsp;</span></li>
<li><span>80 grammi di farina integrale&nbsp;</span></li>
<li><span>70 grammi di farina 0&nbsp;</span></li>
<li><span>125 ml di acqua&nbsp;</span></li>
<li><span>6 grammi di acqua&nbsp;</span></li>
<li><span>1/2 cucchiaino di malto d&#8217;orzo o di miele</span></li>
<li><span>40 grammi di olio&nbsp;</span></li>
<li><span>50 grammi di semi misti</span></li>
</ul>
<div><span>Sciogliere il lievito nell&#8217;acqua insieme al miele. Aggiungere le farine, i semi e l&#8217;olio e impastare. Riporre in una ciotola unta di olio, coprire con la pellicola e lasciare riposare per 1 ora.&nbsp;</span></div>
<div><span>Riprendere l&#8217;impasto, stenderlo su un piano infarinato e ritagliare i testi con la rotella tagliapasta.&nbsp;</span></div>
<div><span>Infornare nel forno preriscaldato a 200° per circa&nbsp; 15 minuti, controllando che non si brucino.&nbsp;</span></div>

<li><span>500 grammi di zucchine</span></li>
<li><span>un uovo</span></li>
<li><span>mezzo bicchiere di latte</span></li>
<li><span>150 grammi di farina</span></li>
<li><span>100 grammi di prosciutto cotto</span></li>
<li><span>200 grammi di fontina (o altro formaggio tipo asiago, emmental o scamorza)</span></li>
<li><span>60 grammi di parmigiano&nbsp;grattugiato</span></li>
<li><span>un cucchiaino di lievito istantaneo per torte salate</span></li>
<li><span>sale</span></li>

<div><span><strong>&nbsp;</strong>Lavare le  zucchine, e grattugiarle, salarle, quindi aggiungere il parmigiano grattugiato, l’uovo, il latte, il  prosciutto cotto ed il formaggio a piccoli pezzi.&nbsp;</span></div>
<div><span>Mescolate ed aggiungete anche il lievito istantaneo per torte salate e la  farina.&nbsp;&nbsp;</span></div>
<div><span>L’impasto avrà una consistenza molto morbida e cremosa, se troppo  molle aggiungete poca altra farina perché dipende da quanta acqua  rilasciano le zucchine, ma non induritelo troppo.</span></div>
<div><span>&nbsp;Preriscaldate il forno  a 200°.&nbsp;</span></div>
<div><span>Ungere una teglia o uno stampo da forno versarvi dentro il composto, livellarlo con un cucchiaio,&nbsp; e&nbsp; cuocere per&nbsp;15-20 minuti, posizionandola in basso nel forno e  coprendola con un foglio di carta stagnola se scurisce troppo.&nbsp;</span></div>

<li><span>600 grammi di carne macinata</span></li>
<li><span>50 grammi di parmigiano</span></li>
<li><span>500 grammi di patate</span></li>
<li><span>Sale e pepe</span></li>
<li><span>6 sottilette</span></li>
<li><span>oilo</span></li>
<li><span>100 grammi di provola dolce</span></li>
<li><span>150 grammi di pancetta affumicata o di prosciutto cotto.</span></li>
<li><span>2 uova</span></li>
<li><span>pangrattato</span></li>
</ul>

<div><span>Bollire o cuocere al vapore le patate, quindi schiacciarle,, salarle, peparle e condirle col parmigiano.&nbsp; Aspettare che si raffreddino.</span></div>
<div><span>Stendere su un foglio di carta forno la carne macinata in un rettangolo, salare e cospargere con metà del grana, quindi ricoprirlo con le patate schiacciate, spruzzare con poco olio, quindi ricoprire con la pancetta, pezzetti di provola e sottilette.&nbsp; Arrotolare il rotolo aiutandosi con la carta forno e riporlo in freezer per una mezz’ora perché acquisti consistenza in modo da poterlo affettare senza romperlo. </span></div>
<div><span>Affettarlo, e passare le fette nel pangrattato, poi nelle uova sbattute e poi nuovamente nel pangrattato. </span></div>
<div><span>Friggerle in olio bollente o infornarle con un filo di olio a 200 gradi ventilato per 15 minuti.&nbsp;</span></div>

