E proprio in questo quartiere, al n.4 di Rue Suffren Reymond, ha casa uno degli ultimi trend che spopola su TikTok: Le Relais de Venise, storico ristorante di Parigi, che oramai ha aperto sue filiali in tutto il mondo.

La Storia: Il Genio del Menù Fisso

La storia nasce per l’appunto a Parigi, quando il viticoltore Paul Gineste de Saurs, rileva un piccolo ristorante a Portae Maillot (tenete a mente questo nome, lo ritroverete più avanti), nel 17° arrondissement di Parigi, il cui nome era appunto “Le Relais de Venise”. Gineste de Saurs non cambiò il nome del locale ma, con un colpo di genio, rivoluzionò completamente la formula del servizio e del menu.

Decise di offrire un menù fisso, specializzandosi sulla perfezione di un unico piatto, il controfiletto, l’entrecôte, servito con una salsa segreta (che pare ancora oggi esser un segreto ben custodito) e le patatine fiammifero (pommes allumette).

Il tutto servito in due volte, in modo tale da mantenere calda la carne e la sua salsa di condimento.

L’intuizione si rivelò talmente azzeccata che oggi, diversi Relais de Venise sono stati aperti in Francia, Europa e Oltreoceano.

L’Atmosfera: Un Bistrot Parigino nella Vecchia Monaco

Ma veniamo alla nostra filiale monegasca…

Subito siamo catapultati in un’atmosfera da bistrot parigino, un ambiente accogliente, vivace, lontano da tutte le formalità delle grandi griffe monegasche, accessibile e popolare.

Anche la simpatia e gentilezza della nostra cameriera, scusami cara, non me ne volere ma non ricordo il tuo nome, ci fa sentire a nostro agio. I tavoli sono molto piccoli, altro viaggio nel tempo, applique con paralume di stoffa giallo alle pareti e sedie che porca zozza, avessi conservato quelle che aveva in casa il nonno materno, adesso le avrei immediatamente messe nella mia cucina!

Il Piatto Unico: Entrecôte e Salsa Segreta

E subito dopo ecco sua maestà l’entrecôte, per me servita al sangue e per mio marito blu, in pratica quasi cruda, inondati di salsa segreta. Immediatamente di seguito le pommes alumette invadono il nostro piatto.

La carne è fantastica, senza un filo di grasso, tenera, gustosa e cotta divinamente. A detta di marito, che mi conosce bene, è rimasto scioccato dal fatto che io abbia mangiato una entrecôte cotta in tale maniera e sopratutto, in tale quantità. Non sono una grande fan della carne rossa, ma quando è buona è buona!

Parliamo della salsa, scopro mentre scrivo questo post che, con l’avvento di internet, pare non sia più tanto segreta, ma posso solo dire che è a base di senape. Poi che ci sia aglio, burro o panna, poco importa, sicuramente timo, prezzemolo, dragoncello o forse del basilico, son presenti a dar freschezza, acciughe e/o salsa worchester si, capperi boh, vorrei saperla fare per condire d’ora in poi tutta la mia carne così.

Si parte subito con l’antipasto, una croccante insalatina verde con noci e condita con una classica vinagrette alla senape, siamo in Francia, la senape impera!

Il Secondo Servizio: L’Elemento Sorpresa

Ad un tratto, e questa cosa dei due servizi, mica l’avevamo capita tanto siamo abelinati, arriva la nostra cameriera con un altro chilo di patatine e il resto della nostra carne affogata in altrettanta salsa, mantenuta al caldo con la candela nello scaldavivande. Più retrò e bohémienne di così non so che dirvi.

E si riparte.

La Salade, L’entrecôte, una montagna di pommes allumette, che avevano il sentore di burro, croccanti e golosissime, una bottiglia di champagne (si doveva festeggiare, ma i prezzi comunque dei vini non sono esagerati), insomma, dopo tutto questo, avremmo dovuto assaggiare anche i dolci.

Sinceramente non siamo riusciti. Ma pare siano molto famosi. Vi lascio una foto del banco dei “dolci finti” che fa tanto anni 80 e tanto tanto trash rispetto l’atmosfera romantica che si respira in questo locale.

