Dopo il progetto bisogna fare la programmazione. Gli step principali sono:

Ingredienti per una Torta Paradiso Moderna di Iginio Massari diametro 24 cm

Preparazione

28 febbraio 2016 – Venezia “Gusto in scena” – il maestro Leonardo Di Carlo ed io

Ingredienti per un Pan di Spagna al cacao di Leonardo Di Carlo 

Ingredienti per un Pan di Spagna classico alle nocciole di Leonardo Di Carlo 

per una tortiera da 24 cm 

• 500 g di uova intere
• 235 g di zucchero semolato
• 25 g di zucchero invertito (o miele delicato)
• 5 g di buccia di limone grattugiato
• 1,5 g di sale fino
• 235 g di farina debole W 150-170
• 150 g di farina di nocciole
• 60 g di burro fuso a 45°

Preparazione

Unire i primi cinque ingredienti, mescolare e scaldare tutto a 45°-50°C. Inserire il tutto in planetaria e montare con la frusta fino ad ottenere una massa voluminosa e stabile. Incorporare delicatamente la farina setacciata (due volte) unita alla farina di nocciole. Prelevare 1/10 dalla massa e unire a questa il burro fuso. Quindi aggiungere delicatamente al resto della massa, inserire nello stampo precedentemente imburrato ed infarinato e cuocere subito a 170 – 180° per 20 – 25 minuti (per tortiere alte 4-4,5 cm), tenendo un cucchiaio di legno fra lo sportello del forno.

Le creme per la farcitura

Ingredienti per la Namelaka di Maurizio Santin 

Namelaka in giapponese significa “molto morbido” ed indica la texture di questa ganache. L’aggiunta della gelatina, dona al composto una certa corposità che consente di utilizzare una parte di latte al posto della panna, che dona una texture delicata capace di inglobare aria quando viene montata senza perdere la leggerezza al palato

• 530 g di cioccolato al latte o 510 g di cioccolato bianco o 380 g di cioccolato fondente al 70%
• 300 g di latte fresco
• 15 g di glucosio
• 5 g di gelatina in fogli
• 600 g di panna fresca

Preparazione

Bollire il latte con il glucosio, aggiungere la gelatina ammorbidita precedentemente in acqua fredda e versare sul cioccolato ridotto in pezzi. Mescolare bene ed emulsionare con il frullatore ad immersione. Aggiungere la panna fresca e conservare in frigorifero per almeno 10 – 12 ore. Al momento dell’utilizzo, montarla in planetaria o con lo sbattitore elettrico ed utilizzarla. Comunque la Namelaka si può usare anche senza montarla.

Cremoso al mascarpone ed arancia di Leonardo di Carlo

Il cremoso, è una crema strutturata, cremosa, stabile e vellutata, grazie alla cristallizzazione dei grassi presenti nella ricetta. Si usa quando c’è bisogno di dare struttura.

• 200 g di latte
• 175 di panna fresca
• 20 g di glucosio
• 20 g di buccia di arancia grattugiata 
• 12 g di gelatina in fogli
• 425 g di copertura bianca o cioccolato bianco classico
• 500 g di mascarpone

Preparazione

Portare i primi quattro ingredienti ad ebollizione, unire la gelatinain fogli precedentemente ammollata in acqua fredda e versare sul cioccolato bianco, precedentemente spezzettato, ed emulsionare con il frullatore ad immersione. Aggiungere il mascarone leggermente scaldato al micro-onde (solo per qualche secondo), mixare ancora per un minuto. Mettere in un contenitore da frigo e lasciarlo al freddo tutta la notte. E’ ideale da usare senza montare, ma uò essere montato ed usato con la sac a poche.

Le bagne

Ingredienti per la bagna al latte e cacao

Ingredienti per la bagna al caffè e liquore al cioccolato

• 230 ml di caffè espresso
• 100 g di zucchero liquido (70 g zucchero, 30 g di acqua)
• 1 bicchierino di liquore al cioccolato 

Preparazione

Preparare lo zucchero liquido, facendo bollire insieme acqua e zucchero. Unire quindi il caffè espresso e lasciar raffreddare completamente. Appena freddo aggiungere il bicchierino di liquore al cioccolato. Conservare in frigo.

