<p><span>- menta fresca tritata</span></p>
<p><span>- 1 uovo</span></p>

<p><b><span>Per il condimento:</span></b></p>
<p><span>- 1\2 kg di pomodorini</span></p>
<p><span>- 4 cucchiai di olio extravergine d&#8217;oliva</span></p>
<p><span>- 1 spicchio d&#8217;aglio&nbsp;</span></p>
<p><span>- 1 peperoncino piccolo (facoltativo)</span></p>
<p><span>- sale q.b.</span></p>
<p><span><br /></span></p>
<p><span><b>Procedimento per il condimento da preparare prima degli gnocchi</b>:</span></p>
<p><span>- tagliare a metà i pomodorini lavati</span></p>
<p><span>- in una padella mettere 4 cucchiai di olio d&#8217;oliva, uno spicchio d&#8217;aglio tritato e un peperoncino</span></p>
<p><span>- soffriggere brevemente a fuoco basso</span></p>
<p><span>- aggiungere i pomodorini , aggiustare d sale e cuocere a fuoco basso</span></p>
<p><span>- a fine cottura aggiungere basilico fresco e mettere da parte</span></p>
<p><span><br /></span></p>
<p><span><b>Procedimento per gli gnocchi:</b></span></p>
<p><span>- lavare le melanzane, togliere il picciolo e tagliarle a metà</span></p>
<p><span>- disporre le mezze melanzane in una teglia foderata da carta forno e incidere la superficie con vari tagli&nbsp;</span></p>
<p><span>- cuocere in forno a 250° per circa 40 minuti o comunque sino a cottura</span></p>
<p><span>- spellare le melanzane e mettere la polpa ottenuta in uno scolapasta</span></p>
<p><span>- lasciare scolare la polpa, mescolandola e schiacciandola, di tanto in tanto, per eliminare la maggior parte di acqua</span></p>
<p><span>- mettere la polpa in una ciotola e aggiungere l&#8217;uovo, la menta tritata e qualche cucchiaio di farina</span></p>
<p><span>- mescolare bene con le mani e aggiungere, gradualmente, altra farina, sino a che il composto diventerà lavorabile su un piano di lavoro</span></p>
<p><span>- formare dei rotolini, tagliarli a 2 cm e schiacciarli lievemente con i rebbi della forchetta</span></p>
<p><span>- nella padella con il condimento, mettere gli gnocchi e cuocere per <b>5 minuti</b> aggiungendo qualche cucchiaio d&#8217;acqua , mescolando con estrema delicatezza</span></p>
<p><span>- impiattare e aggiungere un giro d&#8217;olio e altro basilico fresco</span></p>

<p><i><span><span>Mi sono ispirata&nbsp; alla tradizionale frittata di spaghetti partenopea&nbsp; e qui ve le propongo come&nbsp;&nbsp;</span><span>monoporzione&nbsp;</span><span>che le rende molto ghiotte. Possono essere servite come</span><span>&nbsp;</span><span>primo piatto</span><span>&nbsp;per un&nbsp;</span><span>pranzo&nbsp;</span><span>della&nbsp;</span><span>domenica o&nbsp; per un goloso apericena .</span></span></i></p>

<div><i><span><span>Si tratta di dischetti di pasta condita con&nbsp;</span><span>besciamella</span><span>,&nbsp;</span><span>prosciutto cotto</span><span>&nbsp;e&nbsp;</span><span>pisellini</span><span>, che vengono passati in pastella e passati nel pangrattato prima di essere fritte nell&#8217;olio bollente. Si formerà una</span></span></i><i><span><span>&nbsp;crosticina&nbsp; dorata </span><span>&nbsp;così golosa che ne fa ulteriormente risaltare l’interno cremoso. Praticamente irresistibili.</span></span></i></div>

<h4><span>Ingredienti per 4 persone:</span></h4>
<div><span>- 500 gr. di pasta (io corta)</span></div>
<div><span>- 500 gr. besciamella</span></div>
<div><span>- 150 gr. prosciutto cotto a cubetti (io a fette e tagliato a pezzetti)</span></div>
<div><span>- 300 gr. piselli surgelati</span></div>
<div><span>- 150 gr. formaggio grattugiato (io caciocavallo stagionato)</span></div>
<div><span>- 1 cipollotto</span></div>
<div><span>- olio extravergine d&#8217;oliva</span></div>
<div><span>sale, noce moscata&nbsp; e pepe nero q.b.</span></div>

