Il caffè leccese è una bevanda tradizionale salentina preparata con caffè, meglio se fatto con la moka e il dolce latte di mandorle pugliese.

E’ perfetto nelle calde giornate estive in alternativa al classico caffè shakerato.

Vi svelo una mia mania, in estate non bevo quasi mai il caffè espresso, mi piace prepararmi a casa un buon caffè freddo, preparato con lo shaker o con il frullatore. Adesso che ho scoperto questa ricetta, che rispetto alla tradizionale ha subito una piccola modifica, mi sa che la alternerò al mio caffè shakerato.

Nella ricetta tradizionale bisogna utilizzare il latte di mandorle dolce, tipico del salento, ma praticamente introvabile nel resto d’Italia. Per ovviare a questo inconveniente possiamo zuccherare il caffè prima di congelarlo.

Ingredienti per il caffè leccese

250 g caffè (una moka da 4 persone)

250 ml latte di mandorle

8 cucchiaini zucchero

Preparazione del caffè leccese

Preparate la moka di caffè e lasciate raffreddare completamente. Riempite gli stampini per il ghiaccio a cubetti e riponete in congelatore per alcune ore. I cubetti devono essere completamente ghiacciati. Io di solito li lascio tutta la notte.

Mettete in frigorifero anche il latte di mandorle, in modo che sia ben freddo al momento di preparare il caffè leccese.

Mettete alcuni cubetti di caffè ghiacciato in un bicchiere e versate il latte di mandorla freddo.

Gustate subito.

Il caffè può essere utilizzato per tante ricette, sia dolci che salate. Nel tempo ne ho preparate alcune molto particolari.

Il poke è la nuova mania del momento. Specialità hawaiana a base di pesce crudo, sta sostituendo la moda del sushi. Anche se per me il sushi rimane sempre al primo posto, dopo averlo mangiato in un ristorante, ho deciso di creare la mia versione decisamente estiva.

Il Poke è un piatto hawaiano a base di pesce crudo. La parola vuol dire “tagliare a pezzetti” e fa riferimento al fatto che gli ingredienti sono tagliati a cubetti. Se fino all’anno scorso nessuno che non fosse stato in vacanza nelle isole del Pacifico sapeva di cosa si trattasse, ora se non mangi Poke sei decisamente fuori moda.

Poke da spiaggia – salmone, anguria e cetrioli

Visto che la sera avevo mangiato una cena pesante, volevo fare un poke per il mio pranzo una versione senza carboidrati. Di solito si trovano solo con una base di riso, ma io lo preferisco di gran lunga così.

Ci ho pensato un pò ed è nato questo, fresco e delizioso poke.

INGREDIENTI X1 (mi scuso per le dosi approssimative, ma sono sicura che ce la farete)

• 150gr di salmone 
• Una fetta di anguria
• Un cetriolo grande (io ne ho usato uno stranissimo, tondo che pare si chiami Carosello. Sembrava quasi melone giallo, ma non dolce).
• Menta, coriandolo e rucola, qualche foglia
• Un pezzo di zenzero
• 2 lime
• Pepe rosa
• Sale qb 

Salmone e gli altri ingredienti del Poke

Pulite la fetta di salmone, togliendo la pelle e l’osso. Io ho preso una fetta, ma va benissimo anche il filetto. Tagliatelo a cubetti e irroratelo di abbondante succo di lime. Aggiungete qualche foglia di coriandolo e menta tritati fini e zenzero grattuggiato. Coprite e mettete in frigo almeno un’ora.

Salmone marinato con lime, zenzero e aromi

Nel frattempo tagliate a cubetti tutti gli altri ingredienti e tirtate grossolanamente gli aromi.
Togliete dal frigo ed assemblate il piatto, usando una ciotola. Io l’ho scelta larga, perchè mi piaceva disporre gli ingredienti separati.

Condite poi il tutto con ulteriore lime, sale e se vi piace, poca soia. Giuro che ci sta bene, anche sull’anguria!

Mangiatelo subito, accompagnato da un bicchiere di bianco ghiacciato :-)
Direi che siamo pronti per le Hawaii!

