<p>Questo dolce della tradizione britannica è preparato con fragole, meringa sbriciolata grossolanamente e panna montata. Può anche essere prodotto con molti altri tipi di frutta estiva, ma le fragole sono considerate l&#8217;ingrediente più tipico.</p>
<p>Prende il nome dall&#8217;Eton College, luogo in cui si presume sia stato inventato. Il dolce veniva servito negli anni trenta nel negozio alimentare della scuola, e veniva servito durante l&#8217;annuale partita di cricket contro gli alunni delle altre scuole.</p>

<p>zucchero (stesso peso dell&#8217;albume +2 cucchiai)</p>
<p>Panna da montare&nbsp;</p>

<p>Preparare le meringhe: montare a neve l&#8217;albume, dopo averlo pesato) e quando risulta quasi montato iniziare ad aggiungere lo zucchero (circa 60g) fino ad ottenere una montata lucida e ben compatta.</p>
<p>Foderare la leccarda con carta forno e con l&#8217;aiuto di un sac a poche&nbsp; preparare tanti ciuffetti di meringa, cuocere in forno statico per 2 ore e 30 a 100°C.</p>

<p>Mondare e lavare le fragole, tagliare a tocchetti e condirle con due cucchiai di zucchero e 2 cucchiai di liquore. Attendere 1 oretta.</p>
<p>Montare la panna alla consistenza preferita (io la prediligo ben soda).</p>
<p>Preparare le coppette di dolce: mettere sotto le fragole cospargere le meringhe sbriciolate, poi panna montata e ancora fragole meringhe e panna, finire con un poco di sughetto.</p>
<p>Servire subito.</p>
