			<content:encoded><![CDATA[<p>C&#8217;è una bellissima crema, d&#8217;origine anglosassone credo, che si chiama <em>curd</em>.<br />
[Scroll for the English Version]<br />
Si tratta di una crema un po&#8217; acida, a base di frutta, che si presta magnificamente alla preparazione di dessert, come ripieno per cornetti, per farcire toast, dough-nuts, ciambelle, ma anche per accompagnare meringhe e biscotti.<br />
La più comune credo sia la <em>lemon curd, </em>ma io la trovo fantastica di mandarini, aranci, frutto della passione, pesche e fragole.<br />
Oggi ne faremo un vasetto alle fragole.</p>
<p>Ingredienti per un vasetto da 400 ml (da marmellata!):</p>
<p>. 250g di fragole fresche<br />
. 50g di zucchero semolato<br />
. 30 gr burro<br />
. 1 uovo</p>
<p>È molto semplice e veloce:</p>
<ol>
<li>Mettiamo un pentolino sul fuoco a fiamma medio-bassa e sobbolliamo per 5-7 minuti le fragole a pezzettini con 1-2 cucchiai d&#8217;acqua.</li>
<li>Frulliamo le fragole con un frullatore ad immersione e versiamo la purea ottnuta in una ciotolina resistente al calore.</li>
<li>Prepariamo un bagnomaria con poca acqua, che sobbolla appena, e sistemiamo la ciotolina con la purea di fragole in modo che non tocchi l&#8217;acqua.</li>
<li>Mescolando come se non ci fosse più un domani, aggiungiamo prima lo zucchero, poi il burro ed infine l&#8217;uovo sbattuto. Senza riposare i braccini, ma sempre mescolando, cuociamo per circa 10-12 minuti.</li>
<li>Togliamo il pentolino dal fuoco (dal bagnomaria!) e, mescolando, lasciamo che si freddi fino a raggiungere temperatura ambiente (7-8 minuti circa).</li>
<li>Versiamo la nostra cremina in un vasetto sterilizzato, chiudiamo e conserviamo in frigo. (fino a 2 mesi!)</li>

ENGLISH VERSION</p>
<p>Ingredients for a 400 ml sealable jar of Strawberry Curd:</p>
<p>. 250g strawberries, washed, hulled &amp; halved<br />
. 50g (3 1/2 oz) white granulated sugar<br />
. 30 gr butter<br />
. 1 egg</p>
<p>Preparation:</p>
<ol>
<li>Put the washed and chopped strawberries and about a tbsp of water in a small saucepan over a low medium heat, and bring it to a simmer.<br />
Cook for about 5-7 minutes.</li>
<li>Use a handblender to mash the strawberries, and place the strawberry puree in a clean heatproof bowl.</li>
<li>Place the bowl over a small saucepan of simmering water and make sure that the bottom of the bowl doesn&#8217;t touch the water.</li>
<li>While <span>continuously stirring</span> with a wooden spoon, add first sugar, the chopped butter and lastly the beaten egg. Cook for about 12 minutes.</li>
<li>Remove the saucepan from the heat and allow to cool stirring over and over again for more 7-8 minutes.</li>
<li>Pour the Strawberry Curd in a sterilized and sealable jar and store it in the fridge.</li>
