<p><span>Il termine “canazzo” in dialetto siciliano significa “fatto velocemente, in modo poco accurato” e indica la semplicità di esecuzione di questa pietanza.</span></p>
<p><span><span>E&#8217; un&nbsp; ​modo facile e veloce per consumare le&nbsp;</span><span>verdure di stagione</span><span>&nbsp;in modo più leggero, senza frittura ,come nella più nota <b>caponata</b>.</span></span></p>
<p><span><span>Vi consiglio di prepararne in abbondanza perchè è una pietanza che va&nbsp; consumata fredda ed è piu&#8217; gustosa il giorno dopo.</span></span></p>
<p><span><span>Ovviamente, trattandosi di una ricetta della nostra tradizione gastronomica, ogni famiglia ha la propria versione, soprattutto per quanto riguarda i profumi di erbe aromatiche da aggiungere.</span></span></p>
<p><span><span>&nbsp;Io vi propongo la mia versione ,&nbsp;</span><span>&nbsp;palermitana</span><span>&nbsp;, più vicina possibile alla tradizione che suggerisce di aggiungere le verdure , quantità &#8220;/redirect.php?URL=a sentimento&#8221;, in funzione del tempo di cottura che richiedono:</span></span></p>
<p><span><span>quindi, dopo aver soffritto brevemente le cipolle con olio extravergine d&#8217;oliva, aggiungere&nbsp; per prime le patate e, a seguire melanzane, peperoni, zucchine e pomodorini .&nbsp;</span><br /></span></p>
<p><span><span>A fine cottura aggiungere abbondante basilico fresco e origano oppure, se amate l&#8217;agrodolce, aggiungere, un paio di minuti prime del termine della cottura,&nbsp;</span><span>&nbsp;4 cucchiai di aceto di vino bianco, miscelati con 2 cucchiai di zucchero, e far sfumare poi tutto su fiamma bassa.</span></span></p>
<p><span><span>Tradizionalmente il CANAZZO si gusta con il pane . Io vi suggerisco, alla luce delle salutistiche tendenze alimentari, di abbinarlo a del riso a vapore oppure farro lessato .</span></span></p>
<p><span><span><b>Ingredienti per 4 persone:</b></span></span></p>
<p><span><span>- 2 cipolle</span></span></p>
<p><span><span>- 4 patate medie</span></span></p>
<p><span><span>- 1 melanzana grossa</span></span></p>
<p><span><span>- 2 peperoni</span></span></p>
<p><span><span>- 2 zucchine genovesi</span></span></p>
<p><span><span>- 1\2 kg pomodorini</span></span></p>
<p><span><span>- 6 cucchiai di&nbsp; olio extravergine d&#8217;oliva</span></span></p>
<p><span><span>- abbondante basilico fresco</span></span></p>
<p><span><span>- 1 cucchiaino di origano</span></span></p>
<p><span><span><br /></span></span></p>
<p><span><span><b>Procedimento:</b></span></span></p>
<p><span><span>- affettare le cipolle</span></span></p>
<p><span><span>- lavare, mondare e tagliare a pezzi gli ortaggi</span></span></p>
<p><span><span>- in una larga casseruola mettere l&#8217;olio e le cipolle affettate. Soffriggere a fuoco basso per&nbsp;</span></span></p>
<p><span><span>5 minuti</span></span></p>
<p><span><span>- aggiungere le patate a pezzi, mescolare bene a cuocere, con coperchio, per 10 minuti</span></span></p>
<p><span><span>- aggiungere la melanzana e i peperoni e mescolare bene. Cuocere a fuoco bassissimo, con coperchio per 15 minuti. Se necessario aggiungere qualche cucchiaio di acqua</span></span></p>
<p><span><span>- aggiungere le zucchine e i pomodorini a pezzetti. Aggiustare di sale e cuocere , con coperchio per 5 minuti</span></span></p>
<p><span><span>- a fine cottura aggiungere abbondante basilico tritato , origano e un giro d&#8217;olio</span></span></p>
