<div><span><i>mura , tanto da favorire la nascita di un biscottificio che diventò il più antico di Monreale.</i></span></div>
<div><span><span><i>Poco dolci, vengono completati con qualche goccia di glassa che bilancia il gusto e li rende perfetti in ogni momento della giornata. Sicuramente&nbsp; rustici, come tutte le ricette antiche di casa, friabili e profumati&nbsp;</i></span></span></div>

<p>Ingredienti per 36/40 biscotti</b></div>
<div><span><span>- 500 gr. farina 00</span></span></div>
<div><span><span>- 150 gr. zucchero</span></span></div>
<div><span><span>- 150 gr. strutto</span></span></div>
<div><span><span>- 1 uovo intero + 1 tuorlo (tenere da parte l&#8217;albume per la glassa)</span></span></div>
<div><span><span>- 5 gr. di ammoniaca</span></span></div>
<div><span><span>- 100 gr. di latte</span></span></div>
<div><span><span>- 200 gr. di zucchero a velo</span></span></div>
<div><span><span><br /></span></span></div>
<div><span><span><b>Procedimento :</b></span></span></div>
<div><span><span>- sciogliere l&#8217;ammoniaca nel latte e mescolare (farà un po di schiuma)</span></span></div>
<div><span><span>- in una planetaria o ciotola impastare la farina con il latte e l&#8217;ammoniaca</span></span></div>
<div><span><span>- aggiungere lo zucchero</span></span></div>
<div><span><span>- aggiungere lo strutto morbido</span></span></div>
<div><span><span>- aggiungere l&#8217;uovo intero e il tuorlo</span></span></div>
<div><span><span>- aggiungere 1 cucchiaino di estratto di vaniglia o 1 bustina di vanillina</span></span></div>
<div><span><span>- impastare sino ad ottenere un composto liscio e omogeneo</span></span></div>
<div><span><span>- avvolgere il panetto nella pellicola e lasciare riposare in frigo per mezz&#8217;ora</span></span></div>
<div><span><span>- passato il tempo, riprendere l&#8217;impasto e fare dei rotolini</span></span></div>
<div><span><span>- tagliarli di 7/8 cm e dare la forma di S&nbsp;</span></span></div>
<div><span><span>- poggiarli in una teglia con carta forno, distanziandoli perchè in cottura si gonfiano</span></span></div>
<div><span><span>- infornare in forno caldo a 200° per 15 minuti</span></span></div>
<div><span><span>- lasciare raffreddare</span></span></div>
<div><span><span>- preparare la glassa con lo zucchero a velo e l&#8217;albume</span></span></div>
<div><span><span>- mescolare bene sino ad ottenere un composto liscio</span></span></div>
<div><span><span>- con l&#8217;aiuto di una sac a poche , o un cucchiaino, versare sui biscotti qualche goccia di glassa e lasciare asciugare</span></span></div>