<li><span>3 patate grandi</span></li>
<li><span>60 grammi tra Parmigiano e pecorino grattugiati</span></li>
<li><span>Aglio in polvere</span></li>
<li><span>Sale pepe e olio</span></li>
<li><span>Pangrattato</span></li>
<li><span>100 grammi di asiago o montasio</span></li>
<li><span>1 limone</span></li>
<li><span>100 ml di latte</span></li>

<div><span>Pulire i carciofi eliminandone la punta, le foglie esterne e i gambi, quindi tagliarli in 4 quarti e tuffarli in acqua con succo di limone. </span></div>
<div><span>Pelare le patate e tagliarle a fettine. </span></div>
<div><span>Ungere di olio una pirofila, quindi fare uno strato di carciofi e patate, salare, pepare e cospargere con aglio, un filo di olio, pangrattato, pecorino e parmigiano e qualche dadino di formaggio, un altro strato di carciofi e di patate, quindi pangrattato e pecorino e parmigiano, un filo di olio sale e pepe. Bagnare con 100 ml di latte, quindi infornare a 220 gradi per 45 minuti, o con aria ventilata&nbsp; a 200 gradi per 35 minuti o nel microonde combinato a 200 gradi/900W.&nbsp;</span></div>

<div><span>Le classiche fette biscottate all&#8217;orzo, si preparano con la pasta madre, rinfrescata o esubero di un paio di giorni al massimo, quindi si impasta una parte dell&#8217;impasto con l&#8217;orzo e poi si arrotolano i 2 impasti. Si infornano, poi si affettano e si tostano le fette. Pronte per essere gustate con un velo di marmellata o di nutella. Se ben tostate e lasciate asciugare perfettamente, si conservano croccanti a lungo ben chiuse in scatole di latta. <div><span>INGREDIENTI per 40 fette biscottate:&nbsp;</span></div>

<li><span>100 grammi di farina integrale&nbsp;</span></li>
<li><span>300 grammi di farina tipo 0&nbsp;</span></li>
<li><span>150 grammi di esubero di pasta madre oppure 100 g di lievito rinfrescato&nbsp;</span></li>
<li><span>40 grammi di miele di castagno (o di acacia)</span></li>
<li><span>170 grammi di acqua</span></li>
<li><span>1 pizzico di sale</span></li>
<li><span>30 grami di olio evo delicato (oppure olio di semi di mais)</span></li>
<li><span>9 grammi di orzo solubile in polvere</span></li>
</ul>

