<p><span><i>Questa preparazione mi suscita sempre ricordi della mia infanzia , quando mia madre cucinava le uova, in una piccolissima padellina di alluminio, un pò storta, molto vissuta.</i></span></p>
<p><span><i>Le adoravo, con la passata di pomodoro fresco e le foglioline di basilico, era il piatto dell&#8217;estate, ma anche di tutto l&#8217;anno.</i></span></p>
<p><span><i>Da grande, la passione è rimasta uguale, condivisa dal mio <b>Doppio</b>, che facilita molto , quando il caldo ci aggredisce senza pietà&#8230;.</i></span></p>
<p><span><i>Oggi ve le propongo <b>&#8220;/redirect.php?URL=a modo mio&#8221;</b> con l&#8217;aggiunta di piccoli peperoni dolci, colorati e profumatissimi, profumi e spezie, per un tocco etnico, se vogliamo, per un piatto antico, povero, ma EVERGREEN&nbsp;</i></span></p>

<p><b>Ingredienti per 2 persone:</b></p>
<p>- 4 uova</p>
<p>- 5 peperoni piccoli oppure 2 grandi</p>
<p>- 300 gr. passata di pomodoro</p>
<p>- peperoncino macinato (facoltativo)</p>
<p>- 1 pizzico di paprica dolce o affumicata</p>
<p>- 2 spicchi d&#8217;aglio</p>
<p>- 2 cipollette o una cipolla piccola</p>
<p>- 1 rametto di basilico</p>
<p>- 5 cucchiai di olio extra vergine d&#8217;oliva</p>
<p></p>
<p><b>Procedimento:</b></p>
<p>- in una padella mettere l&#8217;olio d&#8217;oliva ,le cipollette tritate o cipolla piccola, gli spicchi d&#8217;aglio tritati finemente e un pizzico di peperoncino</p>
<p>- soffriggere 2 minuti a fuoco basso</p>
<p>- aggiungere i peperoni tagliati a listerelle e soffriggere per 5 minuti a fuoco basso</p>
<p>- aggiungere la passata di pomodoro, aggiustare di sale e cuocere per 2 minuti</p>
<p>- aggiungere le uova, pizzico di sale e pizzico di paprica, mettere il coperchio e cuocere 3 minuti a fuoco basso, o comunque fino a che si addenseranno gli albumi</p>
<p>- togliere dal fuoco, aggiungere il basilico tritato e servire calde&nbsp;</p>
