<p><span><i>Abitualmente , le fettine di pesce spada vengono tagliate adeguatamente dai pescivendoli dei mercati o negozi ma, da tempo, si trovano anche surgelate .&nbsp;</i></span></p>
<p><span><i>Il ripieno è classico : pangrattato, formaggio grattugiato, passolina e pinoli, aglio tritato finissimo e prezzemolo.&nbsp;</i></span></p>
<p><span><i>Per dare una nota profumata in più, io metto a marinare le fettine in un salmoriglio di olio, limone e poco pepe con una spolverata di scorza di limone grattugiata.&nbsp;</i></span></p>
<p><span><i>Un piatto semplice e di grande successo, si può preparare in anticipo e cucinare brevemente al momento, sia in forno che sulla griglia.</i></span></p>
<p><i><span>Per tutti coloro che non trovano nei supermercati la passolina (<b>uvetta di Corinto</b>)e pinoli, possono sostituirla con uva passa precedentemente ammollata in acqua tiepida</span></i></p>

<p><span><b>Ingredienti per 4 persone:</b></span></p>
<p><span>- 1\2 kg di pesce spada affettato sottilissimo</span></p>
<p><span>- 1 limone scorza e succo</span></p>
<p><span>- 100 gr. di pangrattato</span></p>
<p><span>- 100 gr. formaggio grattugiato a piacere (io caciocavallo)</span></p>
<p><span>- 30 gr. di passolina e pinoli oppure un misto di uva passa e pinoli</span></p>
<p><span>- 1 spicchio aglio tritato finissimo</span></p>
<p><span>- 2 cucchiai di prezzemolo fresco tritato</span></p>
<p><span>- la scorza grattugiata di mezzo limone</span></p>
<p><span>- una macinata di pepe nero (facoltativo)</span></p>
<p><span>- olio etra vergine d&#8217;oliva</span></p>
<p><span>- sale q.b.</span></p>
<p><span>- foglie di alloro</span></p>
<p><span><br /></span></p>
<p><span><b>Procedimento:</b></span></p>
<p><span>- in una ciotola preparare un salmoriglio con 4 cucchiai d&#8217;olio d&#8217;oliva, il succo di mezzo limone, un pizzico di sale, una macinata di pepe (facoltativo)</span></p>
<p><span>- immergere le fettine di pescespada e mescolare bene. Lasciare riposare 10 minuti</span></p>
<p><span>- in una ciotolina aggiungere il pangrattato, il formaggio, la scorza grattugiata di mezzo limone, l&#8217;aglio tritato finissimo, il prezzemolo tritato e 2 cucchiai di olio d&#8217;oliva</span></p>
<p><span>- mescolare bene</span></p>
<p><span>- stendere la fettina di pesce spada su un piatto, cospargere bene con il ripieno, arrotolare e mettere da parte sino ad esaurimento degli ingredienti</span></p>
<p><span>- passare gli involtini nel pangrattato&nbsp;</span></p>
<p><span>- infilzare gli involtini in uno spiedo , alternandoli con foglie d&#8217;alloro e fettine di limone</span></p>
<p><span>- disporre gli spiedini in una teglia</span></p>
<p><span>- cuocere in forno, già caldo,&nbsp; a 200° per 15 minuti</span></p>
<p><span>- servire caldi</span></p>

