<div><i><span>Si tratta di un pesto con una base di patate che conferirà al piatto l&#8217;elemento legante e nappante alla quale ho aggiunti carciofi freschi e porcini secchi, il tutto arricchito da una manciata, generosa, di gherigli di noci che tanto bene fanno al nostro organismo.&nbsp;</span></i></div>

<p><b>Ingredienti per 4 persone:</b><br />- 400 gr. di tagliatelle di grano duro<br />- 3 carciofi<br />- 20 gr. funghi porcini secchi&nbsp;<a target="_blank" rel="nofollow" href="/redirect.php?URL=http://www.mielelattanzi.it/">Lattanzi</a><br />- 50 gr. gherigli di noci &nbsp;<a target="_blank" rel="nofollow" href="/redirect.php?URL=http://www.mielelattanzi.it/">Lattanzi</a><br />- 100 gr. formaggio grattugiato (facoltativo)<br />- 4 cucchiai di prezzemolo fresco tritato<br />- 1 spicchio d&#8217;aglio<br />- 50 gr. di olio d&#8217;oliva extravergine <a target="_blank" rel="nofollow" href="/redirect.php?URL=http://www.villacolonna.com/">Villa Colonna</a><br />- 150 gr. patate sbucciate e tagliate a fettine</p>
<p><b>Procedimento:</b><br />- mondare i carciofi, ricavare i cuori e tagliarli a fettine sottili, metterli a bagno in una ciotola con acqua e mezzo limone spremuto<br />- ammollare i funghi secchi in una ciotola con acqua calda<br />- in una larga padella mettere l&#8217;olio, l&#8217;aglio, il prezzemolo e soffriggere, a fuoco bassissimo, per 2 minuti<br />- aggiungere le patate e rosolarle lievemente<br />- aggiungere i carciofi scolati e mescolare per 2 minuti<br />- aggiungere i funghi secchi ammollati e mescolare<br />- fare cuocere gli ingredienti aggiungendo 3 cucchiai di acqua tiepida e aggiustare di sale<br />- quando il condimento sarà cotto, frullarlo in un mixer (io nel Bimby) sino a ridurlo in purea e rimetterlo nella padella dove è stato cotto<br />- lessare la pasta al dente<br />- spadellarla insieme al condimento, mescolando bene<br />- impiattare e guarnire con prezzemolo fresco e gherigli di noci tritati e , a piacere, con formaggio grattugiato</p>

<p></span><br /><a target="_blank" rel="nofollow" name='more'></a><span>Ingredienti per <span>&nbsp;</span>4 persone:</span><br /><span></span><br /><span><span>350 g di bucatini</span></span><br /><span><span>350 g di passata rustica di pomodoro</span></span><br /><span><span>60 g di gambi di sedano</span></span><br /><span><span>100 g di carote già sbucciate</span></span><br /><span><span>30 g di scalogni già sbucciati</span></span><br /><span><span>30 g di olive nere denocciolate</span></span><br /><span><span>1 spicchio d’aglio</span></span><br /><span><span>1 cucchiaio di prezzemolo tritato</span></span><br /><span><span>½ cucchiaino di origano secco</span></span><br /><span><span>½ cucchiaino di salvia secca</span></span><br /><span><span>1 cucchiaino di aghi di rosmarino tritati</span></span><br /><span>Sale q.b</span>
<div><span><span>Olio extra vergine d’oliva q.b.</span></span></div>
<p><span>Preparazione:</span><br /><span></span>
<div><span><span>Tritate finemente sedano, carote, scalogni , aglio e olive.</span></span></div>
<div><span><span>Scaldate un po’ d’olio in una padella e aggiungete il trito preparato.</span></span></div>
<div><span><span>Unite le erbe aromatiche, la passata di pomodoro e un bicchiere d’acqua, salate e fate cuocere per circa un’ora.</span></span></div>
<div><span><span>Cuocete i bucatini in abbondante acqua salata, scolateli al dente (forse la mia pasta non sembra molto al dente ma ha dovuto attendere i tempi degli scatti!)&nbsp;tenendo da parte un po’ d’acqua di cottura e versateli<span>&nbsp; </span>in padella con il sugo.</span></span></div>
<div><span><span>Saltate la pasta per qualche minuto aggiungendo, se occorre, l’acqua di cottura tenuta da parte.</span></span></div>
<div><span><span>Distribuite in 4 piatti fondi e cospargete con un po’ di prezzemolo tritato.</span></span></div>