Il caffè è compreso nel prezzo del menù, come pure l’acqua naturale che in Francia, ti servono del rubinetto ed è buonissima, e a mezzogiorno, dal lunedì al venerdì, includono anche un bicchiere di succo di mela, una birra piccola, non vorrei sbagliarmi, ma qualcosa includono… chiedete.

Il libro “La moglie del monaco” e il Provolone del monaco Dop Il 14 ottobre scorso, nel meraviglioso scenario della cantina ‘Abbazia di Crapolla’  c’è stata la prima presentazione di un romanzo dedicato al  Provolone del Monaco ”La Moglie del Monaco”, scritto dal direttore del Consorzio di Tutela Vincenzo Peretti e dallo scrittore Tonino Scala.

La narrazione  scorre piacevolmente e si svolge ai giorni nostri, con ampi riferimenti ai decorsi storici che vanno dal dopo guerra all’epoca in cui i provoloni arrivavano a Napoli dalla Costiera attraverso i gozzi, fino al riconoscimento della Dop.
Ad attraversare il periodo storico, il racconto di una nonna, Maria, che per la fine settimana ospita il suo nipotino, Tonino, che tutte le volte che va da lei, le chiede ancora una volta di raccontare il suo incontro con il nonno, un monaco (leggendo il libro capirete!), che non c’è più.
I ricordi della nonna, che si diramano tra le verdi colline dei Monti Lattari che guardano il Golfo di Napoli, tra gli splendidi panorami di Vico Equense, tra memorie gustative, olfattive e tradizioni che Tonino,  ma anche Aniello, suo papà, riascoltano sempre con piacere, rivivendo  la storia d’amore tra nonna Maria e nonno Antonino che s’incrocia con la storia del Provolone del monaco e  contemporaneamente con  il periodo di sviluppo delle strade costiere verso il capoluogo.

Un libro da assaporare pagina dopo pagina, che risveglia ricordi di vita lenta e tempi lontani dal caos attuale, e racconta la storia di questo prodotto unico,  fortemente identitario e legato al territorio di produzione.

“La Moglie del Monaco” è un viaggio di gusto, nella storia nostra e del Provolone del Monaco Dop e sarà pubblicato anche in inglese.
La presentazione, moderata dal giornalista Roberto Esse (che si ringrazia per il cortese invito), ha visto la partecipazione degli autori, di Giosuè De Simone presidente del Consorzio di Tutela del Provolone del Monaco Dop che ha aperto la mattinata e Michele Cuomo di Pizza a Vico.
La mattinata si è conclusa con un buffet a base di Provolone del Monaco dop e pizze: una con fiordilatte, pomodorini gialli, scarola riccia e Provolone del Monaco e l’altra con fiordilatte, noci, miele e Provolone del Monaco, entrambe deliziose, seguite da una classica margherita, servite con i vini di Abbazia di Crapolla.

A cavallo tra gli anni 1981 e 1982, Helmut Newton e sua moglie June si trasferirono defintitamente da Parigi a Monte Carlo. Il trasferimento rappresentò non solo una svolta nella loro quotidianità, ma anche un profondo cambiamento nell’approccio visivo e nella visione artistica e produttiva di Newton. L’amore di Newton per la Costa Azzurra, tuttavia, era ancora più profondo. Già nel 1964, lui e la moglie June acquistarono una piccola casa vicino a Ramatuelle, non lontano da Saint-Tropez, che divenne sia un rifugio estivo che uno spazio per il loro lavoro creativo. La mostra include una vasta gamma di stampe d’epoca, comprese alcune stampe vintage realizzate durante la vita dell’artista.

