Intanto mettere sul fuoco l&#8217;acqua per gli gnocchi.&nbsp;</i></span><i>Trascorso il tempo, i funghi si saranno asciugati aggiungere i pomodorini tagliati in quattro parti, lasciare che si insaporiscano con i funghi per cinque minuti, poi spegnere. Calare gli gnocchi e scolarli appena vengono a galla, ci vorrano 1-2 minuti non di più.&nbsp;</i></div>

Mettere l&#8217;impasto ottenuto in un&#8217;ampia ciotola coprire con la pellicola e lasciarlo lievitare per almeno due ore, ora che siamo nella stagione fredda,&nbsp; ma basta anche solo un&#8217;ora nella stagione calda. <p><span><b><i>Ingredienti</i></b></span><br /><span><i>250 g di ricotta da banco</i></span><br /><span><i>50/60 g di pane raffermo</i></span><br /><span><i>1 uovo</i></span><br /><span><i>2 cucchiai di pecorino grattugiato</i></span><br /><span><i>500 g di pomodorini</i></span><br /><span><i>1 spicchio d&#8217;aglio</i></span><br /><span><i>prezzemolo</i></span><br /><span><i>sale e pepe q.b.</i></span><br /><span><i><br /></i></span><span><i><b>Procedimento</b></i></span><br /><span><i>Consiglio la ricotta da banco perché generalmente è più asciutta, ma se avete della ricotta più succosa basta lasciarla scolare in frigo per almeno un&#8217;ora. Mettere in ammollo il pane raffermo. Spezzettare i pomodorini.</i></span><br /><span><i><br /></i></span>

Per farcire la Parmigiana di Peperoni ho usato degli avanzi di pancetta e formaggio che avevo in frigo, ma naturalmente possiamo farcire con </i></b></span><br /><a target="_blank" rel="nofollow" name='more'></a><span><b><i>prosciutto cotto o crudo, salame, formaggio dolce o piccante, insomma quello che preferite o che secondo voi sta bene con i peperoni. <h2><b><i><span>Ricetta&nbsp;PARMIGIANA DI PEPERONI</span></i></b></h2>
<p><span><b><i>Ingredienti&nbsp;</i></b></span><br /><span><i>4 peperoni carnosi</i></span><br /><span><i>100 g di pancetta affumicata</i></span><br /><span><i>4 sottilette</i></span><br /><span><i>50 g di provola affumicata</i></span><br /><span><i>1 cucchiaio di pangrattato</i></span><br /><span><i>2 cucchiai di pecorino</i></span><br /><span><i>prezzemolo</i></span><br /><span><i>sale e pepe q.b.</i></span><br /><span><i><br /></i></span><span><i><b>Procedimento</b></i></span><br /><span><i>Prendere 4 peperoni grandi e carnosi, lavarli e metterli nella teglia da forno che avremo ricoperto di carta. Infornare nella parte alta e accendere il grill, lasciarli 10 minuti per lato, così che la pelle esterna dei peperoni si abbrustolisca. Togliere da forno e far raffreddare i peperoni nella carta del pane o in una busta, così facendo la pelle verrà via in un attimo. Passati 15/20 minuti pulire i peperoni privandoli della pelle, del torsolo e dei semi interni senza passarli sotto l&#8217;acqua.</i></span><br /><span><i><br /></i></span>

<p><span><span>Dopo avere preparato e assaporato tante </span><span>pietanze, avere cercato di realizzare i migliori abbinamenti di materie prime e di aromi per assicurare ai piatti un risultato armonioso, #casacostantino si cimenta anche nei consigli dei vini da abbinare ai piatti e, partendo dagli involtini di verza che vi ho presentato, vorrei presentarvi il pregiato</span>&nbsp;Mandrarossa Perricone Rosè della pregiata cantina <a target="_blank" rel="nofollow" href="/redirect.php?URL=http://www.cantinesettesoli.it/" target="_blank">Settesoli</a>,&nbsp;</span><span>un abbinamento che a colpo d’occhio può lasciare perplessi, ossia un </span><i>vino Rosato,</i><span>&nbsp;un tipo di vino non molto conosciuto, ma che sta conquistando una sua fetta di estimatori e consumatori che pian piano stanno scoprendo le caratteristiche e i profumi suoi propri, sebbene è d’obbligo precisare che il </span><span>rosé è un metodo di produzione, non un vino.</span></div>

<p><a target="_blank" rel="nofollow" name='more'></a><span>Tendenzialmente il rosato</span><span>&nbsp;</span><strong>ha caratteristiche più simili ad un bianco</strong><span>: va servito fresco (ad una temperatura di 10-12°), ha una spiccata acidità, va bevuto giovane, ha un grado alcolico compreso tra i 12,5% e i 13,5%</span><span>&nbsp;ed essendo i </span><span>vini rosati ottenuti &nbsp;da macerazione breve sono più strutturati e con profumi più complessi.</span>
