50 gr segale integrale
120 acqua
150 latte senza lattosio
30 gr strutto
20 gr oli
10 gr lievito di birra
10 gr sale
qb semini di lino tritati

Procedimento:
In planetaria impastare tutti gli ingredienti tranne l’olio fino a formare un impasto legato, successivamente l’olio a filo fino a formare una maglia compatta ed elastica.
Lasciare lievitare fino al raddoppio.
Formare dei panetti da 40 gr e dargli una forma arrotondata per chi è esperto: pirlare.
Lievitare con umidità all’80 % nel lievitatore o in teglia in forno con la luce accesa coperti da pellicola, fino al raddoppio.

Cottura:
riscaldare l’apposito attrezzo per 5 minuti da entrambi i lati o padella in pietra, a fuoco medio
Sciacciare i panetti nella pressa (o prima di metterli in padella) e cuocere 3 minuti per lato.