<p>Stamattina leggendo il post di una amica, ho fatto due conti veloci sugli anni passati a studiare.<br />
Tra un esame e l&#8217;altro, tra una città e l&#8217;altra, tra un treno e l&#8217;altro, ho trascorso da universitaria 7 anni sui libri,<br />
praticamente un quarto della mia vita. E non perché fossi fuori corso, ma per la semplice sete di imparare.<br />
Ho cominciato da sbarbatella appena maggiorenne e ho finito da sposata mentre lavoravo,<br />
spaziando dalle scienze politiche agli studi economici,<br />
dal poter studiare fino a tarda notte in un appartamento condiviso,<br />
al sacrificare i fine settimana alternando libri a faccende di casa.<br />
E al termine di tutto cosa posso dire? Che in università eravamo troppi.<br />
Sono convinta che ormai la mia generazione, quella che ha avuto forse l&#8217;accesso all&#8217;università facilitato da facoltà con soli test orientativi, senza OFA da recuperare, senza accesso programmato,<br />
sia ormai overeducated, o per dirla con parole nostre &#8216;sovra istruita&#8217;.<br />
Voi che dite? Pochi manovali, pochi fornai, pochi artigiani.. tante aspettative e pochi posti disponibili.</p>
<p>E ora che è trascorso qualche anno, leggo sui giornali che i giovani ritornano alla terra, ai lavori dei nonni e alle tradizioni. Legge del contrappasso? Più si studia e più si sente la mancanza della manualità? Bah.</p>
<p>Mentre ci penso, mi preparo questo soffice e delicato panino,<br />
guarda caso impastato completamente a mano.</p>

<p><strong>PANINO SUPERSOFFICE VEGETARIANO<br />
( per 4 panini)</strong></p>
<p><strong>Per l&#8217;impasto</strong></p>
<p>250 gr farina manitoba</p>
<p>150 ml latte o acqua</p>
<p>1 uovo ( circa 50 gr)</p>
<p>80 gr burro sciolto e fatto raffreddare</p>
<p>10 gr sale</p>
<p>3 gr malto d&#8217;orzo</p>
<p>90 gr pasta madre rinfrescata da 3 ore</p>
<p>( Per spennellare: : 1 uovo + semi di sesamo facoltativi)</p>
<p><strong>Per la farcitura</strong></p>
<p>120 gr ceci ammollati per 12 ore</p>
<p>1l brodo vegetale</p>
<p>1 uovo</p>
<p>pangrattato qb</p>
<p>1/2 cucchiaino paprika dolce</p>
<p>1/2 cucchiaino cannella in polvere</p>
<p>150 gr yogurt bianco</p>
<p>1 cucchiaino menta secca</p>
<p>Per il pane: sciogliete in una ciotola capiente la pasta madre con il latte e il malto d&#8217;orzo.<br />
Aggiungete la farina e impastate. Se risultasse troppo duro, aggiungete altro latte a poco a poco.<br />
Unite il burro e quando sarà completamente assorbito aggiungete l&#8217;uovo.<br />
Quando l&#8217;impasto sarà omogeneo e morbido, unite il sale e manipolate ancora per altri 5 minuti.<br />
ripiegando spesso la massa su se stessa spostandovi sulla spianatoia per facilitarvi il compito.<br />
Trasferite il tutto nella ciotola e coprite. Lasciate lievitare fino al raddoppio a temperatura ambiente.</p>
<p>Trascorso il tempo, riprendete, sgonfiate leggermente e ricavatene quattro pezzi di ugual peso.<br />
Formate a sfera e lasciate lievitare ancora per 4 ore.<br />
Accendete il forno a 200°C e scoprite i panetti in modo che facciano una leggera pellicola in superficie.<br />
A piacere spennellate con l&#8217;uovo e ricoprite con i semi di sesamo.<br />
Infornate per 20 minuti o fino a che saranno ben dorati.</p>

<p>Mentre il pane cuoce, fate lessare i ceci per 20 minuti nel brodo caldo.<br />
Scolateli, trasferiteli nel mixer con le spezie e l&#8217;uovo.<br />
Frullate fino ad ottenere un composto omogeneo ma ancora granuloso.<br />
Aggiungete pangrattato quanto basta per riuscire ad ottenere delle polpette larghe quanto i panini.<br />
Scaldate un filo di olio extravergine di oliva e fate dorare le polpette pochi minuti per lato.</p>
<p>Mescolate in una ciotola lo yogurt con la menta.</p>
<p>Ora tagliate in due ciascun panino, passatelo su una piastra calda per pochi minuti in modo che la superficie interna diventi leggermente croccante,<br />
spalmate la crema di yogurt, posizionate la polpetta e finite con altra crema.</p>
