<p>A panna cotta a little bit special, spiced with cinnamon and cardamom, and with a delicious filling of strawberries from my garden of course. Perceptions: creaminess (panna cotta), crispness and flavor (strawberry), aromatic and spicy (cardamom and cinnamon).</p>
<p>What we need: cake pan, pan, knife Chef, washing vegetables, wooden spoon, spatula pastry.</p>
<p><b>ingredients</b><br />250 grams of whole milk<br />200 ml whipping cream liquid<br />50 grams of sugar<br />the 2 cardamom pods seeds<br />1 teaspoon cinnamon<br />3 sheets of gelatin<br />16 feschissime strawberries</p>
<p><b>Method</b><br />Soften the gelatin sheets in a bowl of water (remember that the optimal fish water / glue ratio is 1 to 5 so if my sheet of gelatin weighs 5 I have to use 25 grams of water)<br />Boil the milk with the sugar then add the seeds of cardamom pods, cinnamon, squeezed gelatine and cream. With a wooden spoon until turn it will begin to thicken slightly. Put the strawberries cut into slices in each mold, then pour in the cream and let cool in the refrigerator for at least 6 hours.</p>
<p><span>A panna cotta un peu spécial, épicé à la cannelle et la cardamome, et avec un remplissage délicieux de fraises de mon jardin bien sûr. Perceptions: onctuosité (panna cotta), la précision et la saveur (fraise), aromatique et épicée (cardamome et cannelle).</span><br /><span><br /></span><span>Ce qu&#8217;il nous faut: un moule à gâteau, moule, couteau de cuisine, le lavage des légumes, une cuillère en bois, spatule pâtisserie.</span><br /><span><br /></span><span><b>ingrédients</b></span><br /><span>250 grammes de lait entier</span><br /><span>200 ml de liquide de crème à fouetter</span><br /><span>50 grammes de sucre</span><br /><span>les gousses de cardamome 2 graines</span><br /><span>1 cuillère à café de cannelle</span><br /><span>3 feuilles de gélatine</span><br /><span>16 fraises feschissime</span><br /><span><br /></span><span><b>processus</b></span><br /><span>Ramollir les feuilles de gélatine dans un bol d&#8217;eau (rappelez-vous que le rapport eau / colle de poisson optimale est de 1 à 5, donc si ma feuille de gélatine pèse 5 je dois utiliser 25 grammes d&#8217;eau)</span><br /><span>Faire bouillir le lait avec le sucre puis ajouter les graines de gousses de cardamome, de la cannelle, de la gélatine pressée et la crème. Avec une cuillère en bois jusqu&#8217;à ce que son tour il va commencer à épaissir légèrement. Mettez les fraises coupées en tranches dans chaque moule, puis versez la crème et laisser refroidir au réfrigérateur pendant au moins 6 heures.</span><br /><span><br /></span><span><br /></span>Una panna cotta un pò speciale, speziata con cannella e cardamomo e con uno squisito ripieno di fragole del mio orto ovviamente. Percezioni: cremosità (panna cotta), croccantezza e profumo (fragole), aromaticità e speziato (cardamomo e cannella).</p>
<p>Cosa ci occorre: stampo per dolci, pentolino, coltello dello Chef, lava verdure, cucchiaio di legno, spatola da pasticciere.</p>
<p>Ingredienti<br />250 grammi di latte intero<br />200 ml di panna da montare liquida<br />50 grammi di zucchero<br />i semi di 2 bacche di cardamomo<br />1 cucchiaino di cannella<br />3 fogli di colla di pesce<br />16 fragole feschissime</p>
<p>Procedimento<br />Ammorbidite i fogli di colla di pesce in una ciotola di acqua (ricordate che il rapporto ottimale acqua / colla di pesce è 1 a 5 per cui se il mio foglio di colla di pesce pesa 5 dovrò usare 25 grammi di acqua)</p>
<p>Portate ad ebollizione il latte con lo zucchero poi aggiungete i semi delle bacche di cardamomo, la cannella, la colla di pesce strizzata e la panna. Con un cucchiaio di legno girate fino a quando comincerà ad addensarsi leggermente. Mettete delle fragole tagliate a fettine in ogni stampo, quindi versate dentro la panna e fate rassodare in frigo per almeno 6 ore.