Montaggio e decorazione della torta

Ingredienti per la decorazione della torta

• 100 g di cioccolato fondente
• 250 g di lamponi freschi
• 5 gerbere rosa di piccola taglia
• 2 rami di foglie verdi (vanno benissimo anche rametti di corbezzolo)

Torta n°1

Dividere la torta paradiso ed il pan di Spagna al cacao, dopo averli pareggiati se necessario. Per farlo bene seguire questi trucchi. La parte sotto della torta paradiso deve diventare la cima della torta n°1.

Su un disco da torte diametro 32 cm posizionare uno strato di torta paradiso. Spennellare con la bagna al caffè e liquore al cioccolato. Spalmare uno strato di cremoso al mascarpone h. 2 cm. Tritare il cioccolato e distribuirlo sopra. Coprire con il Pan di Spagna al cacao, spennellarlo con la bagna e spalmare il cremoso al mascarpone sempre h. 2 cm. Spennellare nella parte tagliata la torta paradiso e posizionarla a chiusura della torta n°1

Torta n°2 

Dividere i 2 pan di spagna alle nocciole, dopo averli pareggiati sopra se necessario (seguendo i trip and tricks), ricordando che il sotto di un pan di Spagna deve essere il sopra della torta n°2.

Utilizzare un sottotorta di cartone da 15 cm di diametro per appoggiare la torta, perchè in fase di montaggio dovrà risultare invisibile. Sistemare una fetta di pan di Spagna alle nocciole sul cartone, bagnarlo con lo sciroppo di zucchero, spalmarlo con la Namelaka al fondente in uno strato h. 2 cm, coprirlo con un altro pan di Spagna alle nocciole e bagnarlo con la bagna al cacao. Farcire con uno strato di Namelaka al fondente e coprire con il pan di Spagna scelto come finitura dopo averlo bagnato con lo sciroppo di zucchero.

Torta n°3

A questo punto è rimasta una fetta di pan di Spagna al cacao ed una fetta di pan di Spagna alle nocciole. Con un coppapasta da 11 cm, ritagliare 2 fette di pan di Spagna al cacao e una di pan di Spagna alle nocciole. Su un sottotorta in cartone da 8 cm di diametro, posizionare una fetta di pan di Spagna al cacao, bagnarla con la bagna al latte e cacao e coprire il tutto con uno strato di Namelaka al cioccolato bianco h. 2 cm. Posizionare i lamponi freschi in fila, intorno al bordo e poi all’interno della circonferenza. Coprire con altra Crema Namelaka (per permettere l’adesione del pan di Spagna) e poi con il pan di Spagna alle nocciole, spennellato con la bagna al cacao, sul quale spalmare altra Namelaka al cioccolato bianco, uno strato da cm 2. Fare un altro strato di lamponi tutto intorno e poi all’interno. Spalmare altra crema Namelaka al cioccolato bianco ed in ultimo lo strato di pan di Spagna al cacao, bagnato al di sotto con la bagna al cacao.

Ogni torta, appena pronta va posizionata in frigo per 3 o 4 ore. Trascorso questo tempo la torta può essere trasportata nelle apposite scatole da pasticceria. Giunta sul luogo dell’evento, la torta può essere montata se c’è un frigo che possa contenerla intera altrimenti si monta all’ultimo minuto.

Inserire nella torta n°1 gli appositi sostegni da torta (almeno 3). Posizionare la torta n°2, munita di sostegni sulla n°1 e sopra la n°2, la n°3.

Decorare con i fiori, inserendoli con l’aiuto di piccole “U” di filo di ferro (rivestite in plastica) che trovate dai fioristi e nei negozi che vendono prodotti da cake design. Lo stesso dicasi per le foglie.
