<p><span></span>La <strong>ricetta tradizionale della ratatouille</strong> è quella di un contorno saporito e colorato &#8211; non troppo diverso da tante ricette di tradizione italiana come la <em>ciambotta</em> lucana, la <em>poncia</em> calabrese, la <em>caponata</em> siciliana &#8211; che prevede la cottura delle verdure in padella.</p>
<p>Il metodo di preparazione seguito dal <strong>topino Remy</strong> nel <em>film di animazione</em>, invece, è quello dello <em>chef stellato Keller</em> secondo il quale le verdure affettate sottilmente si alternano a crudo in una teglia con fondo di <strong>salsa piperade</strong> (<em>a base di peperoni</em>) e poi si stufano in forno.</p>

<li>2 zucchine verdi</li>
<li>2 zucchine gialle</li>
<li>4 pomodori tipo San Marzano</li>
<li>2 melanzane lunghe</li>
<li>prezzemolo fresco</li>
<li>olio extravergine di oliva</li>
</ul>
<p><em>per la salsa piperade</em></p>
<ul>
<li>1 peperone rosso</li>
<li>1 porro</li>
<li>basilico fresco</li>

<h4>Preparazione</h4>
<ol>
<li><strong>Lava e affetta sottilmente le verdure tenendo da parte gli scarti irregolari.</strong> Lava, pulisci e taglia a cubetti il porro e il peperone. Trasferiscili in una padella con poco olio e lasciali andare coperti per una decina di minuti.</li>
<li><strong>Aggiungi il sale insieme agli avanzi di pomodoro e di zucchina.</strong> Cuoci per altri 10 minuti. Spegni e fai intiepidire. Traferisci in un robot e frulla aggiungendo un filo di olio crudo e basilico fresco.</li>
<li><strong>Ungi una teglia da forno, cospargi il fondo con la salsa piperade</strong> e alterna le verdure a fette seguendo una spirale ordinata fino a riempire la teglia.</li>
<li><strong>Irrora di olio, aggiusta di sale e copri con un foglio di carta forno</strong> in cui avrai ricavato un foro centrale per lo sfiato dei vapori. Cuoci in forno statico preriscaldato a 170° C per circa 45 minuti. Rimuovi la carta forno e lascia cuocere altri 5 minuti.</li>
<li><strong>Sforna e fai intiepidire</strong>. Servi in piatti singoli ultimando con prezzemolo fresco, la salsa avanzata e un filo di olio.</li>
