<p><i><span>Simile allo <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://pasticciepasticcini-mimma.blogspot.com/2013/06/lo-fincione-palermitano.html"><b>SFINCIONE PALERMITANO</b></a>&nbsp; (nel link la mia ricetta) nella consistenza dell&#8217;impasto, appunto alto e soffice come una &#8220;spugna&#8221;&nbsp; , è molto ricco , forse un pò anche ridondante per l&#8217;abbondanza&nbsp; di ingredienti e gusti che si sovrappongo creando un&#8217;armonia meravigliosa.</span></i></p>
<p><i><span>La mia ricetta di oggi prevede un impasto diretto , piu&#8217; semplice degli impasti a lunga lievitazione che richiedono tempi biblici e sono molto lontani dalla mia concezione di <b>TEMPO </b>.</span></i></p>
<p><i><span>La base è un impasto di farina 0 e farina di semola rimacinata, olio d&#8217;oliva , lievito di birra e acqua abbondante perchè deve essere molto idratato per avere la consistenza soffice e leggera.&nbsp;</span></i></p>
<p><i><span>La sovrapposizione di vari ingredienti che compongono il condimento crea un effetto indimenticabile.&nbsp;</span></i></p>
<p><i><span>La sofficità della base, la golosità della cipolla stufata condita con i filetti di sarde salate o acciughe, la tuma fondente ricoperta dalla ricotta fresca e infine sugellata da briciole di pane raffermo <b>&#8220;atturrate&#8221; (tostate)</b> brevemente in poco olio evo ,&nbsp; si fondono in una unica sensazione di gusto che spazia tra il&nbsp; soffice-fondente-friabile .&nbsp;</span></i></p>

<p><b><span>Ingredienti per una teglia 35&#215;40</span></b></p>
<p><span>- 400 gr. farina 0</span></p>
<p><span>- 100 gr. farina di semola rimacinata</span></p>
<p><span>- 10 gr. lievito di birra fresco</span></p>
<p><span>- 20 gr. olio di oliva</span></p>
<p><span>- 15 gr. zucchero</span></p>
<p><span>- 12 gr. sale</span></p>
<p><span>- 350 gr. acqua tiepida</span></p>
<p><span><br /></span></p>
<p><span>Ingredienti per il condimento:</span></p>
<p><span>- 300 gr. di cipolle bianche affettate (il peso è riferito al netto)</span></p>
<p><span>- 50 gr&nbsp; di olio d&#8217;oliva</span></p>
<p><span>- 50 gr. di filetti di sarde salate o acciughe</span></p>
<p><span>- 150 gr. di pan raffermo da 2\3 giorni sbriciolato nel mixer grossolanamente</span></p>
<p><span>- 300 gr. di tuma (io Primosale)</span></p>
<p><span>- 400 gr. di ricotta fresca di pecora o vaccina</span></p>
<p><span>- origano</span></p>
<p><span><br /></span></p>
<p><b><span>PROCEDIMENTO PER L&#8217;IMPASTO</span></b></p>
<p><span>- in una planetaria (o in una ciotola se si procede a mano), inserite le farine, lo zucchero, il lievito sciolto in poca acqua e l&#8217;acqua</span></p>
<p><span>- impastare a velocità media per 5 minuti</span></p>
<p><span>- aggiungere l&#8217;olio d&#8217;oliva e il sale e impastare ancora 3\4 minuti</span></p>
<p><span>- se necessario aggiungere qualche cucchiaiate di acqua. L&#8217;impasto deve essere molto morbido</span></p>
<p><span>- lasciare lievitare l&#8217;impasto , sigillato con pellicola, <b>sino al raddoppio</b>, anche nel forno con la lucina accesa. I tempi variano sia per la stagione e sia per la temperatura all&#8217;interno della cucina</span></p>
<p><span><br /></span></p>
<p><b><span>PROCEDIMENTO PER IL CONDIMENTO:</span></b></p>
<p><span>- nel frattempo affettare e soffriggere la cipolla con olio d&#8217;oliva.&nbsp;</span></p>
<p><span>- Rosolare un paio di minuti e poi aggiungere mezzo bicchiere di acqua.&nbsp;</span></p>
<p><span>- Coprire e cuocere a fuoco bassissimo sino a quando la cipolla si sarà cotta</span></p>
<p><span>- aggiungere i filetti di sarde salate\acciughe e scioglierle a fuoco bassissimo mescolando con una paletta di legno e mettere da parte</span></p>
<p><span>- in un mixer tritare grossolanamente i pezzi pane raffermo da due o tre giorni</span></p>
<p><span>- mettere il pane tritato in una larga padella con due cucchiai d&#8217;olio e fare tostare, a fuoco bassissimo , mescolando per una decina di minuti. Mettere da parte e aggiungere 2 cucchiai di origano</span></p>
<p><span>- affettare la tuma\primosale e mettere da parte&nbsp;</span></p>
<p><span><br /></span></p>
<p><b><span>ASSEMBLAGGIO DEGLI INGREDIENTI:</span></b></p>
<p><span>- oliare una teglia e stendere l&#8217;impasto lievitato, delicatamente con i polpastrelli unti di olio per uno spessore di 1 cm&nbsp;</span></p>
<p><span>- aggiungere le fettine di tuma o primosale</span></p>
<p><span>- aggiungere la ricotta a fiocchetti uniformi</span></p>
<p><span>- aggingere la cipolla stufata</span></p>
<p><span>- aggiungere il pane raffermo tostato</span></p>
<p><span>- aggiungere qualche cucchiaio di origano e completare con un giro di olio d&#8217;oliva</span></p>
<p><span>- infornare in forno già caldo a 220° per 20 -25 minuti</span></p>
<p><span>- sfornare e <b>DIVORARE </b>! è buonissimo sia caldo che freddo&nbsp;</span></p>
