			<content:encoded><![CDATA[<p>Mi mancava il <strong>ristorante Teresa dal 1968</strong> e tornarci dopo 10 anni è stato davvero piacevole. Il locale è stato aperto nel 1968 a Genova Pegli e da allora è di proprietà della stessa famiglia.  Dall&#8217;ultima volta che ci sono stata ho trovato diversi cambiamenti: innanzitutto un <em>restyling</em> del locale con una nuova saletta e un <em>dehors</em> che si affaccia sulla piazza e l&#8217;arrivo della <strong>terza generazione</strong>, con <strong>Martina e Davide</strong>, figli di Tina Cosenza, che dal 2023 sono entrati a tutti gli effetti a far parte dello staff, occupandosi della comunicazione, degli eventi e del <em>catering</em>.</p>

<p>In sala Mariella, sorella di Tina, è la regina della sala e con competenza e cortesia si prende cura dei clienti, e consiglia anche il vino. <strong><em>&#8220;Sentimentale, raffinata e di famiglia&#8221;</em></strong> così definisce la sua cucina <strong>chef Tina Cosenza</strong>, rispondendo alla mia consueta domanda. Tina esprime i sapori della sua Liguria creando <strong>piatti innovativi e gustosi</strong>, reinterpretando le ricette tipiche con il suo tocco personale. In cucina con lei il fratello Tonino e Cinzia la moglie di quest&#8217;ultimo.</p>

<p>Il nostro pranzo inizia con gli <strong><em>amuse bouche</em></strong>: panini al nero di seppia, burro e acciughe salate; crostini con maionese e giardiniera; <em>toast</em> di cozze con acciughina saltata in padella con peperoncino; filetti di triglia marinati con il <em>kumquat</em>; gambero bollito con maionese alla barbabietola, rapa rossa e ravanello in agrodolce.</p>

I <em>mandilli de sea</em>, in italiano fazzoletti di seta, sono un formato di pasta tipica ligure che assomiglia alle classiche lasagne, ma molto più sottili. Proprio per questo motivo ricordano i fazzoletti di seta.</p>

</em>Da Teresa dal 1968 si riconferma sempre, come dieci anni fa, il punto di riferimento per una cucina di pesce di mare ben studiata, dai sapori equilibrati e allo stesso tempo semplice e raffinata.</p>

