<p><i><span>Oggi vi propongo una ricetta tipica palermitana che, oltre al classico pangrattato <b>&#8220;/redirect.php?URL=atturrato&#8221;</b> cioè lievemente tostato e al profumo mediterraneo di aglio, basilico e prezzemolo, prevede un ingrediente &#8220;principe&#8221; della nostra tradizione: <b>LA PEZZAME</b>.</span></i></p>
<p><i><span>Con questo termine si intende il misto di formaggi e salumi, i ritagli di prosciutto e mortadella,&nbsp; le codine di salame, cozzetti di formaggi ecc. che costituiscono l&#8217;inizio o la fine di un prodotto, quindi difficilmente &#8220;affettabili&#8221; che il salumiere , sapientemente mette da parte per utilizzarli in golose e stuzzicanti farciture di vari piatti.</span></i></p>
<p><i><span>Da sempre conosciuta e apprezzata dai palermitani, <b>LA </b>PEZZAME , o <b>IL</b> PEZZAME, come dir si voglia, rappresenta la soluzione economica per realizzare ottime pietanze.</span></i></p>
<p><i><span>Naturalmente, se non siete a Palermo e se non avete mai visto questo misto di salumi, potete acquistare piccole quantità di ciò che vi piace maggiormente, oppure utilizzare rimanenze che giacciono in frigo&nbsp; e utilizzarli per realizzare&nbsp; &nbsp;questo piatto.</span></i></p>

<p>ecco la mia ricetta:</p>
<p><b>Ingredienti per 4 persone</b></p>
<p>- 4 peperoni rossi e gialli</p>
<p>- 2 uova-</p>
<p>- 50 gr. pangrattato lievemente tostato</p>
<p>- 1 spicchio d&#8217;aglio tritato finemente (facoltativo)</p>
<p>- 2 cucchiai di prezzemolo fresco tritato</p>
<p>- 2 cucchiai di basilico fresco tritato</p>
<p>- 300 gr.di PEZZAME ( ovvero: salame, mortadella, prosciutto, formaggi morbidi TRITATI)</p>
<p>- 4 cucchiai di latte per amalgamare la farcitura</p>
<p>- 4 cucchiai di olio extravergine d&#8217;oliva</p>

<p><b>Procedimento:</b></p>
<p>- in un mixer tritare il misto di salumi e formaggi</p>
<p>- in una ciotola aggiungere al misto di salumi, tutti gli altri ingredienti e amalgamare bene</p>
<p>- lavare i peperoni e tagliarli a metà togliendo il picciolo e i filamenti interni</p>
<p>- disporli su una teglia, mettere all&#8217;interno pochissimo sale e farcirli&nbsp;</p>
<p>- dare un giro d&#8217;olio e infornare in forno già caldo per 30 min. a 250°. Qualora tendano a brunirsi troppo, coprire i peperoni con della stagnola e continuare la cottura. Togliere la stagnola 5 minuti prima di completare&nbsp;</p>
<p>- sfornare e servire</p>
