<p>Arrivare&#160; a<strong> Tanca Sa Marchesa</strong>&#160; (Fordongianus, dove l’imperatore Traiano ha voluto le terme e&#160; al&#160; confine con l’ altipiano basaltico di Paulilatino, il paese del pozzo sacro di Santa Cristina a circa mezz’ora da Oristano) non&#160; è proprio agevolissimo.       <br />A un certo punto si lascia la strada asfaltata per addentrarsi e&#160; percorrere un tratto completamente sterrato, quasi boschivo, tanto che a un certo punto Google avverte che perde la connessione… e proprio lì mi trovo davanti a un cancello chiuso con grandi lucchetti che mi impedisce di proseguire.&#160; E mò?       <br />Scendo dalla macchina e mi guardo intorno: il nulla. O il <em>tutto</em>, considerando le distese di mirto, lentischio ed erbe mediterranee che profumano l’aria, cespugli&#160; e&#160; muretti a secco.       <br />Prendo il telefono, per fortuna c’è linea, e chiamo il signor<strong> Giuseppe</strong> chiedendo se sono nel posto giusto. “<em>Si, </em><em>la strada finisce li dove è lei” </em>mi risponde col suo&#160; accento sardo<em>, “i lucchetti sono&#160; aperti. Sleghi quel legaccio rosso che chiude il</em> <em>cancello, </em><em>poi venga avanti. Lasci pure il cancello aperto</em>” .Tiro un sospiro di sollievo e mi rimetto in macchina.&#160; Ancora qualche minuto e giungo a destinazione: sono nell’azienda agricola “<a target="_blank" rel="nofollow" href="/redirect.php?URL=https://www.samarchesa.com/">SA Marchesa</a>“ di <strong>Giuseppe Cugusi, </strong><em>pastore</em> come lui stesso si definisce e ci tiene ad essere chiamato. </p>
<p><a target="_blank" rel="nofollow" href="/redirect.php?URL=https://drive.google.com/uc?id=1SLpEbi6H4mitLMfeVG2eb-ATEvUBk8XV"><img style="margin-right: auto;margin-left: auto;float: none" alt="Tanca sa Marchesa (fordongianus)" src="https://drive.google.com/uc?id=1h2BBwPbi1Wg-EByz5UALcf_RlAECWlOC" width="454" height="127" /></a>In questo&#160; podere che si estende per 140 ettari, Giuseppe&#160; trasforma in gustosi e pregiati formaggi il latte di circa 450 pecore di razza sarda che oltre ad essere nutrite a cereali pascolano libere, in queste terre fertili e incontaminate distanti circa 20 km dal mare e circa 200 metri sul suo livello e attraversate dal torrente Lazòne, tra mirto, querce, olivastri. Pulite e curate in ogni loro necessità daranno un latte particolarmente gustoso, dai profumi che si ritroveranno poi nei formaggi.            <br />Formaggi unici e di nicchia, che non si trovano nella grande distribuzione i cui dettami sono contrari all’etica di Giuseppe.&#160; <br />Ma il suo <strong>Fiore Sardo dop</strong> (a caglio di agnello e un bouquet di aromi e profumi unici), premiato anche in manifestazioni di settore, e gli altri formaggi di sua produzione arrivano sulle tavole di ristoranti a 3 stelle: Enoteca Pinchiorri o La Pergola di Heinz Beck, per citarne un paio. E, credetemi, valgono assolutamente il viaggio&#160; e la piccola difficoltà per arrivare a Tanca Sa Marchesa. Del resto le cose buone non sempre sono semplici da raggiungere!&#160;&#160;&#160;&#160;&#160; <br />E qui,&#160; in una casa campestre risalente agli anni ‘60,&#160; Giuseppe arriva tutto l’anno ogni giorno alle 6.00 e&#160; trasforma il latte crudo&#160; con ricette antiche unicamente&#160; a mano, senza l’ausilio di macchinari (ma con l’esperienza e la tecnica maturati negli anni) e con fermenti autoprodotti che caratterizzano in modo univoco i formaggi.&#160;&#160;&#160;&#160;&#160;&#160; <br />L’amore per questo lavoro, per Giuseppe, ha inizio in tempi lontani: già a 11 anni, infatti aveva fretta di alzarsi la mattina per aiutare suo padre nella mungitura e&#160; dopo la scuola aveva fretta di finire i compiti per tornare qui a dare una mano. <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://drive.google.com/uc?id=1hOp0sxLsItVSZH96GDOHBEDgyfZwWo8p"><img style="margin-right: auto;margin-left: auto;float: none" alt="Giuseppe Cugusi" src="https://drive.google.com/uc?id=1uMnNnhUBgLSJJfQHTO-CBq-B0R7IZOYx" width="378" height="185" /></a>Entriamo nel piccolo laboratorio&#160; lindo e spartano, ogni attrezzo al suo posto. Settembre non è periodo di produzione&#160; ma l’odore del latte si respira in ogni angolo.