<p><i><span><br /></span></i><br /><b>Ingredienti</b><br />- 250 gr. farina Manitoba<br />- 250 gr. farina 00<br />- 150 gr. latte tiepido<br />- 150 gr. acqua tiepida<br />- 80 gr. di zucchero<br />- 20 gr. di lievito di birra<br />- 10 gr. sale<br />- 80 gr. di strutto<br />- 1 bustina vanillina<br />- la scorza grattugiata di un limone</p>
<p><b>per la superficie:</b><br />- 50 gr. acqua<br />- 2 cucchiai di miele<br />- zucchero semolato</p>
<p><b>Procedimento manuale:</b><br />- in una ciotola mettere tutti gli ingredienti tranne lo strutto e il sale<br />- impastare energicamente (io nella planetaria con il gancio a spirale)<br />- aggiungere lo strutto e il sale e continuare ad impastare sino a che il composto diventa liscio e omogeneo<br />- mettere a lievitare in una ciotola coperta, sino al raddoppio<br />- sgonfiare lievemente l&#8217;impasto e fare le pieghe a libro (guardare le foto)<br />- lasciare riposare 20 minuti<br />- formare le palline di 100 gr. ciascuna e dare la forma di una treccina o di una brioche<br />- spennellare con acqua e latte e fare raddoppiare nuovamente , coperte<br />- infornare in forno già caldo a 200° per 10 minuti<br />- sfornare le brioche e ancora calde spennellarle con l&#8217;acqua e miele, passarle nello zucchero semolato<br />- si possono anche congelare</p>
<p><b>Procedimento Bimby:</b><br />- inserire nel boccale l&#8217;acqua, il lievito, lo zucchero 1 min , 37°, vel 2<br />- aggiungere le farine, la scorza grattugiata del limone, la vanillina 30 sec. vel. 7 , 2 min. vel. Spiga<br />-aggiungere il sale e lo strutto a fiocchetti 2 min. vel. Spiga<br />- lasciare lievitare nel boccale sino al raddoppio<br />- sgonfiare lievemente l&#8217;impasto e fare le pieghe a libro (guardare le foto)<br />- lasciare riposare 20 minuti<br />- formare le palline di 100 gr. ciascuna e dare la forma di una treccina o di una brioche<br />- spennellare con acqua e latte e fare raddoppiare nuovamente , coperte<br />- infornare in forno già caldo a 200° per 10 minuti<br />- sfornare le brioche e ancora calde spennellarle con l&#8217;acqua e miele, passarle nello zucchero semolato<br />- si possono anche congelare</p>

<p><i><span>Piatto e strofinacci <a target="_blank" rel="nofollow" href="/redirect.php?URL=http://www.greengate.dk/">GreenGate</a></span></i></div>
<p><b>Ingredienti per 4 persone:</b><br />- 2 melanzane<br />- 100 gr. di pan grattato<br />- 50 gr. di formaggio tritato grossolanamente &nbsp; <a target="_blank" rel="nofollow" href="/redirect.php?URL=http://www.provolafioriglio.it/">Provola Fioriglio</a><br />- 4 cucchiai di basilico fresco tritato<br />- 1 spicchio d&#8217;aglio tritato<br />- 50 gr. di mortadella tritata finissima<br />- 700 gr. di salsa di pomodoro (1 bottiglia)<br />- 1\2 bicchiere di olio extravergine d&#8217;oliva<br />- olio per friggere le melanzane</p>
<p><b>Procedimento:</b><br />- lavare e affettare &nbsp;le melanzane<br />- riporle, a strati, in una larga ciotola spolverizzando le fette con un pò di sale<br />- lasciare spurgare l&#8217;acqua amarognola delle melanzane per 1 ora<br />- sciacquare abbondantemente le fette<br />- in una larga padella scaldare , abbondante, olio di semi<br />- friggere le fette da entrambi i lati e mettere da parte</p>
<p>- nel frattempo preparare la farcia degli involtini:<br />- in una ciotola mettere il pan grattato, la mortadella e la provola tritati grossolanamente, il basilico fresco, 2 cucchiai d&#8217;olio d&#8217;oliva, l&#8217;aglio tritato e mescolare</p>
<p>- scaldare la salsa di pomodoro, aggiustare di sale e cuocere per 5 minuti a fuoco basso<br />- aggiungere, a fine cottura, 2 cucchiai d&#8217;olio d&#8217;oliva</p>
<p>- stendere le fette di melanzana fritte e spalmare, su ognuna, parte della farcia<br />- arrotolare le fette e metterle in una pirofila<br />- procedere sino ad esaurimento degli ingredienti<br />- versare sugli involtini qualche cucchiaiata di salsa pronta e un pò di formaggio grattugiato<br />- infornare a 200° per 15 minuti<br />- servire</p>