<div><span>Sciogliere la pasta madre nell&#8217;acqua insieme al miele, aggiungere la farina e impastare, aggiungere l&#8217;olio e il sale e impastare ancora per almeno 10 minuti.&nbsp;</span></div>
<div><span>Staccare un terzo dell&#8217;impasto ed aggiungerci l&#8217;orzo in polvere. Riporre i 2 impasti in una ciotola, coprirli e lasciarli lievitare al caldo per 1 ora.&nbsp;</span></div>
<div><span>Riprendere gli impasti, e fare alcuni giri di pieghe, quindi rimetterli a lievitare per 2 ore.&nbsp;</span></div>
<div><span>Stendere col mattarello su un piano infarinato i 2 impasti in 2 rettangoli. Porre l&#8217;impasto scuro sopra quello chiaro, quindi avvolgere stretto l&#8217;mpasto a formare un cilindro.&nbsp;</span></div>
<div><span>Dividere il cilindro in 2 pezzi. e riporli in 2 stampi per plumcake rivestiti da carta forno.&nbsp;</span></div>
<div><span>Coprirli con un canovaccio e lasciarli lievitare al caldo fino a che il cilindro non arrivi a 1 cm dal bordo dello stampo.&nbsp;</span></div>
<div><span>Preriscaldare il forno a 200 gradi, quindi infornare i plumcake per 30-40 minuti fino a che saranno dorati.&nbsp;</span></div>
<div><span>Lasciare raffreddare i plumcake, quindi affettarli a fette spesse 1 cm.&nbsp;</span></div>
<div><span>Disporre le fette sulla leccarda rivestita di carta forno e tostare le fette nel forno a 180° per 30 minuti girandole dopo i primi 15 minuti.&nbsp; Abbassare la temperatura a 150 gradi e proseguire la tostatura per altri 30 minuti lasciando lo sportello del forno aperto interponendo un cucchiaio alla chiusura.&nbsp;</span></div>
<div><span>Spegnere il forno e lasciare le fette ad asciugare dentro per altri 30 minuti, quindi una volta fredde riporre le fette in scatole di latta.&nbsp;</span></div>

<li><span>4 carciofi&nbsp;</span></li>
<li><span>sale, olio e pepe nero&nbsp;</span></li>
<li><span>1 scamorza o 2 mozzarelle</span></li>
<li><span>mortadella</span></li>
<li><span>1 limone</span></li>
<li><span>300 grammi di carne macinata&nbsp;</span></li>
<li><span>100 grammi di prosciutto cotto o di mortadella tritata</span></li>
<li><span>2 uova</span></li>
<li><span>parmigiano&nbsp;</span></li>
<li><span>prezzemolo</span></li>
<li><span>pangrattato</span></li>
</ul>
<div><span>Lavare i carciofi, tagliare il gambo e le punte, eliminare le foglie esterne, dividerli in quarti e metterli&nbsp; in acqua e limone.&nbsp; Cuocerli a vapore in pentola a pressione per 5 minuti oppure lessarli in acqua salata.&nbsp;</span></div>
<p><span>Mescolare la carne con le uova, il parmigiano, il formaggio a dadini, il prosciutto tritato, il prezzemolo tritato, sale e pepe.&nbsp;</span>
<div><span>Ungere di olio una teglia, coprire con uno strato di carciofi,&nbsp; ricoprire con il composto di carne e formaggio, spolverizzare con pangrattato e infornare a 200 gradi per 30 minuti.&nbsp;</span></div>
<div><span>Ottimo sia caldo che freddo.&nbsp;</span></div>

<li><span>400 grammi di salsiccia o di cevapcici</span></li>
<li><span>100 grammi di formaggio tipo provola</span></li>
<li><span>50 grammi di gorgonzola</span></li>
<li><span>3 uova</span></li>
<li><span>40 grammi di parmigiano&nbsp;</span></li>
<li><span>50 ml di vino rosso</span></li>
<li><span>50 ml di panna d cucina</span></li>
<li><span>30 grammi di burro</span></li>
<li><span>pangrattato</span></li>
<li><span>olio, sale, pepe e noce moscata</span></li>
</ul>
<div><span>Cuocere la zucca a dadini in un bicchiere di acqua con un pizzico di sale, quando l&#8217;acqua sarà evaporata e la zucca sarà morbida, frullarla e mescolarla con il parmigiano, le uova, sale, pepe, noce moscata e la panna.&nbsp;</span></div>
<div><span>Lavare le foglie di radicchio, tagliarle a listarelle, quindi rosolarlo nell&#8217;olio, salare, aggiungere la salsiccia sbriciolata. bagnare col vino e lasciarlo evaporare.&nbsp; Aggiungere il composto di zucca e amalgamare tutto.&nbsp;</span></div>
<div><span>Imburrare gli stampi, cospargerli di pangrattato, quindi versare un pò di composto negli stampi, mettere al centro qualche dadino di formaggio e 1 cucchiaino di gorgonzola, e ricoprire col composto fino all&#8217;orlo. Cospargere di pangrattato, e infornare a a 180 ° per 30 minuti.&nbsp;</span></div>

