<p>In un grazioso ristorante tipico di Malles in Val Venosta, circondato dalle Alpi dell’Ötztal, dall’Ortles-Cevedale a sud e dal Gruppo Sesvenna ad ovest, ho scoperto dei dolcetti tipici che per questo periodo carnevalesco sono proprio l&#8217;ideale. Si chiamano mohnkrapfen e sono simili a frittelle ripiene di marmellata. Io non amo particolarmente i cibi fritti ma devo dire che queste specialità altoatesine sono davvero deliziose.</p>

<div><b>Ingredienti per la pasta:</b></div>

<div>500 g di farina</div>
<div>60 ml di latte tiepido&nbsp;</div>
<div>60 ml di olio</div>
<div>60 ml di acqua tiepida</div>
<div>1 cucchiaio di rum</div>
<div>1 cucchiaio di zucchero</div>
<div>2 tuorli d&#8217;uovo</div>
<div>1 uovo</div>
<div>1 pizzico di sale</div>

<div>&nbsp;<b>Ripieno:</b></div>
<div>Marmellata di mirtilli rossi</div>
<p>Metti la farina in una ciotola capiente e mescola con latte, olio, acqua, rum, zucchero, tuorlo d&#8217;uovo, uovo e sale, quindi impasta fino a ottenere un impasto liscio. Copri e lascia riposare per 20 minuti.<br />Dividi l&#8217;impasto in due pezzi, stendilo e taglialo in strisce larghe 10 centimetri.<br />Aggiungi il ripieno di marmellata a metà della striscia a intervalli regolari, piega il bordo insieme, premi i bordi con le mani e usa la ruota per impastare le frittelle.<br />Scaldare l&#8217;olio e cuocere le ciambelle fino a quando diventano croccanti da un lato, quindi girare e cuocere sul secondo lato. Scolare il grasso su un tovagliolo di carta, cospargere di zucchero a velo e servire con vino passito o una tazza di caffè.</p>
