<p><strong>INGREDIENTI</strong> (per 3 ciabatte grandi)</p>
<p>Per la pasta lievitante: 
<ul>
<li>farina di farro integrale 500 g</li>
<li>acqua tiepida 500 g</li>
<li>lievito di birra 1 cubetto (25 g)</li>
<li>miele di castagno 1 cucchiaio colmo</li>
<ul></ul>
</ul>
<p>Per l&#8217;impasto finale: 
<ul>
<li>farina di farro integrale 500 g</li>
<li>acqua tiepida 200/250 g</li>
<li>sale fino 20 g</li>
<li>farina per la spianatoia</li>
<ul></ul>
</ul>
<p><strong>PROCEDIMENTO</strong><br /> 
<div>Unire tutti gli ingredienti della pasta lievitante in una terrina, amalgamare bene (deve rimanere abbastanza liquida) e <strong>far lievitare coprendo con una ciotola</strong> e un canovaccio <strong>fino ad ottenere una superficie ricoperta di bolle</strong> (circa 1 ora).</div>
<div>Unire gli ingredienti del secondo impasto e <strong>lavorare energicamente con le mani</strong>, fino ad ottenere un <strong>impasto liscio ed omogeneo</strong> (piuttosto morbido, quasi colloso): versare farina abbondante sulla spianatoia e versarvelo sopra, <strong>stendendolo con le mani infarinate fino allo spessore di circa 1,5 cm</strong>, infarinandolo molto bene anche sopra.</div>

<div><strong>Tagliare l’impasto ricavando</strong> otto parallelepipedi, infarinarli bene su ogni lato e porli in una teglia da forno (togliendo un po’ della farina in eccesso) a <strong>lievitare fino al raddoppio</strong> (circa 1 ora).</div>
<p></strong><strong>
<div><strong>Cuocere in forno preriscaldato a 250°C</strong> nella griglia centrale del forno, fino a <strong>leggera doratura</strong> (circa 15/20 minuti).</div>
<p></strong>
<div>Sfornare, far raffreddare e <strong>passare 5 minuti in forno prima di servire.</strong></div>
<div>Una volta fredde, <strong>le ciabatte si possono conservare in freezer</strong>: al momento dell’uso, scongelarle <strong>qualche ora prima e passarle cinque minuti in forno caldo</strong> per donargli nuovamente fragranza.</div>

<div><strong>PROCEDIMENTO</strong></div>

<div>Mettere la farina in una ciotola con al centro il lievito sbriciolato, unire miele, olio, acqua, sale e impastare pochi minuti,&nbsp;<strong>fino ad ottenere una palla omogenea</strong>.</div>

<div>Mettere la palla sotto una ciotola e&nbsp;<strong>farla lievitare 3 ore</strong>&nbsp;a temperatura ambiente.</div>

<div>Ricavare dall’impasto&nbsp;11<strong>&nbsp;palline</strong>.</div>

<div>Disporre le palline&nbsp;in una teglia da forno leggermente unta d&#8217;olio:&nbsp;<strong>far lievitare a temperatura ambiente fino a raddoppio (circa un’ora).</strong></div>

<div>Spennellare tutta la superficie&nbsp;con il&nbsp;<strong>tuorlo d’uovo sbattuto</strong>.</div>
<p></span><span>
<div>Cuocere a&nbsp;<strong>200°C per circa 15/20 minuti</strong>&nbsp;in forno ventilato.</div>

<div>Sfornare, far raffreddare e servire.</div>
