<strong>Assolutamente aspettiamo tutti i vostri elaborati&#8230;&#8230;.saranno sicuramente un successo!!!</strong></p>
<p><strong>(Dose per 1 panettone da 1 kg)</strong></p>
<p><strong>Primo impasto:</strong></p>
<ul>
<li>240 g Farina W380</li>
<li>75 g Burro</li>
<li>75 g Tuorli</li>
<li>75 g Lievito madre</li>
<li>85 g Zucchero</li>
<li>120 g Acqua</li>
</ul>
<p><strong>Secondo impasto: </strong></p>
<ul>
<li>Tutto il primo impasto</li>
<li>60 g Farina W380</li>
<li>90 g Burro</li>
<li>75 g Tuorli</li>
<li>56 g Zucchero</li>
<li>30 g Acqua</li>
<li>3 g Sale</li>
<li>30 g Mix Aromatico</li>
<li>75 g Arancia candita in cubetti</li>
<li>120 g Uvetta</li>
<li>30 g Cedro</li>
</ul>
<p><strong>Mix aromatico: </strong></p>
<ul>
<li>15 g Miele d’acacia (ma se avete un buon miele artigianale va bene uguale)</li>
<li>I semini di 1 bacche di vaniglia</li>
<li>30 g di pasta d’arancio (oppure una buona marmellata di arance)</li>
<li>la buccia di arance bio grattugiata</li>
</ul>
<p>Il mix aromatico è bene prepararlo il giorno prima, poiché dovrà macerare per 24 ore. Grattugiare la buccia dell’arancio, miscelarla in una ciotolina con la polpa del baccello di vaniglia, il miele e la marmellata, coprire con pellicola e porre in frigo fino al momento del suo utilizzo</p>
<p>Ovviamente, come per tutti i grandi lievitati in genere il lievito madre va preparata e rinforzata. Consiglio la settimana prima dell’impasto di rinfrescare il lievito madre tutti i giorni con un’idratazione del 40% e mantenerla cilindrata e legata a temperatura ambiente in modo di farle acquisire una bella forza. Un discorso a parte è il famoso bagnetto: leggo che molti blog consigliano di fare il bagnetto purificatore il giorno dell’impasto; io non sono proprio d’accordissimo, in quanto il lievito madre per essere al top per i grandi lievitati deve avere un’acidità con un PH intorno al 5, di conseguenza se la madre è matura al punto giusto e si fa il bagnetto il giorno dell’impasto, si può rischiare di abbassare troppo il livello di acidità e quindi di compromettere la buona riuscita del prodotto. Personalmente io faccio il bagnetto prima della preparazione del lievito, quindi una settimana prima dell’impasto.</p>
<p>Procedura per fare il bagnetto: in una ciotola mettere acqua calda a 28° per un peso che sia 3 volte quello del lievito madre (ES. se la madre pesa 50 g metterò 150 g di acqua a 26°), a questa aggiungere la punta di un cucchiaino di miele o zucchero. Tagliare il lievito madre e porlo nella ciotola con l’acqua, se il nostro lievito sta bene tornerà a galla in pochi minuti, altrimenti lasciamolo purificarsi per massimo 10 minuti. Trascorso questo tempo prendere il lievito e strizzarlo in modo da fargli perdere la maggior parte di acqua e rinfrescarlo, avendo assorbito acqua durante il bagnetto basterà aggiungerne il 30% anziché il 50% come si usa di solito.</p>
<p>La sera prima dell’operazione “Panettone” faccio un rinfresco con rapporto 1:2 (1 parte di lievito + 2 parti di farina + 40% di acqua sul tot della farina) e la lascio a 28° gradi tutta la notte. Il giorno dopo opero i 3 rinfreschi consecutivi in modo che al momento del primo impasto il lievito è veramente al top!!! Una tabella potrebbe essere:</p>
<p>&#8211; Ore 8:00</p>
<p>&#8211; Ore 12:00</p>
<p>&#8211; Ore: 16:00</p>
<p>&#8211; Ore 20:00 primo impasto</p>
<p><strong>Ed ora impastiamo </strong></p>
<p><strong>PROCEDIMENTO:</strong></p>
<p><strong>1° impasto</strong></p>
<p>Mettere nell’impastatrice il lievito madre, lo zucchero e l’acqua; far girare la macchina quel tanto che serve per sciogliere lo zucchero e ammorbidire il lievito. Aggiungere la farina e impastare per circa 15 minuti, finché non otteniamo una massa ben incordata. A questo punto inserire il burro morbido, ma non sciolto, in più fasi (non aggiungere l’altra dose se non è stata assorbita la dose precedente) e dopo il completo assorbimento del burro i tuorli anche questi in più riprese.</p>
<p>Impastare fino ad ottenere un impasto liscio ben incordato. Questa operazione non dovrebbe durare più di 25 minuti. Porre a lievitare in cella per 10/12 ore a una temperatura di 26/28°C e comunque fino a che il suo volume sia triplicato.</p>
<p>Una volta triplicato il primo impasto, trasferirlo in frigorifero per 2 ore, per abbassare la temperatura della massa e iniziare così il secondo impasto in condizioni favorevoli.</p>
<p><strong>2° Impasto</strong></p>
<p>Porre nell’impastatrice il primo impasto e la farina e far girare per circa 15 minuti.</p>
<p>Aggiungere lentamente lo zucchero e, dopo il suo assorbimento, unire la metà dei tuorli, il sale sciolto in metà acqua e gli aromi. Fare incorporare il tutto fino ad ottenere una pasta liscia ed omogenea.</p>
<p>Aggiungere la rimanenza dei tuorli e al loro completo assorbimento il burro morbido ma non sciolto in più riprese, avendo cura di mantenere sempre l’impasto incordato. Continuare a impastare bene il tutto ed accertarsi che la consistenza sia esatta, cioè tenace e liscia, fare eventualmente la cosiddetta “prova del velo”. Per ultimo aggiungere la restante acqua e subito dopo aggiungere le sospensioni: girare giusto il tempo per farli incorporare. Tutta l’operazione, se eseguita correttamente, non dovrebbe durare più 45/50 minuti.</p>
<p>Togliere dall’impastatrice, lasciare riposare per circa 30 minuti sul piano di lavoro. Passato questo tempo dividere la massa nelle pezzature necessarie; considerate che nel pirottino da 1kg vanno 1100g di impasto. Una volta effettuata la pezzatura formare i panetti con il metodo della pirlatura e lasciare puntare l’impasto altri 20 min. sul piano; fare una seconda pirlatura e mettere nello stampo. Ricoprire lo stampo con pellicola e posizionare a lievitare a una temperatura di 26/28° fino a quando l’impasto sarà arrivato a 1cm dal bordo del pirottino.</p>
<p>Facciamo sostare il panettone in frigo per circa 1 ora, dopodiché accendere il forno a 160° e infornare per circa 50/55 min. Misurare con un termometro a sonda la cottura: il nostro panettone sarà cotto quando avrà raggiunto al suo cuore i 94°. Appena cotto infilzare con gli appositi ferri e capovolgerlo subito, lasciare capovolto almeno 12 ore!!! Trascorse le 12 ore possiamo girarlo e confezionarlo.</p>
<p>Ultima raccomandazione….. gustatelo almeno dopo 5 giorni dalla sua realizzazione, in questo modo il vostro panettone avrà assorbito appieno tutti i profumi e gli aromi.</p>
<p><strong>Per conservalo più a lungo vi consiglio di vaporizzare nella busta, prima di mettere il panettone, alcool puro (quello che si usa per i liquori). Con questo accorgimento si conserverà fino a 30 giorni.</strong></p>