&#160; <br />Nell’ambiente attiguo si notano i tavolacci di legno che hanno la forte impronta delle forme di formaggio: durante la stagionatura la microflora che si forma nel contatto tra legno e formaggio e l’ambiente intorno arricchisce ulteriormente il prodotto.&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160; <br />&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160;&#160; <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://drive.google.com/uc?id=11aClmnBio6eQS1BJ-FLbRi4GLoA288z5"><img border="0" alt="Giuseppe  Cugusi pastore " src="https://drive.google.com/uc?id=1A0w5KxFP4qq28zJwqrBtd9i7OrYVfjA1" width="151" height="252" /></a>&#160;&#160; <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://drive.google.com/uc?id=1qxDwyRgUKKnLoOjbmIdI9oBo5dqzLxSP"><img border="0" alt="DSC_8076" src="https://drive.google.com/uc?id=1kj2VrPztOvQ9H_fcvhXG0plCIlPn3tm6" width="240" height="188" /></a> </p>
<p>Il vano dove avviene l’affumicatura ha fascino e odori particolari. E’ il punto&#160; più atavico del laboratorio, non c’è neanche&#160; l’energia elettrica.&#160; Per mostrarmi il “braciere“ scavato nel pavimento Giuseppe si serve di una torcia.&#160; Dal soffitto pende ‘<em>sa cannizza’</em>, un tempo l’attrezzo era composto di canne, attualmente sono listelli di legno che compongono il piano su cui vengono appoggiati i formaggi che prevedono una leggera affumicatura: il <em>Fiore sardo dop</em>,&#160; prodotto di punta dell’azienda <em>Sa Marchesa</em> stagionato da 12 a 24 mesi&#160; e il<strong> <em>Lazzone</em></strong><em>&#160; </em>(un’altra delizia il cui nome deriva dal torrente che attraversa il podere), stagionato da 8 mesi a 2 anni.&#160; Il caglio di vitello conferisce un&#160; gusto più delicato&#160; rispetto al primo e una volta assaggiato non si dimentica facilmente .                       <br />Entrambi poi e passano alla stagionatura (durante la quale le forme vengono lavate con aceto rosso e olio extravergine di oliva) in un altro locale, che mi viene mostrato attraverso una finestrella: mi emoziona vedere i pecorini in quella sorta di <em>caveau </em>e respirarne pienamente i profumi!                       <br /><a target="_blank" rel="nofollow" href="/redirect.php?URL=https://drive.google.com/uc?id=1ZQ-ls4x6s2M7bN4ISoY6W0fAvXQ0ycc0"><img style="margin-right: auto;margin-left: auto;float: none" alt="ipiccy_image(61)" src="https://drive.google.com/uc?id=1T3iEqn-EhkVwk0oImD3G7dsjaytsVJ3A" width="378" height="186" /></a>Terminata la breve visita è il momento di assaggiare questi pecorini, ognuno con una sua spiccata personalità dal gusto più intenso, aromatico o più delicato.                       <br />C’è “<strong>Sa Marchesa</strong>”, adatto come formaggio da tavola, Il <strong>Fiore Sardo dop</strong>, intenso,&#160; quasi da meditazione e per questo più adatto ad essere gustato in piccole dosi, il <strong>Foz’e Murta</strong>, aromatizzato al mirto,&#160; che spicca nella parte centrale della fetta, il “<strong>Barone</strong>” aromatizzato con “<em>s’armidda</em>”, una varietà di timo selvatico locale e il “<strong>Barigadu</strong>”, l’unico prodotto che&#160; sconfina in Continente: viene infatti aromatizzato con <em>Tartufo di Acqualagna</em>.                       <br /><a target="_blank" rel="nofollow" href="/redirect.php?URL=https://drive.google.com/uc?id=14CjYAgwPSIbS1tKXIgSa2jhrfEIhD0fc"><img style="margin-right: auto;margin-left: auto;float: none" alt="ipiccy_image(63)" src="https://drive.google.com/uc?id=15RpuXdKvaAbfhVAtg-aeVN7LQ5PqJK8p" width="310" height="307" /></a>Giuseppe ammette candidamente che la prima volta che ha aperto il barattolo col tartufo inviatogli dal produttore, ha pensato “che puzza”, credendo che fosse avariato. Poi provando e riprovando ha trovato il giusto equilibrio per un prodotto delizioso da mangiare in purezza, ma ottimo anche in cucina.                       <br />Dopo la degustazione ci fermiamo ancora qualche minuto a chiacchierare sull’aia, ammirando il territorio circostante, circondati da innumerevoli gatti e tre pastori maremmani affettuosissimi.                       <br />Giuseppe è una persona umile,&#160; garbata e disponibilissima e mi augura di tornare in periodo di produzione, cosi da poterlo vedere al lavoro.                       <br />Lascio Tanca Sa marchesa dopo aver fatto grande scorta di questi formaggi, che si possono ordinare direttamente in azienda e ricevere comodamente a casa.&#160; </p>