<div><span>Per la pastella:</span></div>
<div><span>- 150 gr. di farina 00</span></div>
<div><span>- 250 gr. di acqua</span></div>
<div><span>- 1\2 cucchiaino di sale</span></div>
<div><span><br /></span></div>
<div><span>- 300 gr. di pangrattato</span></div>
<div><span><br /></span></div>
<div><span><br /></span></div>
<div><span>Procedimento :</span></div>
<div><span>- preparare la besciamella e metterla da parte</span></div>
<div><span>- lessare i pisellini, scolarli e farli rosolare, brevemente, in una larga padella con olio d&#8217;oliva e un cipollotto, mettere da parte</span></div>
<div><span>- lessare la pasta al dente e metterla da parte</span></div>
<div><span>- in una ciotola mescolare la pasta con la besciamella, i piselli, il formaggio grattugiato, il prosciutto cotto</span></div>
<div><span>- versare il composto in una teglia foderata con carta forno e livellare in modo che sia alto almeno 1 centimetro</span></div>
<div><span>- porre la teglia in frigo a rassodare, anche tutta la notte</span></div>
<div><span>- con uno stampino rotondo tagliare la pasta a dischetti e riutilizzare gli avanzi per formare altri dischetti</span></div>
<div><span>- passare i dischetti nella pastella e nel pangrattato</span></div>
<div><span>- friggere uniformemente in abbondante olio di semi&nbsp;</span></div>
<div><span>- scolare su carta da cucina e servire</span></div>

<div><span><b>n.b. se rimangono dischetti di pasta , non fritti, si possono congelare e utilizzare in un altro momento</b></span></div>

<p><span><i>La loro friabilità e croccantezza li rende piacevolissimi sia nella consistenza che nel gusto.&nbsp;</i></span></p>
<p><span><i>dopo averli cotti, li ho tagliati e <b>&#8220;/redirect.php?URL=tricottati&#8221;</b> a 100° in forno ventilato per mezz&#8217;ora. Ho spento il forno lasciando lo sportello a fessura, in modo da fare uscire il vapore prodotto.&nbsp;</i></span></p>

<p><span><b>Ingredienti:</b></span></p>
<p><span>- 250 gr. farina 00</span></p>
<p><span>- 250 gr. farina di semola rimacinata</span></p>
<p><span>- 180 gr. di burro morbido oppure 150 gr olio di semi di girasole&nbsp;</span></p>
<p><span>- 2 uova</span></p>
<p><span>- 180 gr. di zucchero</span></p>
<p><span>-1 bustina di lievito per dolci</span></p>
<p><span>- 100 gr. cioccolato fondente tritato grossolanamente</span></p>
<p><span>- 30 gr. scorzette di arance candite tritate oppure scorza grattugiata di arance bio</span></p>
<p><span>- 1 tazzina di latte o acqua</span></p>
<p><span><br /></span></p>
<p><span><b>Procedimento:</b></span></p>
<p><span>- nella planetaria o in una ciotola, inserire farine, uova, zucchero, burro, lievito setacciato, latte e impastare sino ad ottenere un impasto liscio</span></p>
<p><span>- aggiungere il cioccolato e le scorzette d&#8217;arancia e impastare bene per distribuire questi ingredienti in modo uniforme</span></p>
<p><span>- tenere l&#8217;impasto in frigo per mezz&#8217;ora</span></p>
<p><span>- prendere l&#8217;impasto e dividerlo in due parti</span></p>
<p><span>- creare due filoni e adagiarli su una teglia con carta forno</span></p>
<p><span>- cuocere in forno già caldo per 20 minuti</span></p>
<p><span>- toglierli dal fuoco e farli raffreddare</span></p>
<p><span>- tagliare i filoni a tozzetti</span></p>
<p><span>- rimettere i tozzetti nella teglia e farli asciugare in forno a 100° ventilato per mezz&#8217;ora</span></p>
<p><span>- sfornare e lasciare raffreddare</span></p>
<p><span>- conservare in sacchetti da frigo ben chiusi</span></p>

<p><span><i>Questa preparazione mi suscita sempre ricordi della mia infanzia , quando mia madre cucinava le uova, in una piccolissima padellina di alluminio, un pò storta, molto vissuta.</i></span></p>
<p><span><i>Le adoravo, con la passata di pomodoro fresco e le foglioline di basilico, era il piatto dell&#8217;estate, ma anche di tutto l&#8217;anno.</i></span></p>
<p><span><i>Da grande, la passione è rimasta uguale, condivisa dal mio <b>Doppio</b>, che facilita molto , quando il caldo ci aggredisce senza pietà&#8230;.</i></span></p>

