Il tronchetto di Natale al cioccolato è il classico dolce che tutti solitamente preparano per il periodo festivo natalizio. Un dolce tutto cioccolatoso quello in questione, ma che si presta ad innumerevoli varianti.

Per esempio se non vi piace il cioccolato, potreste optare per la preparazione di un tronchetto di Natale con crema pasticcera. Il tronchetto al cioccolato è sempre il pezzo forte di tutte le feste e ho avuto i complimenti di tutti quando l’ho portato in tavola.

Preparo ogni anno il tronchetto di cioccolato, ed ogni volta è sempre un successo. Per prepararlo ho seguito la ricetta della pasta biscotto e, successivamente, l’ho farcito con una golosissima crema gianduia fatta in casa.

Ingredienti

Per la base

4 uova

75 g farina 00

75 g zucchero

1 bacca vaniglia

1 pizzico sale

Per la crema gianduia

130 g nocciole (tritate)

130 g zucchero

150 ml panna fresca da montare

300 g cioccolato fondente al 70%

50 g burro

Per la copertura

250 g cioccolato fondente al 70%

85 g burro

Strumenti

1 Robot da cucina

3 Ciotole

1 Casseruola

1 Spatola

1 Leccarda

Preparazione

Iniziamo col preparare la crema gianduia. Tritate nel mixer lo zucchero e le nocciole fino ad ottenere una pasta morbida. Unite il cioccolato spezzettato e continuate a tritare, quindi versate il composto in una pentola e aggiungete la panna e il burro.

Cuocete a fuoco lento, a bagnomaria mescolando fino a che il cioccolato e il burro si saranno sciolti e si sarà ottenuta una crema morbida e omogenea, che si solidificherà una volta fredda. Lasciate raffreddare la crema coperta con un foglio di pellicola per alimenti a contatto, in modo da non far formare il velo sopra.

Preparate la base. Separate i tuorli dagli albumi e montate i primi con lo zucchero e la vaniglia. A parte montate gli albumi a neve ben ferma. Ai tuorli aggiungete la farina setacciata e unite gli albumi mescolando delicatamente dal basso verso l’alto per non smontare il composto.

Stendete il composto su una placca ricoperta di carta forno e cuocete a 180° per 12-15 minuti. Sfornate e capovolgete la base su un panno pulito o su carta forno. Arrotolate delicatamente a mo di caramella e far riposare in frigo per circa 1 ora.

Trascorso questo tempo, prendete la base dal frigo, srotolatela e con una spatola spalmate la crema lasciando un cm di spazio dai bordi. Arrotolate di nuovo con carta forno e rimettere in frigo per circa 3 ore o in freezer per 30 minuti. Ora preparate la copertura facendo sciogliere in un pentolino il cioccolato e il burro.

A questo punto riprendete il tronchetto e tagliate in obliquo le due estremità, incollatele con un po’ di cioccolato fuso preparato per la copertura. Con una spatola passate la cioccolata su tutto il tronchetto, lasciando le estremità oblique aperte come vedete in foto.

Se preferite, rigate la superficie con una forchetta o passate con una spatola in modo da creare delle piccole creste. Lasciate asciugare la copertura, quindi servire il tronchetto di Natale al cioccolato in tavola!

Il tronchetto di Natale al cioccolato si serve in tavola solo dopo aver fatto asciugare bene la copertura.

Il tronchetto di Natale al cioccolato si conserva in frigorifero per al massimo 3-4 giorni.

Può essere congelato in porzioni e scongelato lentamente in frigorifero al momento di consumarlo.
