<div>Una delle cose che nel frigorifero non manca mai sono le mele candite e la mostarda. Riguardo alle mele le preparo in casa da anni, per la mostarda mi affido al prodotto in commercio, ma prima o poi anche quella la devo preparare da me.</div>

<div>La sua ricetta prevedeva di candire le pere, io l&#8217;ho leggermente variata aggiungendo la senape, ma vi assicuro che sia in un modo che nell&#8217;altro son davvero strepitose.</div>
<div>Il procedimento non richiede lavoro ma pazienza.&nbsp;</div>
<div>Io ho scelto di candire delle piccole pere perchè le preferisco e per poterle lasciare intere, ma vanno bene anche delle normali pere Kaiser.</div>

<p>Un una pentola che possa contenere un cestello o uno scolapasta (poi capirete il perchè), preparare uno sciroppo unendo lo zucchero, il glucosio e l&#8217;acqua.

<p>le pere non saranno trasparenti (il metodo corretto richiederebbe l&#8217;uso da misurare del rifrattometro per verificare il raggiungimento dei 70° brix, ma non avendolo mi sono affidata al metodo che utilizzo per questo procedimento e cioè verificare la trasparenza del frutto).</p>

<p>Come ultimo passaggio portare nuovamente a bollore lo sciroppo, se le volete senapate aggiungere la polvere di senape (o le gocce) e mescolare fino a scioglimento.<br />La quantità di senape dipende molto dai gusti.</p>
<p>Per la conservazione ho messo le pere in un vaso di vetro precedentemente&nbsp;<a target="_blank" rel="nofollow" href="/redirect.php?URL=https://annaincasa.blogspot.com/2013/07/sterilizzazione-vasetti-in-vetro.html" target="_blank">sterilizzato</a>&nbsp;, lo sciroppo versato ancora bollente sulle pere candite, chiudere ermeticamente. Pastorizzare il vaso in acqua bollente per una ventina di minuti e lasciare poi raffreddare prima di conservare.</p>
<p>Noi le abbiamo assaggiate dopo una settimana e ci sono piaciute moltissimo.</p>