			<content:encoded><![CDATA[<p><strong>Una Boccata d&#8217;Arte</strong> è un progetto che coinvolge <strong>20 artisti</strong>, in <strong>20 borghi</strong> in <strong>2o regioni d&#8217;Italia</strong>. E&#8217; stato ideato nel <span>2020 da <strong>Marina Nissim</strong>, Presidente di <strong>Fondazione Elpis</strong>, come </span><span>reazione alla pandemia, per dare un segnale di incoraggiamento e creare nuove opportunità di espressione per artisti emergenti e affermati. L&#8217;iniziativa coinvolge </span><span>borghi con meno di 5mila abitanti, situati in aree diverse del territorio italiano, con l&#8217;obiettivo di valorizzare l’intero territorio italiano e <strong>ri-scoprire il patrimonio storico e paesaggistico</strong> di piccoli centri, lontani dai circuiti tradizionali dell’arte e del turismo. </span><span>Un altro degli obiettivi della manifestazione è quello di rivolgersi <span> a un pubblico sempre più ampio e trasversale, anche grazie al coinvolgimento delle comunità e alle relazioni che si generano tra artista, abitanti, amministrazioni, associazioni, commercianti e artigiani locali.</span></span></p>

Transgender Day of Remembrance reminds us to fight against&nbsp;forces that devalue transgender lives every day. To bring awareness to this important day, we want to pause to share a few stories of transgender people who have found their voice on WordPress.com. We posed a question: &#8220;What does Transgender Day of Remembrance mean to you?&#8221; Below, we&#8217;ve shared a few responses from creators on our platform.</p>

<blockquote><p>Some of us have been counted, but most of us are counted out—unthought and unthinkable. And so we do it ourselves. We account for Tony McDade. We are accountable to Muhlaysia Booker. We recall Riah Milton. We recollect the fierce life of one of our greatest contemporary remembrancers, the trans griot Monica Roberts. We name the nonbinary people who continue to be treated as unnameable as we slip through the matrix of binary gender. The competing racialized pandemics of our time continues to be intensified for trans people, especially Black trans women, in this year as with any other. We live with that reality and demand non-trans people do the same because our resilience is nothing without their reckoning for the violence they allow to continue against us. Trans Day of Remembrance is not only about how trans people have been stolen from us too soon, but how we continue to survive and thrive and persist against all odds. Has there ever been anything as beautiful as that?</p>

I got to see trans people from a variety of backgrounds, some who had grown old and found love, and see proof that I could live a long and happy life as a trans woman. But the tone of the evening was contrasted by sitting with the knowledge of why we were all gathered, the knowledge of far too many lives cut far too short. I was surrounded by the trans people who had survived and thrived, as well as the memories of those who had not.</p>

<blockquote><p>My name is Nicole Eldridge. I&#8217;ve been transgender since third grade. As I started to transition, I would read stories online about transgender people dying. This is absolutely terrifying if you want to do what they did. I never gave up and transitioned. Transgender Day of Remembrance means to me that we remember the transgender people that have died and carry out their goal of an equal future for all transgender people. Every time I listen to a Transgender Day of Remembrance speech, it brings me back to Martin Luther King’s speech, &#8220;I Have a Dream.&#8221; What King said about everyone being equal and having equal opportunities is so true when I hear the transgender people&#8217;s names who have died. It breaks my heart to hear all of the transgender people that died for the year. In spite of the hatred toward transgender people, I rise above it all and help transgender people all over the world with my website <a target="_blank" rel="nofollow" href="/redirect.php?URL=http://transgendersupport.org/">transgendersupport.org</a>. This is what Transgender Day of Remembrance means to me.</p>