<p><b>Ingredienti per 2 persone:</b></p>
<p>- 4 uova</p>
<p>- 5 peperoni piccoli oppure 2 grandi</p>
<p>- 300 gr. passata di pomodoro</p>
<p>- peperoncino macinato (facoltativo)</p>
<p>- 1 pizzico di paprica dolce o affumicata</p>
<p>- 2 spicchi d&#8217;aglio</p>
<p>- 2 cipollette o una cipolla piccola</p>
<p>- 1 rametto di basilico</p>
<p>- 5 cucchiai di olio extra vergine d&#8217;oliva</p>

<p><b>Procedimento:</b></p>
<p>- in una padella mettere l&#8217;olio d&#8217;oliva ,le cipollette tritate o cipolla piccola, gli spicchi d&#8217;aglio tritati finemente e un pizzico di peperoncino</p>
<p>- soffriggere 2 minuti a fuoco basso</p>
<p>- aggiungere i peperoni tagliati a listerelle e soffriggere per 5 minuti a fuoco basso</p>
<p>- aggiungere la passata di pomodoro, aggiustare di sale e cuocere per 2 minuti</p>
<p>- aggiungere le uova, pizzico di sale e pizzico di paprica, mettere il coperchio e cuocere 3 minuti a fuoco basso, o comunque fino a che si addenseranno gli albumi</p>
<p>- togliere dal fuoco, aggiungere il basilico tritato e servire calde&nbsp;</p>

<p>A Palermo c&#8217;è :<b>&#8220;/redirect.php?URL=a cucuzza longa&#8221;</b> quella da fare in umido con patate e cipolle e poi c&#8217;è la <b>&#8220;cucuzza di friiri&#8221;</b> cioè da friggere che è quella definita <b>ZUCCHINA NAPOLETANA,</b> con la scorza chiara .</p>
<p>Economica e dolcissima, la zucchina deve essere tagliata a fettine, e fritta in olio extravergine d&#8217;oliva.&nbsp;</p>
<p>La mia ricetta di oggi è una variante della preparazione classica e dà vita ad un condimento cremoso e profumato che &#8220;avvolgerà&#8221; la pasta di qualsiasi formato.&nbsp;</p>

<p><b>Ingredienti per 4 persone</b></p>
<p>- 1 zucchina napoletana tenera</p>
<p>- 2 spicchi d&#8217;aglio</p>
<p>- 1 rametto di basilico fresco</p>
<p>- 1 peperoncini&nbsp;</p>
<p>- 2 rametto di menta fresca</p>
<p>- 200 gr. olio extravergine d&#8217;oliva&nbsp;&nbsp;</p>
<p>- 500 gr. pasta&nbsp;nel formato che preferite</p>
<p><b>Procedimento:</b><br />- affettare la zucchina a rondelle e metterle in una ciotola piena d&#8217;acqua con 1 cucchiaio di sale<br />- lasciare per 1\2 ora e sciacquarla abbondantemente<br />- friggere in olio d&#8217;oliva e mettere da parte<br />- nel frattempo portare a bollore l&#8217;acqua per la pasta</p>
<p>- prima di scolare la pasta, al dente, mettere da parte qualche cucchiaio di acqua di cottura<br />- in un&#8217;altra padella mettere 50 gr. d&#8217;olio d&#8217;oliva e due spicchi d&#8217;aglio tritati finemente e il peperoncino<br />- soffriggere a fuoco bassissimo per qualche minuto</p>
<p>- aggiungere le zucchine fritte e mescolare per 1 minuto</p>
<p>- inserire in un mixer le zucchine fritte, l&#8217;olio con aglio e peperoncino, foglie di basilico e menta fresca, 3 cucchiai di formaggio grattugiato (io caciocavallo) e frullare bene fino ad ottenere una crema liscia<br />- scolare la pasta al dente e spadellarla con il pesto di zucchine&nbsp;</p>
<p>- mantecare bene e se necessario aggiungere qualche cucchiaio di acqua di cottura della pasta&nbsp;<br />- servire e guarnire con menta e formaggio grattugiato</p>

<p><i><span>A Palermo è usuale affermare che mangiamo le melanzane anche <b>&#8220;/redirect.php?URL=sbattute al muro&#8221;</b> ovvero cucinate in qualsiasi modo.</span></i></p>
<p><i><span>Effettivamente è un ortaggio estremamente versatile , sia fritto, grigliato, al forno o bollito che si presta a dare vita a pietanze , sia di tradizione, che nuove, per appagare il palato di tutti.</span></i></p>
<p><i><span>Oggi vi propongo dei medaglioni , realizzati con fette di melanzane farcite con prosciutto e primosale , impanate e fritte .&nbsp;</span></i></p>
<p><i><span>Una preparazione davvero <b>LIBIDINOSA</b> che coniuga il gusto dolce della melanzana al prosciutto e al formaggio che, con la frittura a fuoco dolce,&nbsp; si fonde lievemente , legando tutti i sapori.</span></i></p>
<p><i><span>ecco la mia ricetta:</span></i></p>

