<p align="justify">Questo pancarrè è molto profumato e rustico, grazie alla presenza della <b>pasta madre, della farina di segale e del miele</b>.</p>

<p align="justify">Ottimo per <b>toast, sandwich, crostini o pane</b> comunemente servito a tavola.</p>

<p>INGREDIENTI (per 2 filoni di pancarrè)</p>
</p>
<ul>
<li>farina semi integrale 500 g</li>
<li>farina di segale 500 g</li>
<li>latte 500 ml</li>
<li>pasta madre rinfrescata la sera precedente 300 g</li>
<li>olio extravergine d’oliva 60 ml</li>
<li>miele 2 cucchiai colmi</li>
<li>sale fino 2 cucchiaini</li>
</ul>
<p>&nbsp;</p>
<p>PROCEDIMENTO</p>
<p align="justify">Mettere le farine setacciate in una ciotola, porvi al centro la pasta madre, il miele, l’olio e il sale sui bordi.</p>
<p align="justify">Versare il latte e impastare il tutto fino ad ottenere una palla liscia e omogenea: coprirla con una ciotola e farla lievitare tutta la notte.</p>
<p align="justify">La mattina successiva, dividere in due l’impasto e formare due filoncini lavorando la pasta velocemente, senza strapazzarla troppo: disporre i due filoncini in altrettanti stampi da plumcake da 1 kg, coprire con un canovaccio e far lievitare fino a raddoppio (4/5 ore).</p>
<p align="justify">Cuocere i due pani a cassetta in forno preriscaldato a 200°C per circa 30/40 minuti: alla fine il pane a cassetta dovrà risultare morbido all’interno e dorato all’esterno.</p>
<p align="justify">Sfornare, far raffreddare e conservare a temperatura ambiente fino a 5/6 giorni, tagliando le fette all’occorrenza e scaldandole in forno o sulla piastra.</p>
<p align="justify">Si possono anche congelare e riscaldare all’occorrenza: la cosa importante è tenere le fette divise le une dalle altre con pellicola per alimenti, per non farle attaccare.</p>

<div>Fare i <b>biscotti in casa</b> è un&#8217;attività rilassante: si impasta, la casa <b>si riempie di profumo</b>, si creano <b>piccole dolcezze sane e fragranti</b> da godersi in famiglia.</div>

<div>Per questa ricetta ho utilizzato il <b>miele biologico alla lavanda <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://www.instagram.com/miele_giacomo_acerbi/" target="_blank">Giacomo Acerbi</a></b>.</div>

<div><span>INGREDIENTI (per circa 3 teglie di biscotti)</span></div>
<ul>
<li>farina 0 500 g</li>
<li>miele alla lavanda 4 cucchiai</li>
<li>fiori di lavanda secchi sbriciolati</li>
<li>burro fuso tiepido 150 g</li>
<li>uova 3</li>
<li>lievito per dolci 1 cucchiaino</li>
<li>sale 1 pizzico</li>
</ul>
<div>PROCEDIMENTO</div>
<div>Mescolare tutti gli ingredienti in una ciotola capiente, fino ad ottenere un impasto omogeneo, senza lavorare troppo l’impasto: volendo si può mettere tutto nel mixer e procedere a scatti, per non scaldare troppo l’impasto.</div>
<div>Coprire con un piatto e riporre a raffreddare in frigorifero per circa un’ora.</div>
<div>Stendere l’impasto sul piano di lavoro (meglio di marmo o granito) con il mattarello, aiutandosi con poca farina: si deve ottenere una sfoglia alta circa 1/2 cm.</div>
<div>Ritagliare le forme desiderate con delle formine per biscotti o semplicemente con una rotella dentellata: disporre i biscotti su una teglia ricoperta con carta da forno.</div>
<div>Cuocere in forno preriscaldato a 180°C fino a doratura, poi togliere dal forno e far raffreddare su una gratella per dolci.</div>
<div>Una volta freddi si possono consumare subito o riporre in contenitori latta o vetro con coperchio.</div>