Quest’anno ho la mania per le ghirlande, di qualunque tipo e di qualunque materiale. Questa di oggi è ovviamente in veste natalizia, visto il periodo,ed è un’idea originale per servire un aperitivo o l’antipasto al posto del classico tagliere.
Si può arricchire con formaggi a scelta e perchè no anche con roselline di salumi in modo da portare in tavolo il classico antipasto all’italiana.

E’ molto scenografica come centrotavola e potete scegliere le dimensione aumentando o diminuendo la quantità di ingredienti ed arricchirla on altri  ingredienti a piacere.

Di carattere non sono una che si butta. Sono sempre stata una persona che ha bisogno di programmare, una che spesso è insicura, soprattutto quando si tratta delle mie capacità. Ogni volta che devo decidere per me, su cosa fare, cosa scrivere, cosa dire, ho mille difficoltà.
Sperimentare in cucina è forse, e dico forse, una delle poche cose che faccio senza pensarci troppo. Mi piace provare e vedere che pasticcio ne salta fuori.
Ultimamente ho la mania del “fatto in casa” e sto provando varie preparazioni, alcune con esito positivo altre meglio negare di averle fatte. Chi mi segue su Instagram ha la prova di uno dei miei fallimenti della settimana scorsa.
Una prova decisamente degna di nota positiva è invece la mia preparazione dell’aroma vaniglia, che d’ora acquisterò sempre meno.

Se volete un aroma più concentrato diminuite la quantità di liquore o aumentate il numero di baccelli anche del doppio.
Se non avete il Brandy, potete preparare l’aroma anche con la Vodka o con il Rum.

Ingredienti

2 baccelli di vaniglia Bourbon
100 ml di Brandy

Preparazione

Lasciare macerare 30 giorni al buio, avendo cura di scuotere il liquido una volta al giorno.
Trascorso il tempo di riposo, potrete utilizzare l’aroma per la preparazione di dolci e creme.

Quando ero piccola, mi piaceva andare a fare la spesa con i miei genitori, girare con il carrello, che rigorosamente dovevo spingere io, per i reparti e riempirlo. Come mio papà avevo la mania di dividere i prodotti a seconda del tipo, freschi o da dispensa, e in base al loro utilizzo. E’ una mania che ho ancora e che spesso è oggetto di presa in giro.
Ricordo anche che ogni volta chiedevo sempre una cosa: il succo di frutta in bottiglietta. Non mi piaceva quello nel tetrapak, doveva essere in vetro.
Anche i miei figli bevevano i succhi di frutta il bottiglietta, mi ricordo che li travasavo nel biberon, si sdraiavano sul divano e facevano merenda.
L’anno scorso per la prima volta ho provato a preparare il succo di frutta alla pesca ed era venuto davvero buonissimo. Ora ho provato a preparare quello alle albicocche che ha ottenuto lo stesso successo.

Ingredienti

2 kg di albicocche mature
2 litro di acqua (io minerale naturale in bottiglia)
360 g di zucchero semolato
succo di 2 limoni

Preparazione

Per la conservazione del succo cliccare  QUI  per sterilizzare le bottiglie.

Lavare le albicocche, tagliarle a metà, denocciolarle e farle a dadini. 
In una pentola abbastanza capiente versare l’acqua e lo zucchero e cuocere a fiamma bassa fino al bollore. Unire le albicocche e il succo di limone, cuocere per 10 minuti, mescolando di tanto il tanto ma senza allontanarsi dal piano di cottura.
Con il minipimer ad immersione, frullare il composto fio ad ottenere un succo liscio e vellutato.
Con la schiumarola o un colino, eliminare la schiuma che si è formata in superficie.
Con l’aiuto di un imbuto con all’interno posizionato un colino (se si vogliono eliminare residui di fibre), imbottigliare il succo, chiudere con il tappo e capovolgere fino al raffreddamento del contenuto.
Se non consumate nell’immediato il succo, trasferire le bottiglie in una pentola piena di acqua fredda e con un panno sul fondo (per evitare che le bottiglie si rompano) e portare a bollore. Far bollire per una trentina di minuti. Lasciare raffreddare completamente prima di toglierle dall’acqua e conservarle.
Agitare bene prima di consumare il succo.