			<content:encoded><![CDATA[<p><em>As part of our effort to build a localized <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://en.blog.wordpress.com/2016/04/27/happiness-engineers-argentina-spain/">Spanish-speaking support team</a>, the Happiness Hiring team at Automattic recently had the opportunity to connect with WordPress communities in Argentina and Spain. From speaking engagements to networking events, our trip was a great way to meet local communities that are passionate about WordPress and exemplary customer support.</em></p>
<p>Last year at Automattic, we built a localized <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://en.blog.wordpress.com/2015/09/10/engineering-happiness-brazil/">Brazilian Portuguese-speaking support team</a> to help provide support to a subset of the WordPress.com community in their primary language. We strongly believe in the power of an excellent customer support culture &#8212; after all, that’s why we call our support team members Happiness Engineers! Customer service isn’t just about answering questions, but making an educational experience memorable and empowering.</p>
<p>Over the past few months, we’ve been working to provide the same level of localized support to Spanish-speaking customers on WordPress.com. We&#8217;ve promoted the <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://automattic.com/work-with-us/happiness-engineer-es/">Happiness Engineer (ES)</a> role through blog posts, Twitter, and Facebook, but we decided to reach out to local Argentine and Spanish WordPress communities in person as well.</p>

<h3>Connecting with the Argentine Community</h3>
<p>The WordPress community is global, spread across many cities, states, and countries. This decentralized aspect of the WordPress.org open source project plays a large part in Automattic&#8217;s philosophy of distributed work. It&#8217;s better to have the best candidate for the job, period, than the best candidate in your city.</p>

<p>Karen, along with Deborah Beckett, another member of the Happiness Hiring team, connected with the WordPress community in Argentina to set up events around customer support. From speaking engagements to networking events, our trip was a great way to meet local communities that are passionate about WordPress and exemplary customer support.</em></p>
<p>Last year at Automattic, we built a localized <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://en.blog.wordpress.com/2015/09/10/engineering-happiness-brazil/">Brazilian Portuguese-speaking support team</a> to help provide support to a subset of the WordPress.com community in their primary language. We strongly believe in the power of an excellent customer support culture &#8212; after all, that’s why we call our support team members Happiness Engineers! Customer service isn’t just about answering questions, but making an educational experience memorable and empowering.</p>
<p>Over the past few months, we’ve been working to provide the same level of localized support to Spanish-speaking customers on WordPress.com. We&#8217;ve promoted the <a target="_blank" rel="nofollow" href="/redirect.php?URL=https://automattic.com/work-with-us/happiness-engineer-es/">Happiness Engineer (ES)</a> role through blog posts, Twitter, and Facebook, but we decided to reach out to local Argentine and Spanish WordPress communities in person as well.</p>

<p>The WordPress community is global, spread across many cities, states, and countries. This decentralized aspect of the WordPress.org open source project plays a large part in Automattic&#8217;s philosophy of distributed work.
