CHILI DI FAGIOLI, CIOCCOLATO E NOCI VEGAN

400 g polpa di pomodoro

125 ml acqua

1 cucchiaio di olio d’oliva

1 spicchio di aglio

1/2 cipolla dorata

30 g cioccolato fondente all’80% di cacao

75 g gherigli di noce

Quando l’aglio sarà imbiondito, eliminarlo e unire i fagioli, i pomodori, le noci, l’acqua e il sale e portare a ebollizione. Abbassare la fiamma e cuocere per circa 20 minuti, finché non sarà addensato. Unire il cioccolato e mescolare. Servire accompagnato da triangolini di tortillas.

PANCAKES DI BANANA, COCCO E LAMPONI

INGREDIENTI per 4 persone (ricetta tratta e adattata da The Green Kitchen e letta da Daniela)

4 banane

4 uova

30 g farina di cocco

50 g lamponi

olio d’oliva (o burro)

sciroppo d’acero per servire

In una ciotola, schiacciate le banane e unite le uova leggermente sbattute e la farina di cocco. Amalgamate fino ad ottenere un impasto omogeneo. A questo punto unire i lamponi. Far scaldare un padellino con un filo di olio o una noce di burro e versare due cucchiai di composto alla volta, facendo cuocere a fiamma moderata 5-6 minuti per parte. Servire con sciroppo d’acero, qualche lampone e farina di cocco.