<p>«Ho finito le lacrime a forza di piangere. Io mi trovo qui ad Azzano, a distanza di duemila chilometri dal mio Paese, e mi sento impotente perché non posso stare vicino alla mia famiglia. Ho un’ansia continua, ho lo stomaco chiuso, non riesco nemmeno a dormire bene la notte per la preoccupazione. Poi con un po’ di preghiere e tranquillanti riesco a calmarmi. La mattina, però, quando mi sveglio ricasco nell’incubo».</p>
<p>Si sfoga così <b>Mariya Kardash</b>, una badante ucraina che da un anno e mezzo ha trovato casa ad Azzano San Paolo dove accudisce una signora a tempo pieno. Prima di approdare in paese, negli ultimi diciassette anni ha lavorato tra Brescia e Cremona. Il suo cuore, però, è sempre rimasto in Ucraina, a Ternopil per l’esattezza, dove ancora vivono suo marito, la figlia, il genero e il nipotino.</p>
<p>«Sono nonna di un bimbo di un anno e mezzo che ha appena incominciato a vivere e già lo attende un futuro difficile &#8211; dice commossa Mariya -. Il secondo giorno di guerra avrei voluto tornare immediatamente in Ucraina, solo che avevano bloccato i voli diretti e avrei dovuto fare due scali, uno in Ungheria e l’altro in Polonia, avrei dovuto trovare un mezzo per giungere alla dogana, poi avrei dovuto attraversare la frontiera a piedi e cercare un pulmino per arrivare fino a casa, nell’Ucraina occidentale, poco distante da Leopoli. Ovviamente mia figlia mi ha pregato di non farlo perché era troppo pericoloso. Oltretutto al momento io sono l’unica della famiglia che può lavorare perché là in Ucraina è tutto chiuso ma i prezzi aumentano. Così, tutti i soldi che guadagno come badante qui ad Azzano li mando ai miei familiari. Non ho mai pensato di farmi una vita qui».</p>
<p>L&#8217;ultima volta che la signora Kardash ha visto i suoi parenti era il 3 settembre 2021: «Prima c’era il Covid, ora la guerra. Che periodo! Spero di poter abbracciare di nuovo la mia famiglia la prossima estate anche se, vista la situazione, non so come andrà a finire. Là in Ucraina ora i maschi della nostra famiglia o vanno a combattere o, se non hanno esperienza militare come i ragazzi giovani, svolgono l’attività di sorveglianza territoriale. Mi viene tristezza anche a pensare alla preoccupazione delle donne ucraine che passano il tempo a cucinare dolci e pane (senza lievito per farlo durare di più) per chi è in guerra».</p>
<p>A un certo punto la voce di Mariya si spezza dal dolore: «Abbiamo preso un forte spavento nei giorni scorsi, perché a distanza di 60 chilometri da casa nostra ci sono stati due bombardamenti negli aeroporti militari di Lutsk e Ivano-Frankivs’k &#8211; racconta -. Grazie a Dio sul mio territorio non si vive una disgrazia come quella di Kiev. Però fa male lo stesso vedere la nostra Ucraina ridotta così. È incredibile che nel 2022 possano succedere cose simili. Non può la Russia entrare di punto in bianco in casa nostra e pretendere di comandare. Non è normale. Purtroppo la situazione è tesa dal 1991, da quando l&#8217;Ucraina ha ottenuto l’indipendenza in seguito alla dissoluzione dell&#8217;Unione Sovietica. Per Putin la nostra autonomia è uno sbaglio e così la Russia continua a metterci il bastone fra le ruote. Però addirittura la guerra non ce l&#8217;aspettavamo».</p>
<p>Così per aiutare dall’Italia il popolo ucraino colpito dal conflitto, nei giorni scorsi la Kardash e altre badanti di Azzano hanno pensato di organizzare una colletta: «Ognuna di noi ha contribuito a seconda delle sue possibilità &#8211; afferma Mariya -. Attraverso questa iniziativa sono stati raccolti quasi mille euro che sono stati spesi per l&#8217;acquisto di medicinali».</p>
<p><b>Vincenzo Alicino</b>, tesoriere dell’associazione «Un naso rosso per» presieduta dal Claun Margherito, si è poi attivato per portare nei centri di raccolta pro Ucraina i farmaci di primo soccorso e gli eccessi di pannoloni e traverse degli anziani che le badanti hanno in cura.</p>
<p>«Un ringraziamento speciale &#8211; conclude Mariya &#8211; va anche a Graziano Vitali, ex sindaco di Zanica, e alla sorella Natalia che hanno donato 200 euro a testa. <p>Lo trovo un metodo molto interessante, limita l&#8217;aggiunta di zucchero e questo già mi piace, se poi si pensa che la frutta non viene scaldata che per pochi minuti, penso che riesca a mantenere a dovere i colori e magari anche qualche principio nutritivo&#8230; fatto sta che l&#8217;ho voluta provare!</p>
<p>La mia idea iniziale era con le fragole, ma non avendole nell&#8217;orto e sapendo a quanti trattamenti vengono sottoposte, ho preferito cambiare frutto.&nbsp; Quindi eccomi a provarci con le ciliegie e il risultato è stato davvero soddisfacente Ci sono due aspetti negativi a mio parere: il doverne preparare poco alla volta (avendo un essiccatore non professionale e l&#8217;omogeneità del prodotto, la confettura deve essere frullata per avere dati corretti degli zuccheri presenti. Personalmente certe confetture le preferisco con i pezzi di frutta presenti!</p>
<p>Altro aspetto da tener presente è la manualità che si deve avere per utilizzare il rifrattometro (niente di spaziale!), ma è sicuramente un altro elemento da tener presente. Lavorando in laboratorio, non solo non questo problema, ma me lo sono prestato per un week end </p>