<li><span>500 grammi di farina per pizza&nbsp; o integrale</span></li>
<li><span>100 grammi di semola rimacinata di grano duro&nbsp;</span></li>
<li><span>390 grammi di acqua</span></li>
<li><span>150 grammi di pasta madre rinfrescata</span></li>
<li><span>3 grammi di malto d&#8217;orzo&nbsp;</span></li>
<li><span>12 grammi di sale</span></li>
<li><span>15 grammi di olio&nbsp;</span></li>
</ul>
<p>
<div><span>Lasciare in autolisi per 40 minuti in una coppa, le farine con 330 ml di acqua,, poi aggiungere la pasta madre a pezzi, 60 ml di acqua, il malto e il sale e impastare, aggiungere l&#8217;olio e impastare ancora. Fare una palla, coprirla a campana con una ciotola e lasciarla riposare per 20 minuti.&nbsp;</span></div>
<div><span>Riprendere l&#8217;impasto e fare qualche giro di pieghe a portafoglio, quindi pirlarlo e lasciarlo riposare 40 minuti.&nbsp;</span></div>
<div><span>Riprenderlo e rifare delle pieghe, quindi lasciarlo riposare ancora 40 minuti, rifare le pieghe e infine pirlare l&#8217;impasto e metterlo a lievitare al caldo in una ciotola unta di olio fino al raddoppio.&nbsp;</span></div>
<div><span>Prendere l&#8217;impasto dividerlo in pagnottine, spennellare la superficie di acqua quindi infornare i panini a 230° per 15 minuti, poi abbassare a 210 ° per 20 minuti, ed infine a 200° per 10 minuti con il forno aperto a spiffero interponendo un cucchiaio nella porta.&nbsp;</span></div>

<div><span>INGREDIENTI per 1 focaccia o per 8-10 focaccine:&nbsp;</span></div>
<div><span><br /></span></div>
<ul>
<li><span>90 grammi di pasta madre non rinfrescata o 60 di licoli o 10 grammi di lievito di birra)</span></li>
<li><span>220 ml di latte (240 ml se lievito di birra)</span></li>
<li><span>25 ml di olio extravergine d’oliva</span></li>
<li><span>1 cucchiaino di malto d&#8217;orzo</span></li>
<li><span>350 grammi farina 0 (380 grammi in caso di licoli o 420 in caso di lievito di birra)</span></li>
<li><span>1 cucchiaio raso di sale</span></li>
<li><span>olio ed acqua per spennellare</span></li>
</ul>
<div><span><br /></span></div>
<div><span>Sciogliere nel latte tiepido il lievito e il malto. Aggiungere la farina, il sale e l&#8217;olio, ed impastare fino ad avere una massa morbida. Se fosse appiccicosa aggiungere farina quanto basta.&nbsp;</span></div>
<div><span>Mettere l&#8217;impasto a lievitare in una ciotola unta id olio, al caldo fino al raddoppio.</span></div>
<div><span>Stendere l&#8217;impasto con le mani ad uno spessore di circa 1 cm in un unico disco per una focaccia grande o ritagliarlo in dischi di 10 cm di diametro per le focaccine. Lasciare lievitare ancora per un paio di ore.&nbsp;</span></div>
<div><span>Schiacciare con le dita in più punti le focacce, e spennellarle con una emulsione di acqua e olio, salare e ricoprire di spezie a piacere.&nbsp;</span></div>
<div><span>Infornare a 180° per 15-20 minuti.&nbsp;&nbsp;</span></div>

