La ricetta per questa insalata deliziosa che profuma di primavera arriva da uno dei miei blog preferiti in assoluto! Dolcetti & Scherzetti di Mimma e Marta. Nella loro versione originale ci sono anche gli asparagi che io non avevo, e al posto della loro emulsione per condire l’insalata ho preparato una salsina leggermente diversa al miele e alla senape.

Insalata primaverile di spinacini, patate novelle e piselli

dosi per 4 persone

per l’insalata
800g di patate novelle piccole
250g di piselli freschi sgusciati
100g di foglie di spinacini
8 ravanelli circa
1 cipollotto fresco
olio extra vergine d’oliva
1 spicchio d’aglio
sale e pepe

per la salsa al miele e alla senape
1 cucchiaino pieno di miele fluido
2 cucchiaini di aceto di mele
2 cucchiaini rasi di senape
1 cucchiaio di olio extra vergine d’oliva
1 limone spremuto
sale e pepe

Tagliate a metà le patate novelle ben lavate (potete pelarle come nel mio caso oppure lasciarle con la buccia) conditele con un filo di olio extra vergine d’oliva, una macinata di pepe e uno spicchio d’aglio tagliato a metà, ponetele su una teglia rivestita di carta forno e fate cuocere fino a doratura in forno pre riscaldato a 200°. Toglietele dal forno, salatele e fatele raffreddare.
Lessate i piselli in acqua leggermente salata per circa 8 minuti fino a che saranno teneri, quindi scolateli e fateli raffreddare.
Affettate finemente il cipollotto e i ravanelli lavati. Sciacquate con cura le foglie di spinacini.
Componete l’insalata in un ampia ciotola unendo tutti gli ingredienti tra loro.
Preparate una salina emulsionando il miele con l’aceto di miele, la senape, il limone spremuto e filtrato, l’olio extra vergine, una macinata di pepe ed un pizzico di sale.
Condite con questa salsina la vostra insalata primaverile.
