Per iniziare, taglia il cioccolato avanzato grossolanamente con un coltello su di un tagliere, non importa che i pezzi siano regolari, l’importante è che non siano troppo grandi, per facilitare la chiusura della sfoglia.

Apri delicatamente la sfoglia, lasciandola sulla carta forno in dotazione, pennella la sfoglia con del latte e distribuisci in modo uniforme il cioccolato tagliato.

Avvolgi la sfoglia dal lato più corto formando un rotolo abbastanza stretto, compatta delicatamente con le mani, pareggia i lati con il coltello e metti in freezer per circa 10 minuti.

Nel frattempo accendi il forno ed imposta a 180° ventilato

Trascorso questo tempo riprendi il rotolo di sfoglia ripieno dal frigorifero e con il coltello a lama liscia taglia in pezzi regolari. (più o meno circa 14)

Sistema i pezzi di sfoglia su di una teglia rivestita di carta forno, formando una corona, pennella con latte.

Inforna per circa 30 minuti fino a doratura.

Adesso che vivo lontano a volte preparo quei piatti e condividiamo le foto dei preparativi con familiari ed amici ed e’ un po’ come stare a casa. Adesso che vivo dall’altre parte del mondo valoro ancora di piú quelle tradizioni e quei piatti e cosí anche quest’anno la cuddura non ce la siamo fatta mancare!

Ingredienti:

1 kg farina
1 cubetto di lievito
250 ml di acqua tiepida (se l’impasto vi sembra duro ne aggiungete un altro po’)
3 uova per l’impasto più’ 2 da inserire sopra la corona (meglio se sode)
130/150 g di zucchero
100 ml di olio evo
cannella a gusto
1 uovo per spennellare la superficie

Sciogliete il lievito nell’acqua tiepida. Sbattete le uova con l’olio, la cannella e lo zucchero, disponete a fontana la farina e aggiungete questi ingredienti. Impastate bene fino ad ottenere un impasto liscio ed omogeneo.
Per ottenere la corona: fate due bastoncini di pasta della stessa lunghezza e intrecciateli tra loro, formate un cerchio e chiudetelo alle estremità’. Inserite le 2 uova. Stendete altri due bastoncini, uno lo arrotolate attorno alla corona e l’altro lo intrecciate tra un uovo e l’altro. Infarinate due stampi da forno e mettete le cuddure a lievitare. Quando saranno pronte spennellate la superficie con l’uovo sbattuto e infornatele in forno preriscaldato a 180 C per una mezz’ora circa.

Una delizia della tradizione pasquale, bella da vedere e buonissima da gustare ottima come accompagnamento sia per cose dolci que salate!

Per iniziare prepara tutti gli ingredienti a portata di mano, lava e taglia i pomodorini a fette oppure a metà come preferisci, priva il pesto di tutto l’olio in eccesso.

Prendi una confezione di pasta sfoglia rettangolare dal frigorifero, deve essere ben fredda, aprila e con una spatola distribuisci un velo di pesto.

Aggiungi poi sul pesto la feta greca sgretolata e ridotta in briciole, per finire aggiungi anche i pomodorini

Arrotola la sfoglia dal lato più lungo formando un cilindro ben stretto.

Adesso pratica dei tagli in diagonale sulla sfoglia con un coltello a lama liscia e chiudi la sfoglia formando una corona.

Sistema la corona in una stampo, spennella con un goccio di olio e cospargi con granella di pistacchi.

Inforna la corona di sfoglia natalizia a 190° ventilato per circa 30/35 minuti fino a doratura.

Per il ripieno, ho optato per una base di mozzarella per pizza, prosciutto cotto tritato, speck tritato e olive taggiasche sott’olio, il risultato è stato sorprendente, un impasto super soffice con ripieno ricco e goloso. Per la preparazione di questo lievitato si può eseguire l’impasto a mano, oppure con la planetaria o un robot da cucina. Il risultato finale deve essere un impasto morbido e liscio che non si attacca alle mani. La corona di pane farcito è ottima da gustare sia appena sfornata dal ripieno di mozzarella ancora filante, oppure riposata, sarà comunque molto soffice. Per iniziare taglia il prosciutto cotto in pezzi piccoli e lo speck oppure passali al mixer per aver un composto sbriciolato, metti da parte, prepara anche le olive sgocciolate e la mozzarella.

Sciogli il lievito di birra nell’acqua tiepida.

In una ciotola versa la farina, metti al centro l’acqua con il lievito sciolto eia cucchiaino di miele ed il latte inizia ad impastare in modo energico, quando tutti gli ingredienti sono amalgamati aggiungere il sale, fai incorporare bene quest’ultimo all’impasto fino ad ottenere un panetto liscio e compatto.

Puoi eseguire questo impasto sia a mano oppure con un impastatrice dotata di gancio, oppure con il bimby.

Fai lievitare l’impasto coperto fino al raddoppio (circa 2 ore e mezza)

Trascorso il tempo di lievitazione stendi l’impasto in un rettangolo abbastanza grande, pennella con l’uovo sbattuto e farcisci con il ripieno.

Avvolgi l’impasto partendo dal lato più largo, formare un cilindro, stringi bene con le mani.

Con un coltello affilato tagliare in pezzi di circa 3 cm.

Fodera lo stampo a ciambella da 24 cm  con carta da forno bagnata e strizzata, sistema i pezzi di pane e disponili a corona nello stampo.

Spennella la corona di pane con il rimanente uovo sbattuto.

Far lievitare nuovamente l’impasto in forno con luce accesa per circa un’ora e mezza

Adesso inforna a 180° statico per circa 40 minuti, fino a doratura.

Impasto arrotolato e tagliato a fette spesse 3 cm

Fette disposte a corona nello stampo

Corona di pane dopo la seconda lievitazione

Corona di pane farcita dopo la cottura.

Il pan brioche si conserva freddo e ben sigillato in un sacchetto per alimenti per circa tre giorni.

Puoi variare il ripieno optando per le verdure saltate in padella anziché i salumi.

Io ho scelto la classica con salumi e formaggi ma c'è anche la variante con olive nere e pomodori secchi. Ma sicuramente sarete bravissimi a trovare l'abbinamento perfetto che più vi piace.