Sei pugliese, vivi a Pordenone, ed è ancora gennaio&#8230;.&nbsp;</span><br /><span>Ti prepari un bel risotto ai frutti di mare, lo accompagni ad un bicchiere di vino bianco freddo e ti racconti che la tua vita è comunque una gran figata e che tu il sole e il mare li porti sempre dentro al cuore ovunque tu sia! Coraggio! Prepariamolo insieme:&nbsp;</span><br /><span><br /></span>
<div><span>INGREDIENTI per 6 persone:&nbsp;</span></div>

<ul>
<li><span>400 grammi di riso carnaroli</span></li>
<li><span>misto per soffritto con cipolla carota e sedano tritati&nbsp;</span></li>
<li><span>1 calamaro grande da circa 500 grammi&nbsp;</span></li>
<li><span>1 kg di cozze</span></li>
<li><span>1 cipolla piccola</span></li>
<li><span>Brodo di pesce</span></li>
<li><span>250 grammi di gamberi</span></li>
<li><span>200 grammi di filetto di coda di rospo&nbsp;</span></li>
<li><span>2 pomodori da sugo o 2 cucchiai di concentrato di pomodoro</span></li>
<li><span>1 spicchio di Aglio</span></li>
<li><span>Prezzemolo</span></li>
<li><span>Vino bianco</span></li>
<li><span>olio Sale pepe e peperoncino</span></li>
</ul>

<div><span>Innanzitutto pulire bene con la spugna di acciaio le cozz eliminandone il filo, pulire i gamberi eliminando testa e guscio,&nbsp; tagliare a pezzi il filetto di coda di rsospo, pulire il calamro eliminando la penna, e la testa con la sacca di inchiostro e tagliandolo ad anellini. </span></div>
<div><span>Mettere le cozze in padella con poco olio, l’aglio a pezzi&nbsp; e il prezzemolo, chiudere la pentola e lasciare sul fuoco 4 minuti, il tempo che si aprano i gusci. </span></div>
<div><span>Sgusciare le cozze (volendo se ne può lasciare qualcuna decorativa col guscio, ma io non l ‘ho fatto), e metterle da parte, e filtrare il loro bordo di cottura. </span></div>
<div><span>Soffriggere nell&#8217;olio il battuto misto di carote sedano e cipolla, e soffriggervi il calamaro ad anelli, insieme al filetto di coda di rospo, bagnare col vino bianco, e portare a cottura in circa 10 minuti, aggiustando di sale e pepe, e aggiungere gli ultimi 3 minuti i gamberi. </span></div>
<div><span>Soffriggere la cipolla con del peperoncino, se piace, e tostarvi il riso, quindi bagnare col del vino bianco, e quando sarà evaporato aggiungere&nbsp; del brodo di pesce, più il liquido di cottura delle cozze e portare a cottura il riso, aggiungendo brodo quanto basta. A metà cottura agiungere il concentrato di pomdoro o i pomodori a pezzi, e quando sarà al dente aggiungere i calamari coi gamberi, ed infine le cozze.&nbsp; Terminare con del prezzemolo tritato e una macinata di pepe o di peperoncino.&nbsp;</span></div>

<div><span>Rosolare in poco olio la cipolla tritata, aggiungere le patate tagliate a fettine, quindi versare il brodo, aggiungere la pasta, chiudere la pentola a livello di pressione 1 e impostare il timer a 10 minuti dopo il fischio. Riaprire la pentola, aggiustare di sale, impiattare la pasta e condirla con prezzemolo e scaglie di parmigiano.&nbsp;</span></div>

<li><span>1 fetta spessa di Gruyere (sui 250 grammi)</span></li>
<li><span>200 grammi di prosciutto cotto</span></li>
<li><span>200 ml di panna fresca o do panna&nbsp; acida o di philadelphia</span></li>
<li><span>1-2 cucchiaini di senape all&#8217;Ancienne</span></li>
<li><span>1 bicchiere di vino bianco&nbsp;</span></li>
<li><span>olio o burro</span></li>
<li><span>sale e pepe</span></li>
</ul>
<p><span>Stendere su ogni fettina di carne 1 fetta di prosciutto e un cubetto di groviera; arrotolare l’involtino intorno al formaggio, quindi sigillarlo&nbsp; con 2 stuzzicadenti.</span>

