<p>Una ricetta che abbina terra e mare con l&#8217;aggiunta di un ingrediente inusuale che mi è stato regalato da Valcoop: farfalle carciofi croccanti, pesce spada e cacio.</p>

<p>Ingredienti:</p>
<p>7/8 carciofi<br />
un trancio di pesce spada<br />
olio evo q.b.<br />
sale q.b.<br />
pepe q.b.<br />
cacioricotta Valcoop q.b.<br />
250 gr.di farfalle</p>
<p>Ricetta:</p>
<p>pulire bene e lavare i carciofi.</p>
<p>Tagliarli in 4 parti e rosolarli in padella con olio, sale, pepe in modo che diventino croccanti.</p>
<p>Cuocere la pasta in abbondante acqua salata.</p>
<p>Scolare la pasta e unire il pesce spada ancora crudo.</p>
<p>Unire i carciofi e mescolare bene su fuoco basso per alcuni minuti in modo che il pesce spada si cucini ma non diventi troppo duro.</p>
<p>Grattugiare il cacioricotta sulla pasta e servire.</p>

<p><strong>English version</strong></p>
<p>Ingredients:</p>
<p>7/8 artichokes<br />
a piece of swordfish<br />
oil q.b.<br />
salt and pepper q.b.<br />
250 gr. of pasta<br />
cacioricottaq.b.</p>
<p>Recipe:</p>
<p>clean and wash the artichokes.</p>
<p>Cut into 4 pieces and brown them in a pan with oil, salt, pepper so they become crispy.</p>
<p>Cook the pasta in plenty of salted water.</p>
<p>Drain the pasta and add the raw swordfish.</p>
<p>Add the artichokes and stir well over low heat for a few minutes so that the swordfish cook but does not become too hard.</p>
<p>Grate Cacioricotta over pasta and serve.</p>