Negli anni ’80 e ’90, gli insoliti servizi fotografici di moda di Newton lo portarono a Cannes e Nizza, e successivamente in altre parti della Costa Azzurra: Cap d’Antibes, Saint-Jean-Cap-Ferrat, Mentone e anche oltre il confine italiano fino a Bordighera. A oltre vent’anni di distanza, questa nuova esposizione di stampe originali in grande formato suggella idealmente quel viaggio artistico. Il suo ultimo lavoro fotografico, un servizio di moda per Vogue Italia, si svolse anch’esso sulla costa di Monaco. Uno dei motivi è ora esposto come un enorme wallpaper nella nuova mostra, che, con oltre 100 fotografie, può ovviamente mostrare solo una piccola parte di questo aspetto del suo lavoro.

In due occasioni negli ultimi anni, la Fondazione Helmut Newton ha presentato collezioni fotografiche private oltre alle sue mostre personali e di gruppo tematiche. La prima fu Between Art & Fashion (collezione privata di Carla Sozzani, 2018) e la seconda Chronorama (Pinault Collection, 2024). Entrambe presentarono una vasta gamma di immagini iconiche dalla storia della fotografia. L’attuale collaborazione, con la Collection FOTOGRAFIS del Bank Austria Kunstforum Wien, comprende più di 60 dittici. Ogni dittico accosta due immagini — ritratti, nature morte, paesaggi, architetture o visioni surreali della moda e del nudo — provenienti da epoche differenti.

Questa nuova mostra sperimentale presso la Fondazione Helmut Newton esplora le molteplici sfaccettature dell’esperienza umana e l’evoluzione della vita sociale nel corso di un secolo. Include opere di artisti come Edward Weston, Minor White, Elliott Erwitt, Florence Henri, Duane Michals, Paul Strand, Man Ray, August Sander, Judy Dater, Otto Steinert e altre figure chiave del canone fotografico del XIX e XX secolo.

Nelle prime tre sale espositive, sono esposte immagini di moda per il settore del lusso, ad esempio le interpretazioni di Newton dello stile, dell’alta moda e del prêt-à-porter di Yves Saint Laurent. Oppure quelle per Wolford, pubblicate nel 1993 e nel 1994 come calendari per clienti esclusivi. Newton ha realizzato anche fotografie pubblicitarie di creazioni di diversi designer per la catena americana di grandi magazzini di lusso Neiman Marcus, insieme ad esempi della pluriennale stretta collaborazione di Newton con Anna Molinari e il suo marchio Blumarine, con modelle come Monica Bellucci, Carla Bruni e Carré Otis, realizzate a Nizza e Monaco nel 1993 e nel 1994.

A completare la presentazione ci sono fotografie di altre collaborazioni con Swarovski, Volkswagen e Chanel. A metà degli anni ’70, Newton ha anche girato due campagne pubblicitarie per il famoso profumo Chanel N.5 con Catherine Deneuve. In alcune vetrine sono distribuite Polaroid selezionate, provini a contatto analogici di servizi pubblicitari, lookbook di clienti di moda, che sottolineano i diversi usi della fotografia pubblicitaria di Newton.

La sua collaborazione con marchi di moda, al di fuori dei servizi fotografici per le varie riviste, è iniziata presto. Tra il 1962 e il 1970 ha lavorato con Nino-Moden di Nordhorn, la più grande azienda tessile tedesca dell’epoca, e nel 1968, ha scattato foto per il catalogo Biba di Londra. Nello stesso anno, ha preso una commissione dalla casa automobilistica francese Citroën. Per decenni, Newton ha messo in scena prodotti quotidiani e di lusso, diventando un collegamento tra produttori e consumatori attraverso le sue fotografie e la loro pubblicazione. Le sue narrazioni visive erano universalmente comprensibili, quindi gli editori di riviste potevano facilmente includerle nelle loro diverse edizioni nazionali, sia come immagini che accompagnavano gli articoli o come pubblicità. Questa serie di immagini è presentata per la prima volta come parte di una retrospettiva della fotografia pubblicitaria di Helmut Newton, un’area spesso sottovalutata. ma influente nel mondo della fotografia, ed anche uno degli aspetti più importanti e affascinanti del suo lavoro. Helmut Newton ha spaziato in diversi settori dalla moda al caffè, dagli orologi da polso alla bigiotteria, dai sigari al vino, da televisori all’argenteria.
