Le forme grosse e rotonde, la crosta dorata, friabile, croccante con all’interno una mollica bianca e profumata di lievito che lo rende morbido, ma consistente allo stesso tempo, adatto per essere consumato fresco e, quando è secco, serve per la preparazione di ottimi piatti.

Il nostro pane raffermo si utilizza in numerose prparazioni sia dolci che salate, una fra le più famose è la panzanella conosciuta anche per merito del suo ideatore: il Bronzino, al secolo Agnolo Allori, pittore alla corte di Cosimo I . La buona cucina lo attrasse e si cimentò in odi alla padella, alla cipolla, al raveggiolo ed altro.

Così nasce  la Panzanella, che sta per pane e zanella (scodella, piatto fondo), piatto povero della tradizione contadina toscana

Posto d’onore nella cucina toscana spetta alla CIPOLLA. Tante sono le varietà : la più nota, resa celebre dal Boccaccio, è quella di Certaldo. Poi c’è la Vernina di Firenze, la Massese : ottima per sughi e soffritti. Quindi la varietà di Bassanone in Lunigiana o di Treschietto adatta al pinzimonio, tanta è la sua dolcezza. Nella mia città adottiva esiste la cipolla lucchese, coltivata in collina. Ed è proprio questa che ho usato per la mia panzanella.

Alla ricetta scritta dal Bronzino, arrivata inalterata fino a noi, è stato apportata l’aggiunta del pomodoro.

Ne esistono diverse versioni, quella fiorentina ha il cetriolo (che manca invece in quella senese) e quella originale di pane raffermo ammollato in acqua fredda per 10 minuti e poi sbriciolato. A me piace tenere il pane un pò più grande e non ammollarlo in acqua.

Per 4 persone

2 cipolle lucchesi

4 fette di pane toscano  del giorno prima (io lo tosto in forno pochi minuti per la versione con i pezzi più grandi)

300 gr di pomodori rossi da insalata

1 cetriolo

6 cucchiai di olio extravergine d’oliva

3 cucchiai di aceto di vino rosso

un cucchiaino di tabasco (aggiunta personale)

sale e pepe nero

foglie di basilico fresco

Mettere in ammollo il pane (del giorno prima) nell’acqua fredda e, appena è ammorbidito. strizzarlo bene e sbriciolarlo in una zuppiera. (per la mia versione : tagliare a fette il pane e tostarlo qualche minuto in forno caldo. Dopodichè tagliarlo a quadrotti e condirlo con due cucchiai di olio extravergine di oliva e 1 di aceto e mescola bene con le mani).

Pulire le cipolle, il cetriolo(pelarlo con un pelaverdure) e tagliarli a fette sottili, unire il basilico spezzettando le foglie con le dita e condire le verdure con l’olio, l’aceto ed il sale. Aggiungere le verdure condite al pane sbriciolato. I pomodori tagliarli a piccoli pezzetti cercando di togliere i semi ed aggiungerli per ultimo.Aggiungere altro olio e aceto salati e pepati precedentemente. Girate il tutto (delicatamente se usate la mia versione con pane tostato) con un cucchiaio di legno per amalgamare gli ingredienti e il condimento (meglio con le mani per rendere uniforme il condimento).

Lasciare riposare in frigo prima di servire.

Versione classica

Panzanella di branzino e cipolla lucchese all’agretto

Utilizzare la ricetta base della panzanella (quella con il pane ammollato).

Per la cipolla all’agretto: pulire e tagliare a julienne la cipolla lucchese. Preparare uno sciroppo con acqua, vino bianco, miele, aceto di lampone, un pizzico di sale  e quando bolle immergere la cipolla tagliata fino a che non caramella. Scolare e lasciare raffreddare.

Per il branzino: sfilettare un branzino medio. Cuocere a vapore le polpe con sale e pepe . A cottura ultimata aggiungere un filo di olio extravergine a crudo.

COMPOSIZIONE DEL PIATTO

Utilizzare un coppapasta.

Pennellare con olio evo e foderare la base con delle polpe di branzino piccoline. Farcire con la panzanella toscana e chiudere con una polpa di branzino. Porre sopra il branzino la cipolla lucchese caramellata e una piccola foglia di basilico.
