<div>In una casseruola portate a ebollizione l&#8217;acqua con un cucchiaio di olio,</div>
<div>zafferano e il sale grosso.</div>
<div></div>
<div>Quando sarà giunta a bollore cuocete il riso per il tempo indicato sulla confezione.</div>
<div></div>
<div>Scolate bene e trasferite in una ciotola insieme&nbsp; ai piselli.</div>
<div></div>
<div>Aggiungete l&#8217;olio, il parmigiano e il prezzemolo tritato,</div>
<div>mescolate e fate raffreddare.</div>
<div></div>
<div>Con le mani inumidite formate le polpette.</div>
<div></div>
<div>Passarle nelle uova sbattute e poi nel pangrattato,</div>
<div>se volete una bella crosticina ripetete il passaggio della panatura per ben due volte.</div>
<div></div>
<div>Friggete le <i>Polpette di riso </i>in olio ben caldo finché diventano dorati.</div>
<div></div>
<div>Scolateli con un mestolo forato e serviteli ancora calde.</div>