There’s nothing new to consider, no trans question – we’ve been here all along, and the only terrible things that happened because of it happened to&nbsp;<strong><em>us</em></strong>&#8230; </p>

<p>And so I’m remembering trans lives lost this year, and trans lives filled with trauma, and everything that trans people have to do to simply… be. If you ever thought this year was scary, oppressive, isolating, challenging to get through and potentially fatal to be around people… you’ve been living a lot of the worst parts of the trans experience. Yet I’m remembering the powerful joy of my community, how our bonds through the pandemic have been strong, how well accustomed we immediately became to 2020, having lived our own version of it for most of our lives, creating found families, love, laughter, understanding and sometimes rainbows out of the unforgiving raw material of compromise.</p>

This is absolutely terrifying if you want to do what they did. I never gave up and transitioned. Transgender Day of Remembrance means to me that we remember the transgender people that have died and carry out their goal of an equal future for all transgender people. Every time I listen to a Transgender Day of Remembrance speech, it brings me back to Martin Luther King’s speech, &#8220;I Have a Dream.&#8221; What King said about everyone being equal and having equal opportunities is so true when I hear the transgender people&#8217;s names who have died. It breaks my heart to hear all of the transgender people that died for the year. In spite of the hatred toward transgender people, I rise above it all and help transgender people all over the world with my website <a target="_blank" rel="nofollow" href="/redirect.php?URL=http://transgendersupport.org/">transgendersupport.org</a>. Gender and its expressions have been changing throughout cultures, and trans people have existed throughout history with notable examples in the many ancient pantheons, including deities. There’s nothing new to consider, no trans question – we’ve been here all along, and the only terrible things that happened because of it happened to&nbsp;<strong><em>us</em></strong>&#8230; </p>

<p>And so I’m remembering trans lives lost this year, and trans lives filled with trauma, and everything that trans people have to do to simply… be. If you ever thought this year was scary, oppressive, isolating, challenging to get through and potentially fatal to be around people… you’ve been living a lot of the worst parts of the trans experience. Yet I’m remembering the powerful joy of my community, how our bonds through the pandemic have been strong, how well accustomed we immediately became to 2020, having lived our own version of it for most of our lives, creating found families, love, laughter, understanding and sometimes rainbows out of the unforgiving raw material of compromise.</p>

We recall Riah Milton. We recollect the fierce life of one of our greatest contemporary remembrancers, the trans griot Monica Roberts. We name the nonbinary people who continue to be treated as unnameable as we slip through the matrix of binary gender. The competing racialized pandemics of our time continues to be intensified for trans people, especially Black trans women, in this year as with any other. We live with that reality and demand non-trans people do the same because our resilience is nothing without their reckoning for the violence they allow to continue against us. Trans Day of Remembrance is not only about how trans people have been stolen from us too soon, but how we continue to survive and thrive and persist against all odds. Has there ever been anything as beautiful as that?</p>

I got to see trans people from a variety of backgrounds, some who had grown old and found love, and see proof that I could live a long and happy life as a trans woman. But the tone of the evening was contrasted by sitting with the knowledge of why we were all gathered, the knowledge of far too many lives cut far too short. I was surrounded by the trans people who had survived and thrived, as well as the memories of those who had not.</p>

This is absolutely terrifying if you want to do what they did. I never gave up and transitioned. Transgender Day of Remembrance means to me that we remember the transgender people that have died and carry out their goal of an equal future for all transgender people. Every time I listen to a Transgender Day of Remembrance speech, it brings me back to Martin Luther King’s speech, &#8220;I Have a Dream.&#8221; What King said about everyone being equal and having equal opportunities is so true when I hear the transgender people&#8217;s names who have died. It breaks my heart to hear all of the transgender people that died for the year. In spite of the hatred toward transgender people, I rise above it all and help transgender people all over the world with my website <a target="_blank" rel="nofollow" href="/redirect.php?URL=http://transgendersupport.org/">transgendersupport.org</a>. This is what Transgender Day of Remembrance means to me.</p>

Gender and its expressions have been changing throughout cultures, and trans people have existed throughout history with notable examples in the many ancient pantheons, including deities. There’s nothing new to consider, no trans question – we’ve been here all along, and the only terrible things that happened because of it happened to&nbsp;<strong><em>us</em></strong>&#8230; </p>

