<p align="justify"><span><b>Le pizzette</b> sono le protagoniste indiscusse di <b>merende e buffet</b> e sono sempre molto gradite sia dagli adulti che dai bambini:<b> l’unico problema è che finiscono sempre troppo in fretta</b>!</span><br /><span>Di solito faccio le pizzette con la farina 0, ma questa volta ho voluto provare a fare metà farina 0 e metà semola, utilizzando la <b><a target="_blank" rel="nofollow" href="/redirect.php?URL=https://www.sicanisolidaleshop.com/prodotto/specialita-locali/farine-e-grani-antichi/farina-di-perciasacchi/" target="_blank">farina di Perciasacchi Pedalino</a></b> di <b><a target="_blank" rel="nofollow" href="/redirect.php?URL=https://www.sicanisolidaleshop.com/" target="_blank">SicaniSolidale</a></b>, una nobile farina macinata a pietra ottenuta da grani antichi siciliani coltivati nella zona di Agrigento.</span></p>
<p align="justify"><span><br /></span></p>
<p>INGREDIENTI (per circa 50/60 pizzette)</p>
<p>Per l’impasto:</p>
<p>farina 0 500 g</p>
<p>farina di semola 500 g</p>
<p>acqua tiepida 500 ml</p>
<p>lievito di birra fresco 1 cubetto da 25 g</p>
<p>olio extravergine d’oliva4 cucchiai</p>
<p>sale fino 2 cucchiaini</p>
<p>farina per la spianatoia</p>
<p></p>
<p>Per farcire:</p>
<p>mozzarella 300 g</p>
<p>salsa di pomodoro 300 g</p>
<p>olio extravergine d&#8217;oliva 2 cucchiai</p>
<p>sale 1 pizzico</p>
<p>origano secco</p>
<p></p>
<p>PROCEDIMENTO</p>
<p align="justify"><span>Impastare tutti gli ingredienti in una ciotola, amalgamando bene e impastando con le mani, fino ad ottenere un impasto liscio ed omogeneo.</span><br /><span>Formare una palla e metterla sotto una ciotola rovesciata: farla riposare tre ore a temperatura ambiente.</span><br /><span>Spianare la palla di pasta aiutandosi con il mattarello e un po’ di farina, fino ad ottenere una sfoglia alta circa 1/2 cm.</span><br /><span>Tagliare dei cerchi con il tagliapasta rotondo, ottenendo le pizzette.</span><br /><span>Impastare nuovamente la pasta in eccesso e farla lievitare coperta per qualche minuto prima di tirarla ancora con il mattarello e ricavare delle altre pizzette: proseguire così fino a terminare tutto l’impasto.</span><br /><span>Disporre le pizzette su carta da forno e pigiarle al centro con il fondo di un bicchierino leggermente infarinato, formando un piccolo incavo: versare un po&#8217; di salsa di pomodoro (condita con olio e sale) al centro con un cucchiaino e terminare con un cubetto di mozzarella.</span><br /><span>Cospargere con origano secco.</span><br /><span>Cuocere le pizzette in forno ventilato, preriscaldato alla massima temperatura (250°C), nella parte più bassa: bastano pochissimi minuti e sono pronte non appena la mozzarella si scioglie.</span><br /><span>Sfornare e servire subito.</span><br /><span>Quando sono fredde, si possono congelare e tirare fuori dal freezer per poi riscaldarle all’occorrenza.</span></p>
