<p>Stagione di Asparagi&#8230;<br />ne consumiamo fino ad esaurimento,in qualsiasi modo,in tutte le salse!!</p>
<p>INGREDIENTI<br />800g.lonza intera&#8230;tagliata a 2 a 2 non incise fino in fondo(numero di fette secondo lo spessore<br />mortadella a fette spesse(ho usato le mortadelline piccole<br />scamorza asciutta o provolone a fette<br />carote,sedano tritati<br />6 cipollotti di Tropea (affettati sottili<br />400g.asparagi&nbsp; selvatici (lavati e pelati x&nbsp; la parte piu&#8217; dura&nbsp;<br />farina q.b<br />olio e burro parti uguali<br />vino bianco<br />sale e pepe q.b</p>
<p>PROCEDIMENTO<br />Farcite le fette con mortadella e formaggio chiudetele con stecchini e passatele nella farina,<br />intanto in una capace casseruola ,fate andare il trito,i cipollotti , la parte legnosa degli asparagi con olio e burro a imbiondire,aggiungete le fette farcite e fatele rosolare da ambo i lati,bagnate con il vino<br />salate e pepate,aggiungete le punte degli asparagi e la restante mortadella,coprite allungando un mezzo bicchiere di acqua e lasciate cuocere a fiamma media per cca 20&#8242;/25&#8242;,togliete la carne,frullate grossolanamente la salsa rimasta, allungate con mezzo bicchiere di acqua ,rimettete la carne ,fate riscaldare il tutto e servite!!</p>