<p>And so I’m remembering trans lives lost this year, and trans lives filled with trauma, and everything that trans people have to do to simply… be. If you ever thought this year was scary, oppressive, isolating, challenging to get through and potentially fatal to be around people… you’ve been living a lot of the worst parts of the trans experience. Yet I’m remembering the powerful joy of my community, how our bonds through the pandemic have been strong, how well accustomed we immediately became to 2020, having lived our own version of it for most of our lives, creating found families, love, laughter, understanding and sometimes rainbows out of the unforgiving raw material of compromise.</p>

We recall Riah Milton. We recollect the fierce life of one of our greatest contemporary remembrancers, the trans griot Monica Roberts. We name the nonbinary people who continue to be treated as unnameable as we slip through the matrix of binary gender. The competing racialized pandemics of our time continues to be intensified for trans people, especially Black trans women, in this year as with any other. We live with that reality and demand non-trans people do the same because our resilience is nothing without their reckoning for the violence they allow to continue against us. Trans Day of Remembrance is not only about how trans people have been stolen from us too soon, but how we continue to survive and thrive and persist against all odds. Has there ever been anything as beautiful as that?</p>

I got to see trans people from a variety of backgrounds, some who had grown old and found love, and see proof that I could live a long and happy life as a trans woman. But the tone of the evening was contrasted by sitting with the knowledge of why we were all gathered, the knowledge of far too many lives cut far too short. I was surrounded by the trans people who had survived and thrived, as well as the memories of those who had not.</p>

This is absolutely terrifying if you want to do what they did. I never gave up and transitioned. Transgender Day of Remembrance means to me that we remember the transgender people that have died and carry out their goal of an equal future for all transgender people. Every time I listen to a Transgender Day of Remembrance speech, it brings me back to Martin Luther King’s speech, &#8220;I Have a Dream.&#8221; What King said about everyone being equal and having equal opportunities is so true when I hear the transgender people&#8217;s names who have died. It breaks my heart to hear all of the transgender people that died for the year. In spite of the hatred toward transgender people, I rise above it all and help transgender people all over the world with my website <a target="_blank" rel="nofollow" href="/redirect.php?URL=http://transgendersupport.org/">transgendersupport.org</a>. Gender and its expressions have been changing throughout cultures, and trans people have existed throughout history with notable examples in the many ancient pantheons, including deities. There’s nothing new to consider, no trans question – we’ve been here all along, and the only terrible things that happened because of it happened to&nbsp;<strong><em>us</em></strong>&#8230; </p>

<p>And so I’m remembering trans lives lost this year, and trans lives filled with trauma, and everything that trans people have to do to simply… be. If you ever thought this year was scary, oppressive, isolating, challenging to get through and potentially fatal to be around people… you’ve been living a lot of the worst parts of the trans experience. Yet I’m remembering the powerful joy of my community, how our bonds through the pandemic have been strong, how well accustomed we immediately became to 2020, having lived our own version of it for most of our lives, creating found families, love, laughter, understanding and sometimes rainbows out of the unforgiving raw material of compromise.</p>

Transgender Day of Remembrance reminds us to fight against&nbsp;forces that devalue transgender lives every day. To bring awareness to this important day, we want to pause to share a few stories of transgender people who have found their voice on WordPress.com. We posed a question: &#8220;What does Transgender Day of Remembrance mean to you?&#8221; Below, we&#8217;ve shared a few responses from creators on our platform.</p>

<blockquote><p>Some of us have been counted, but most of us are counted out—unthought and unthinkable. And so we do it ourselves. We account for Tony McDade. We are accountable to Muhlaysia Booker. We recall Riah Milton. We recollect the fierce life of one of our greatest contemporary remembrancers, the trans griot Monica Roberts. We name the nonbinary people who continue to be treated as unnameable as we slip through the matrix of binary gender. The competing racialized pandemics of our time continues to be intensified for trans people, especially Black trans women, in this year as with any other. We live with that reality and demand non-trans people do the same because our resilience is nothing without their reckoning for the violence they allow to continue against us. Trans Day of Remembrance is not only about how trans people have been stolen from us too soon, but how we continue to survive and thrive and persist against all odds. Has there ever been anything as beautiful as that?</p>

I got to see trans people from a variety of backgrounds, some who had grown old and found love, and see proof that I could live a long and happy life as a trans woman. But the tone of the evening was contrasted by sitting with the knowledge of why we were all gathered, the knowledge of far too many lives cut far too short. I was surrounded by the trans people who had survived and thrived, as well as the memories of those who had not.</p>
