<p>Dalle mie parti si sa, <strong>le melanzane sono un &#8220;must&#8221;</strong> e anche adesso che vivo qui, al freddo e al gelo, <strong>sulla mia tavola non mancano mai</strong> (nostalgia canaglia).<br />
Sì, lo ammetto, le compro anche fuori stagione, chiedo venia.<br />
<strong>Avete mai assaggiato le &#8220;melanzane infornate&#8221;?</strong> <span></span><br />
Di solito le trovo al panificio, avete capito bene, IL PANIFICIO o forno, nella mia città le vendono proprio lì, insieme alle meravigliose cipolle di Giarratana, una qualità particolare di cipolle (di solito enormi).<br />
<strong>Ovviamente nel Gran Ducato non si sono ancora attrezzati per questa specialità e difficilmente le troverete all&#8217;interno di una boulangerie,</strong> così ho deciso di prepararle da me aggiungendo dei peperoni e creando questa sorta di insalata tiepida da gustare come contorno accompagnata da pane casereccio o da servire su dei crostini come antipasto.</p>
<p><strong>Ingredienti</strong>:<br />
• 2 Melanzane<br />
• 1 Peperone rosso<br />
• 1 cipollotto fresco<br />
• Aceto di vino o di mele<br />
• Olio evo q.b.<br />
• sale q.b.</p>
<p><strong>Preparazione</strong>:<br />
Mettete a cuocere le verdure  in forno preriscaldato a 220° su una placca ricoperta da carta forno. <strong>Tutte intere, con la buccia, i semi e il picciolo</strong>.<br />
Cuocete finchè non si saranno ammorbidite (ci vorranno circa 40/45 minuti).<br />
A fine cottura, posizionate le verdure su un tagliere e effettuate un taglio longitudinale sulle melanzane. Con l&#8217;aiuto di un cucchiaio raccogliete tutta la polpa (che si staccherà molto facilmente dalla buccia) tagliatela e mettetela in una ciotola.<br />
Tagliate il peperone, eliminate semi e picciolo e spellatelo. <strong>Questa operazione porterà via un po&#8217; più di tempo ma renderà il peperone più digeribile.</strong><br />
Tagliatelo a striscioline e aggiungetelo alle melanzane.<br />
Aggiungete adesso il cipollotto fresco e condite con olio, sale e l&#8217;aceto che più preferite.<br />
Mescolate in modo da amalgamare bene il tutto, lasciate intiepidire qualche minuto e servite.</p>

<strong>Have you ever tried “baked aubergines”?</strong><br />
Usually I find them in the bakery in Sicily…yes, I said THE BAKERY, in my town they sell them right there, along with the wonderful Giarratana’s onions, a peculiar quality of onions (usually huge).<br />
<strong>Of course, in the Grand Duchy, they are not yet equipped for this specialty and it would be hard to find this in a boulangerie</strong>, so I decided to prepare them myself by adding peppers and creating a warm salad to be enjoyed as a side dish accompanied by homemade bread or served on crostini as an appetizer.</p>
<p><strong>ingredients</strong>:<br />
• 2 aubergines<br />
• 1 red pepper<br />
• 1 fresh spring onion<br />
• Wine or apple vinegar (to taste)<br />
• Extravirgin Oil (to taste)<br />
• salt (to taste)</p>
<p><strong>Preparation</strong>:<br />
Put the vegetables into a preheated oven at 220°, <strong>whole, including skins, seeds and stalks</strong>.<br />
Cook until they are tender (it will take about 40/45 minutes).<br />
After cooking, place the vegetables on a cutting board and cut them in half lengthwise. With the help of a spoon scoop out all the pulp (which now easily detaches from the peel), cut it and put it in a bowl.<br />
Cut the peppers and remove the seeds, stem and peel. <strong>This will take a little more work but it will make the peppers more digestible</strong>.<br />
Cut into thin strips and add to the eggplants.<br />
Now add the green onion and season with oil, salt and your preferred vinegar.<br />
Stir and mix well, let cool a few minutes and serve.</p>
