Perché il grano?

La ricetta del Burbara ha origine nella leggenda di Santa Barbara che si credeva aver assistito a un miracolo: mentre fuggiva correndo attraverso campi di grano appena seminati, le piante sono germogliate e cresciute in fretta per coprire le sue tracce..

Secondo il calendario contadino, l’avvenimento della festa del Burbara indica che la terra è pronta per accogliere i semi di grano. Nei proverbi palestinesi si dice: “nella festa del Burbara, rimettete l’orzo nelle giare, e seminate il grano”; l’orzo diventa inadatto alla semina, perché la terra diventa fredda, mentre è adatta per seminare il grano. 

Si narra inoltre che la festa di Burbara coincida con il movimento del sole dal Tropico del Capricorno  verso l’equatore, e poi verso il Tropico del Cancro, che fa sì che il giorno si riprenda lentamente le sue  parti dalla notte, e in che si dice: “Nella festa di Burbara, il giorno prende le sue notizie dalla notte” e “nella festa di Burbara il giorno si allunga un salto di topo”. 

Perché in Palestina è importante?

In Palestina, Burbara non è solo una festa cristiana popolare, ma anche è una chiesa nel villaggio di Aboud a nord ovest di Ramallah,  la cui  narrazione  è l’unica che racconta i dettagli geografici della storia della martire Burbara (santa Barbara).  Si indica la collina dove fuggì, la roccia dietro la quale si nascose e anche il luogo dove fu imprigionata, torturata e decapitata e che nel IV vide la costruzione di una chiesa.

La Palestinese Santa Barbara (Burbara) fa parte del patrimonio culturale palestinese. La festa, il cibo e la convivenza che si esalta tra musulmani e cristiani, mentre si scambiano i piatti del dolce per mangiarlo assieme,  irrita l’occupazione.  Così, durante la seconda intifada nel 2002, la grotta della chiesa fu bombardata con il pretesto che fosse usata dai combattenti palestinesi.

Come si fa il dolce che si prepara in ricordo del giorno in cui la martire Burbara  fu decapitata?

Gli ingredienti:

250 g di grano

1 litro d’acqua

100 g d’uva secca

1 cucchiaio di anice macinato 

scorza di mezza arancia 

3 chiodi di garofano 

zucchero a piacere 

frutta secca (pinoli, mandorle, pistacchio) a piacere

melograno per la guarnizione 

cannella a piacere 

semi di finocchio caramellati

 

Procedimento:

Mettere il grano a bagno per un giorno; cuocerlo con acqua per circa un’ora e mezzo  (25 minuti in pentola a pressione).  Quando sarà pronto, aggiungere l’uva, la frutta secca, le spezie e la scorza d’arancia, e far  bollire il tutto ancora per qualche minuto; infine, aggiungere lo zucchero e mescolare. 

Servire il dolce nei piattini fondi e guarniteli  con i chicchi di melograno, semi di finocchio caramellati, frutta secca, ecc.. 

Altrimenti: dopo averlo cotto,  mettere il grano in una ciotola, e tutti gli altri ingredienti in ciotoline, per dare la libertà ai commensali di scegliere cosa aggiungere per insaporirlo..
