<p>Preparazione</p>
<p>Pulire il pesce eliminando lische e pelle. Tagliarlo a dadini e tenerlo in frigo. Lavorare con la frusta il tuorlo assieme alla senape, il succo di limone filtrato, sale, pepe, l&#8217;erba cipollina tritata finemente e poco olio. Pelare al vivo i pompelmi e tagliarli a cubetti. Unirli al pesce e condire con la salsa preparata. Servire la tartara fresca ma non fredda di frigo.</p>