<div><span>Rosolare gli involtini nell’olio o nel&nbsp; burro, salare e pepare, bagnare col vino e una volta evaporato, versare la panna e la senape, lasciare sobollire pochi minuti, e poi spegnere e tenere al caldo gli involtini nella padella coperta col coperchio fino al momento di servirli in tavola.&nbsp;</span></div>

<div><span><span>Mettere in ammollo l&#8217;uvetta per 4 o 5 ore, poi strizzarla e metterla ad asciugare sulla leccarda del forno tra due fogli di carta assorbente, quindi lasciarla asciugare fino al giorno dopo, avendo l&#8217;accortezza di ripesarla. Mettere le gocce di cioccolato in freezer&nbsp; fino al giorno dopo.&nbsp;</span></span></div>
<div><span><span>Mettere nella planetaria la pasta madre &nbsp;con 55 grammi di acqua, lo zucchero, la farina e tutti i tuorli e lasciate lavorare la planetaria per circa 15 minuti alla minima velocità.&nbsp;</span><br /><span>L&#8217;impasto, dapprima liquido, diventerà grumoso, e poi pian piano si incorderà. Quando sarà omogeneo, aggiungere i 25 ml di acqua rimasti in 2 riprese, e infine il burro in 3 riprese. Fare girare l&#8217;impastatrice a velocità media, e se l&#8217;impasto sarà liscio, omogeneo, ben incordato, tutto intorno al gancio, allora sarà pronto.&nbsp;</span></span></div>
<div><span><span>Riporre l&#8217;impasto nella ciotola graduata (oppure metterne un piccolo pezzo in un bicchiere come spia di lievitazione), coprire con la pellicola, e riporlo a 26 &nbsp;gradi in cella di lievitazione fino a che non sarà triplicato.&nbsp;</span></span></div>
<div><span><span>Il giorno successivo, mettere l&#8217;impasto triplicato in frigo per 30 minuti, e nel frattempo pesare tutti gli ingredienti necessari per il secondo impasto. Tagliare a dadini la frutta candita e disidratata.</span></span></div>
<div><span><span>
<div><span>Inserire nella planetaria l&#8217;impasto insieme alla farina e riportare in corda, facendolo lavorare &nbsp;per circa 20 minuti a velocità 2, Se è ben incordato aggiungere tutti gli altri ingredienti insieme: lo zucchero, il sale, il burro a pomata, i tuorli e i semi della bacca di vaniglia. Impastare a velocità 2 per 15 minuti.&nbsp;</span></div>
<div><span>Aggiungere il cioccolato l&#8217;uvetta e i fichi secchi tagliati a pezzetti.&nbsp;</span></div>
<p></span></span></div>
<div><span><span><span>Coprire con la pellicola la ciotola, e riporre l&#8217;impasto per 1 ora a riposare in cella di lievitazione.&nbsp;</span><br /><span>Ribaltare l&#8217;impasto sul piano di lavoro (io uso o un foglio di silicone o un tagliere di resina, non usate il legno, in alternativa marmo o acciaio.) e lasciarlo puntare all&#8217;aria per 15 minuti.&nbsp;</span></span></span></div>
<div><span>
<div><span><span>Dividere l&#8217;impasto nelle pezzature desiderate pesandolo. Pesare sempre 10% in più rispetto alla misura del pirottino, quindi 1100 grammi per lo stampo da 1 Kg o 550 per quello da 500 grammi.&nbsp;</span></span></div>
<div><span><span>Pirlare i panetti con le mani imburrate o con un tarocco, arrotondandoli bene. Quindi lasciare puntare ancora 15 minuti.&nbsp;</span></span></div>
<div><span><span>Poi pirlare di nuovo e riporre nei pirottini. Coprirli con la pellicola e riporli in cella di lievitazione a 27 gradi fino a che l&#8217;impasto sarà a 2 dita dal bordo del pirottino.</span></span></div>
<div><span><span>
<div><span>Scoprire i pirottini e &nbsp;riporli in frigo per 20 minuti, nel frattempo preriscaldare il forno a 165 gradi.&nbsp;</span></div>
<div><span>Riprendere i panettoni, e con una lametta incidere a croce ,la superficie e riporvi al centro una noce di burro.&nbsp;</span></div>
<div><span>Se ve la sentite procedete alla scarpatura, staccando i 4 lembi creati con l&#8217;incisione a croce e riponendo sotto ognuno una fettina di burro.</span></div>
<div><span>
<div><span>Infornare i pirottini nella parte più bassa del forno per circa 50 minuti. Consiglio di controllare la temperatura con il termometro dopo 40 minuti circa, il panettone sarà pronto quando la temperatura al cuore sarà di 94°.&nbsp;</span></div>
<div>
<div><span><span>Sfornare e rapidamente infilzare la base con gli appositi ferri o con i ferri da lana, incidendo prima i pirottini nel punto di ingresso dei ferri, e capovolgerli per un paio di ore in modo che la cupola non crolli.&nbsp;</span></span></div>
<div><span><span>Rimuovere i ferri e lasciare il panettone &nbsp;ad asciugare per minimo 12 ore.&nbsp;</span></span></div>
<div><span><span>Riporlo in buste di polipropilene, nebulizzate all&#8217;interno con alcool 95 °.&nbsp;</span></span></div>

