<p>INGREDIENTI (per 4 persone)</p>
</p>
<ul>
<li>farro 350 g</li>
<li>asparagina selvatica 300 g</li>
<li>cipolla 1</li>
<li>brodo vegetale (carota, sedano, cipolla, acqua e sale)</li>
<li>olio extravergine d&#8217;oliva</li>
<li>sale</li>
<li>pepe</li>
</ul>
<div>PROCEDIMENTO</div>
<div>Mettere a bollire una pentola d&#8217;acqua con un pugno di sale grosso, una carota, una costa di sedano e una cipolla per ottenere il brodo.</div>
<div>In una casseruola larga soffriggere leggermente la cipolla tritata e unire il farro, facendolo tostare qualche istante&nbsp; rigirando con un cucchiaio di legno.</div>
<div>Unire un mestolo di brodo bollente, mescolare e abbassare la fiamma al minimo.</div>
<div>Eliminare la parte finale del gambo dell&#8217;asparagina, tenere le punte da parte e tagliare a rondelle il resto.</div>
<div>Unire al farro le rondelle di asparagi e continuare a cuocere aggiungendo un mestolo di brodo ogni volta che si asciuga.</div>
<div>Unire le punte a cinque minuti dalla fine della cottura e mescolare delicatamente.</div>
<div>Alla fine della cottura il farro dovrà risultare cotto, ma fare attenzione a non passare la cottura (circa 20 minuti).</div>
<div>Distribuire nei piatti e servire subito.</div>

<p>Con l&#8217;inizio della bella stagione viene voglia di piatti colorati, leggeri, magari qualche pasta fredda per un pranzo veloce o un picnic.<br />Per questa ricetta ho utilizzato peperoni, olive, mais, pisellini freschi appena sgusciati e il farro biologico del <b><a target="_blank" rel="nofollow" href="/redirect.php?URL=https://www.serraspina.com/" target="_blank">Podere Serraspina</a>.</b></p>

<li>piselli freschi sgusciati 200 g</li>
<li>olive denocciolate 100 g</li>
<li>peperone rosso 1</li>
<li>mais dolce 1 confezione piccola</li>
<li>olio extravergine d’oliva</li>
<li>sale</li>
<li>pepe</li>

<p>PROCEDIMENTO</p>
<p>Sciacquare il farro sotto acqua corrente, scolarlo e lessarlo in una pentola di acqua bollente salata insieme ai piselli per 15 minuti: scolare al dente, condire con un filo d&#8217;olio e far raffreddare a temperatura ambiente.<br />Unire il peperone a cubetti, le olive a rondelle e il mais sgocciolato.<br />Mescolare, unire un filo d&#8217;olio, regolare di sale e pepe.<br />Servire freddo.</p>
