La San Sebastian cheesecake è un dolce al formaggio buonissimo, forse il più buono che io abbia mai assaggiato in vita mia.

Nacque a La Vina, un ristorante a San Sebastian in Spagna, ma diventò presto famosa anche ad Istanbul in Turchia, dove la gente, pur di poterne assaggiare un pezzo, si accontenta di fare una  fila chilometrica.

La famosa San Sebastian cheesecake è  conosciuta anche come “Burned Cheesecake” ovvero cheesecake bruciata.

È un dolce al formaggio, quasi bruciato da qui il nome”Burned Cheesecake”.

Io ho preferito non farlo annerire troppo e ho messo per i primi dieci minuti di cottura un foglio di carta di alluminio sopra.

Un altra caratteristica fondamentale di questo dolce è il sapore intenso di vaniglia, quindi vi sconsiglio vivamente di sostituire l’estratto di vaniglia con le bustine di zucchero vanigliato.

È una torta semplicissima da preparare ma con un unica insidia ovvero la cottura, infatti il segreto della buona riuscita di questa torta sta nella temperatura e nel tempo di cottura.

Deve essere cotta ad una temperatura altissima e per poco tempo per essere perfetta.

Se aumentate i tempi di cottura la  San Sebastian cheesecake non avrà più la sua consistenza cremosa che la caratterizza.

La torta è semplicissima da preparare, avete bisogno solo di  frusta a mano, e uno stampo a cerniera di 24 cm.

Io vi consiglio vivamente di provarla, ma fate attenzione perché crea dipendenza.

Potete decidere di servirla accompagnandola con una salsa al cioccolato come fanno ad Istambul.