<p><span>Un primo piatto che è quasi un piatto unico a base di riso condito con formaggio, carne macinata&nbsp; zucchine e prosciutto, ripassato al forno per far fondere il formaggio e gratinare il timballo. Facile e gustoso!</span>

<div><span>INGREDIENTI per 6-8 persone:&nbsp;</span></div>

<ul>
<li><span>4 zucchine grandi</span></li>
<li><span>200 g formaggio (io groviera)</span></li>
<li><span>300 grammi di riso&nbsp;</span></li>
<li><span>Parmigiano</span></li>
<li><span>Salsa di pomodoro 200 ml</span></li>
<li><span>500 grammi di carne macinata</span></li>
<li><span>250 grammi di&nbsp; prosciutto cotto</span></li>
<li><span>1 spicchio di aglio&nbsp;</span></li>
<li><span>2uova</span></li>
<li><span>pangrattato</span></li>
<li><span>1/2 bicchiere di vino bianco</span></li>
<li><span>olio&nbsp;</span></li>
<li><span>sale e e pepe</span></li>
</ul>
<p><span>Lavare, spuntare e tritare le zucchine, quindi rosolarle nell&#8217;olio insieme allo spicchio di aglio, salarle e peparle e portarle a cottura.&nbsp;</span></div>
<div><span>Rosolare la carne nell&#8217;olio, salare e pepare, bagnarla col vino bianco e una volta evaporato versare la salsa e cuocere per una decina di minuti.&nbsp;</span></div>
<div><span>Lessare il riso in acqua bollente salata, poi scolarlo al dente, e bagnarlo con acqua fredda per fermarne la cottura.&nbsp;</span></div>
<div><span>Mescolare il riso con le zucchine e con la carne macinata e il parmigiano.&nbsp;</span></div>
<div><span>Disporre metà del riso in una pirofila unta&nbsp; di olio o imburrata, disporre al centro del prosciutto cotto e il formaggio a dadini, ricoprire con il riso rimasto, livellare bene con un cucchiaio. Cospargere di pangrattato. Sbattere le uova, salarle e versarle sopra il timballo. Infornare a 180 gradi per 30 minuti.&nbsp;</span></div>