<p>Ingredienti per 4 persone:</p>
<p>- 2 melanzane viola grosse</p>
<p>- 200 gr. prosciutto cotto</p>
<p>- 300 gr.&nbsp; primosale/ provola</p>
<p>- 2 uova</p>
<p>- 200 gr. pangrattato</p>
<p>- 100 gr. farina 00</p>
<p>- olio di semi di girasole</p>
<p></p>
<p>Procedimento:</p>
<p>- sbucciare le melanzane e tagliarle a fette di mezzo cm</p>
<p>- affettare il formaggio</p>
<p>- adagiare la prima fetta in un piatto, distribuire il prosciutto cotto e il formaggio a fettine, sovrapporre un&#8217;altra fetta fino ad esaurimento delle fette</p>
<p>- passare i medaglioni nella farina, nelle uova sbattute e nel pangrattato, avendo cura di coprire bene anche i bordi</p>
<p>- friggere in olio di semi abbondante, a fuoco dolce per permettere alle fette di melanzane di cuocersi senza bruciare la panatura</p>
<p>- aggiustare di sale e servire calde</p>

<p><a target="_blank" rel="nofollow" name='more'></a><span><i> da preparare in anticipo per apprezzare , al meglio tutto il sapore e il profumo. Perfette come contorno ma anche per farcire un panino da consumare al mare per rimanere leggeri.&nbsp;</i></span>

<p><span><i>Io , abitualmente, uso le melanzane rotonde viola&nbsp; che a Palermo vengono definite<b> &#8220;/redirect.php?URL=TUNISINE&#8221;.</b>&nbsp;</i></span></p>
<p><span><i>Le preferisco perchè sono dolci e non necessitano di tempo per lo spurgo sotto sale.</i></span></p>
<p><span><i>&nbsp;Sono carnose e morbide, perfette per essere cotte sulla piastra di ghisa , ben calda, oppure in una padella antiaderente , senza olio.&nbsp;</i></span></p>
<p><span><i>E&#8217; importante cuocerle per un paio di minuti per lato, non oltre perchè diventerebbero secche .&nbsp;</i></span></p>
<p><span><i>Io tolgo anche la buccia e taglio le fette dello spessore di almeno un centimetro. Dopo averle grigliate, disporre le fette in una ciotola, a strati, distribuendo uniformemente sulle fette il pesto di pomodori secchi.&nbsp;</i></span></p>
<p><span><i>Coprire con pellicola e lasciare riposare almeno due ore, o anche di piu&#8217;, prima di consumare.</i></span></p>

<p><span><b>Ingredienti per 4 persone:</b></span></p>
<p><span>- 3 melanzane viola</span></p>
<p><span>- 2 spicchi di aglio</span></p>
<p><span>- 3 rametti di menta fresca</span></p>
<p><span>- 3 rametti basilico fresco</span></p>
<p><span>- 10 pomodori secchi</span></p>
<p><span>- peperoncino (facoltativo)</span></p>
<p><span>- 1 cucchiaio di origano secco</span></p>
<p><span>- 30 ml olio di oliva extravergine</span></p>
<p><span>- 4 cucchiai di acqua tiepida (servirà a rendere il pesto piu&#8217; fluido e a diminuire la quantità di olio</span></p>
<p><span>- 1 pizzico di sale</span></p>
<p><span><br /></span></p>
<p><span><b>Procedimento:</b></span></p>
<p><span>- lavare e sbucciare le melanzane</span></p>
<p><span>- affettarle ad almeno 1 cm</span></p>
<p><span>- cuocere su una piastra ben arroventata 2 minuti per lato o almeno fino a che diventino evidenti i segni della griglia</span></p>
<p><span>- nel frattempo preparare il pesto inserendo tutti gli ingredienti in un mixer. Frullare bene e se necessario aggiungere un altro cucchiaio di acqua tiepida</span></p>
<p><span>- dopo aver arrostito tutte le fette, disporle in una ciotola, a strati, spalmando il pesto su ogni strato</span></p>
<p><span>- fare riposare le melanzane grigliate, almeno 2 ore , meglio se tutta la notte, prima consumarle</span></p>
